Ingredients:<br />

1 cup Basmati rice<br />

1/4 cup Urad dal<br />

2 tbsp Ghee<br />

¼ teas Pepper<br />

Saindaiva salt to taste<br />

DOSA CRISP PANCAKE<br />

Light crispy protein pancakes<br />

Wash the rice and dahl separately, cover with water and soak overnight.<br />

Drain, add enough water to blend to a thick but fine paste.<br />

Add the salt and pepper, let sit until the volume doubles by fermentation<br />

(up to 8hrs in summer and longer in the winter).<br />

Pour the batter into a hot greased frypan<br />

Main Meals<br />

Create a thin crisp pancake by thinning either tilt the pan or thin with a flat spoon<br />

Drip a little ghee around the edges to help the dosa crisp up. Serve with chutney,<br />

spicy vegies, yoghurt and dahl.<br />
