63BKitchari may be keep over if it is covered in liquid, this prevents the starch particles<br />

from drying out. This change in pre-cooked starches is the main reason the ancients<br />

avoided re-heating starches as they are un-digestible. However if you do not have a<br />

wet kitchari to heat up for lunch it only takes a few minutes to get mobile and enjoy a<br />

great nutritious fresh lunch at work.<br />

To be successful with your <strong>The</strong>rmo Kitchari you need a wide neck thermos so it can<br />

be properly cleaned.<br />

64BIngredients:<br />

1/5 cup organic basmati rice<br />

1/5 cup yellow split mung dahl, best dahl for this<br />

You may need to adjust quantities according to the size of your thermos.<br />

Place the rice and dahl in a sieve and wash. Place a dash of ghee in a pot, add cumin<br />

seed and grated ginger, fry for 30 seconds, add a pinch of asafoetida, add a little<br />

cauliflower or vegie, fry for a moment, add the washed rice and dahl, stir. Add 3 cups<br />

of water, a good pinch of turmeric and a few pinches of Saindhava <strong>Ayurvedic</strong> rock<br />

salt to taste, boil for 10 minutes or so.<br />

Occasionally you can add a touch of tomato paste and a pinch of rapadura. Add your<br />

own twist by powdering up a little cinnamon, nutmeg, cloves, ginger and pepper or<br />

add Garam Masala or paprika. Occasionally you could add a few chunks of paneer<br />

from the fridge. Preheat your thermos for a few minutes by filling it with boiling<br />

water, remove the water, Pour your kitchari into the flask and quickly seal. <strong>The</strong><br />

kitchari will continue cooking and by lunchtime it will be ready to go<br />

Take a lime or a lemon, or a date sauce to have with your kitchari.<br />

Finish off with some 'legal sugar' - Organic Fresh Californian Dates. Do not have<br />

cold drinks with meals, or over fill the stomach with liquid.<br />
