es riecht würzig, als würde nebenan gerade Bier gebraut.<br />
Täglich muss <strong>der</strong> Hopfen umgeschaufelt werden, damit<br />
er völlig trocknet. Da Hopfen nicht reif, son<strong>der</strong>n grün geerntet<br />
wird, muss er zwar schnell, aber dennoch schonend<br />
getrocknet werden. Die Familie Bentele ist die einzige,<br />
die im Hopfendorf Tettnang biologisch anbaut, also nur<br />
natürlich düngt. „Wenn man in einer Gegend mit Hopfengärten<br />
aufwächst, lässt einen diese Pflanze ein Leben lang<br />
nicht mehr los“, erzählt Johannes Bentele, <strong>der</strong> den Betrieb<br />
vor vier Jahren von seinem Vater Peter übernommen hat.<br />
„Hopfen ist sehr spannend, und er wird in wenigen Gegenden<br />
angebaut.“ Nach dem Bambus ist Hopfen die schnellst<br />
wachsende Pflanze weltweit: 30 Zentimeter kann er in nur<br />
24 Stunden zulegen. „Vom Keimen bis zu acht Metern Höhe<br />
dauert es gerade<br />
mal zwei Monate“,<br />
so Bentele. Hopfen<br />

Bierproduktion,<br />
denn er ermöglichte<br />
langfristige<br />
Konservierung.<br />
„Für das Bier ist <strong>der</strong><br />
Hopfen jedoch auch<br />
geschmacklich die<br />
wichtigste Komponente,<br />
denn vom<br />
Getreide schmeckt<br />
man allenfalls noch<br />
eine Restsüße“,<br />

the picturesque<br />
village of Tettnang.<br />
“When you grow<br />
up in an area with<br />
hop gardens, you<br />
develop a strong connection to the plant,” explains Johannes,<br />
who took over the business from his father, Peter, four<br />
years ago. “The hop plant is really fascinating and it’s<br />
only cultivated in a few areas.” Hop is the world’s second<br />
fastest-growing plant after bamboo; it can sprout up to<br />
30cm in just 24 hours. “It takes just two months from the<br />
moment the hop plant germinates in the ground until it<br />
has grown up an eight metre-tall hop pole,” says Johannes.<br />
Hops were a key element in global beer production’s<br />
development because they allowed the beverage to be<br />
preserved long-term. “Hops are also the most important<br />
component when it comes to beer flavour because grain<br />
gives it a residual sweet taste at best,” he says; hops alone<br />
are responsible for beer’s bitter flavour and aromas. >
