MINESTRONE MEAL<br />

Brown rice, beans and vegies<br />

make a complete complex meal<br />

Main Meals<br />

Ingredients: ½ cup Kidney or Bolotti Beans, ¼ cup Brown Rice, a sprinkle of Barley,<br />

2 tbsp Ghee, pinch of Asafoetida, 2 tomatoes, 3 litres of water, 2 tsp Saindhava<br />

<strong>Ayurvedic</strong> Rock Salt, Carrot, celery, zucchinis, shredded cabbage, spaghetti<br />

(optional), Whey, Parsley and basil, add Parmesan<br />

Soak the Kidney or Borlotti beans overnight and drain. Wash the brown rice and<br />

barley. Slightly heat the ghee, add a large pinch of asafoetida and saute the tomatoes<br />

for a minute. Add the drained beans and brown rice, sauté for a few minutes. Add 3<br />

liters of water and 2 teaspoon of <strong>Ayurvedic</strong> salt. Boil for 1½ hours –2 hours (less with<br />

a pressure cooker) making sure the beans are soft. Remember it is best for digestion<br />

to overcook your beans.<br />

Add carrot, celery, zucchinis, shredded cabbage and some broken spaghetti if you<br />

like.<br />

Add whey from your paneer for extra flavour. Cook for 20 minutes.<br />

Add finely chopped parsley and basil, have a little taste and add extra salt if required.<br />

Serve with a sprinkle of parmesan cheese. Delicious with a toasted pappadam and a<br />

spoon of yoghurt sprinkled with gram masala, or if your feasting, have puris.<br />
