METOS DISH RETURNING AND SORTING UNITS<br />
Dish returning and sorting units are designed to reduce<br />
and facilitate the sorting work of dishes to<br />
be washed. Depending on the kitchen type the<br />
customer or the waiter/kitchen personnel put the dishes<br />
coming from the dining room into racks. The filled rack is<br />
put on a conveyor or roller track, from which it is transported<br />
to the dishwasher. A new rack is taken from the<br />
rack shelf above to rep<strong>la</strong>ce the filled rack and p<strong>la</strong>ced on a<br />
grid for racks. The grids are detachable and can be washed<br />
in a dishwasher. In the sorting area the racks can also be<br />
moved <strong>la</strong>terally.<br />
The <strong>Metos</strong> range includes two basic types of returning and sorting<br />
systems: an automatic unit with motor-driven conveyor and a<br />
manual unit with freely rotating rollers (see pictures). The rule of<br />
thumb is that with growing volumes it becomes profitable to invest<br />
in an automatic system, reducing the need for personnel. The<br />
automatic units comprise selfreturning units and restaurant<br />
returning units. The restaurant returning unit has rack and sorting<br />
shelf standard, the selfreturning unit has straight rack shelf. In<br />
practice systems of both types are always tailored to suit customer<br />
needs.<br />
In the design of the return units special attention has been paid to<br />
the ease of cleaning, ergonomics and reliability. In order to<br />
guarantee hygiene the body and basin structures are made of<br />
stainless AISI 304 steel and the conveyor components of<br />
mechanically and chemically tested materials. For maximising<br />
ergonomics the system is delivered with adjustable working heights. The<br />
useful life of the automatic system is extended for instance by protected<br />
ball bearings and by the ability to p<strong>la</strong>ce the electrical equipment in a<br />
separate box away from sp<strong>la</strong>shes. Since the components of the system are<br />
compatible with the machine, the instal<strong>la</strong>tion is quick, reducing the re<strong>la</strong>ted<br />
down time in the kitchen.<br />
The open hygiene chain with chain washing function, rinsing on the long<br />
side of the basin and sufficient sloping make it easier to keep the unit<br />
clean. The <strong>la</strong>rge strainer is easy to empty. On request, the system can be<br />
equipped with a double strainer. Well protected ball bearings make for a<br />
long system lifetime. The accelerated curve sets the racks a little apart and<br />
the rack passes the curve smoothly. This way separate stop notches are not<br />
needed in the curves, racks are fed into the machine without stops and<br />
capacity isn’t lost.<br />
Among the accessories avai<strong>la</strong>ble with the system are:<br />

■ rack sorting shelf (height and sloping of the sloped shelf adjustable)<br />
■ washing pistol with a mixer (comes with a 4m hose)<br />
■ cutlery soaking device (fixed or with a rack lifting device)<br />

■ grid for the base, dishwasher washable<br />
■ basin for chain washing<br />
■ rinsing pipe for chain washing (manual as standard,<br />
automatic as option)<br />
