กุนเชียงของร้านที่ตกทอดจากมณฑลกว่างโจวเป็น<br />

หม้อดิน แต่ไม่เหมาะกับวิธีการทอดซึ่งจะให้รสชาติมันเลี่ยน<br />
ส่วนกุนเชียงตับซึ่งยัดไส้มันหมูนั้น เรียกว่า “ตับแก้ว”<br />
ถือได้ว่าเป็นราชาแห่งกุนเชียง ยังมีกุนเชียงตับเป็ด หมูสาม<br />
ชั้นแห้ง เป็ดแผ่น และเป็ดทั้งตัวตากแห้งซึ่งให้รสชาติเค็ม<br />
มาก เหมาะสำหรับใช้ทำโจ๊ก<br />
กุนเชียงสไตล์กวางตุ้งที่แพร่หลายในฮ่องกงและทาง<br />
ตอนใต้ของประเทศจีน จะมีลักษณะแข็งและเค็ม เกิดจาก<br />
การตากแห้งและเก็บไว้นานหลายสัปดาห์ส่วนกุนเชียงสูตร<br />
โพ้นทะเลของเยาวราชจะตากแล้วทิ้งไว้เพียง 4-5 วัน ก่อน<br />

The sausages of this store are inherited from<br />
Guangzhou and is made in Cantonese style. There are<br />
many kinds of these sausages for clients to choose<br />
such as pork sausage, which has less fat and is hung<br />
with red string, or the kind with more fat which is hung<br />
with green string. They can be cooked by steaming and<br />
baking in a clay pot but not good to fry as it might be<br />
too greasy.<br />
The liver sausage with pork fat is called “Crystal<br />
liver”, and is called the king of Chinese sausages. There<br />
are also duck liver sausages, dried pork belly, and dried<br />
duck which is very salty and suitable for porridge.<br />
Cantonese Chinese sausage that is well known in<br />
Hong Kong and in southern of China is salty and hard<br />
because of many weeks of the drying process and<br />
preservation. However, the sausages made in Yaowarat<br />
style are only processed for a few days, which make<br />
them a bit sweeter, less salty, and softer. The sausages<br />
here are well preserved, with each ingredient carefully<br />
weighed in order to maintain the original taste that<br />
satisfies regular clients. Even foreigners or cooks from<br />
Hong Kong fly overseas to buy these sausages.<br />
The name “Tung Kuoung Kee Hiang” comes from a<br />
Teochew accent. It would be pronounced “ Chan Kuang<br />
Keng Hing” in Cantonese accent. The word “Chan” is<br />
the name of the clan, while “Kuang Keng Hing” means<br />
amazing smell in Cantonese. On the name board there<br />
are the words “Jun Ga Lum Mai” (the November meat<br />
expert ). “Lum Mai” is the method of meat preservation<br />
of drying the meat beneath wind and under the sun in<br />
November. After that procedure, the meat is dry outside<br />
but still juicy inside and does not go off. The meat will<br />
have a darker color and is harder than if it had been<br />
baked or smoked. The word “Jun Ga” means the expert,<br />
indicating the quality of this careful process of their<br />
sausage making.<br />
