Die Gewässer und seine Bewohner haben Michael Salamon
schon von früher Kindheit an fasziniert. Der Jagd- und Sammlerinstinkt
führte über die ersten Stichlinge und Bachforellen zu
intensiven Erfahrungen in der Aquaristik, aber auch in der kulinarischen
Verwertung. Brav goutierte der Vater voller Lob selbst
die Rotfedern, die sein Sohn schwarzfischend (damals noch als
Bildung toleriert) in die Küche brachte.
In Studienzeiten kehrte er mit Freunden immer wieder zu den
klaren Bächen zurück, um deren Schätze (Salmo trutta fario) zu
heben und zur Freude der Wohngemeinschaft den Reisalltag
durch duftende Fischfinesse zu verfeinern.
Zur Finanzierung des Design-Studiums lieferte er alsbald Fisch
an Restaurants mit Qualitätsanspruch. Bald kaufte man der Auswahl
und Qualität wegen in Paris-Rungis wöchentlich ein und
ließ sich kein X für ein U vormachen.
Mallorca wiederum bietet ebenso optimalen Einkauf für Fisch,
Krustentiere und Gemüse. Und wer könnte dazu Gemüse und
Kräuter besser inszenieren als eine Venezianerin?
Wenn Michael Salamon und Marilu Martinello heute ihre internationalen
Gäste in Puerto de Andratx begrüßen, darf sich der

Ever since he was a young boy, Michael Salamon has been fascinated
by water and all creatures that live in it. The instinct for
fishing and collecting began with his first sticklebacks and brown
trout and has led to a wealth of experience in the aquatic field, as
well as in the culinary domain. His proud father was full of praise
when his son entered the kitchen with a rudd from his fishing trip
(admittedly without a fishing permit, which was tolerated when
he was an apprentice in the past).
As a student, he was always down at the clear water stream with
friends, to see what treasures they could fish out (Salmo trutta
fario). The lovely smell of fish was always a great joy in the student
residence as it announced a break from monotonous rice.
He was quick to begin financing his design degree by setting up
as a supplier of fish for prestigious restaurants.
To increase variety and improve quality, he soon began to source
from Paris Rungis once a week, confident that no one could pull
the wool over his eyes.
Majorca was just as good a place for purchasing fish, shellfish and
vegetables. And who better than a Venetian to do justice to the
vegetables and herbs?
In Puerto-Andratx, Michael Salamon and Marilu Martinello serve
up simple yet exceptional cuisine for guests from around the
world, bringing them outstanding quality food in a relaxed atmosphere.
