Ullages (Level of <strong>W<strong>in</strong>e</strong>)<br />
For Bordeaux, Port and other w<strong>in</strong>es <strong>in</strong> bottles with def<strong>in</strong>ed shoulders the ullage/level is shown, if relevant, by its<br />
relevant position <strong>in</strong> the bottle. Our <strong>in</strong>terpretations are as follows:<br />
u. - ullage/ullages (levels)<br />
n. - with<strong>in</strong> neck; the normal level of young w<strong>in</strong>es<br />
bn. - bottom neck; completely acceptable for any age of<br />
w<strong>in</strong>e<br />
vts. - very top shoulder; completely acceptable for any<br />
age of w<strong>in</strong>e<br />
ts. - top shoulder; usual level for w<strong>in</strong>es over 15 years old<br />
hs. - high shoulder; typical reduction through the cork,<br />
usually no problem<br />
ms. - mid shoulder; usually some deterioration of the cork and<br />
therefore some variation<br />
Example: (u. 3hs) means 3 bottles ullaged to high shoulder.<br />
For Burgundy, German and other w<strong>in</strong>es <strong>in</strong> bottles with slop<strong>in</strong>g necks the ullage is shown <strong>in</strong> centimetres,<br />
measured from the base of the cork. Example: (u. 2x5cm) means 2 bottles ullaged 5 centimetres.<br />
1 Whilst we do all that is possible to <strong>in</strong>dicate accurately the levels of older w<strong>in</strong>es, such levels may change<br />
between catalogu<strong>in</strong>g and sales. This may be caused by the age<strong>in</strong>g of the cork or by a change <strong>in</strong> the temperature<br />
of the storage conditions or the shipment of the w<strong>in</strong>e.<br />
2 There is a risk of cork failure <strong>in</strong> old w<strong>in</strong>es which must be taken <strong>in</strong>to account by the potential buyer.<br />
3 Sotheby’s will not enterta<strong>in</strong> any price negotiation or credit after the delivery is made and returns will not be<br />
accepted.<br />
4 Under no circumstances will substitutes be provided by Sotheby’s; for example <strong>in</strong> the case of breakage, or error<br />
of description.<br />
5 Labels may be sta<strong>in</strong>ed where w<strong>in</strong>es have been stored <strong>in</strong> damp conditions. It should be noted that such storage<br />
conditions are generally beneficial.<br />

back<strong>in</strong>g from most of the lead<strong>in</strong>g merchants, the code offers guidel<strong>in</strong>es for best practice and<br />
legitimate behaviour and could form the template for an SA trad<strong>in</strong>g practice.<br />
6.2 Limited Trad<strong>in</strong>g w<strong>in</strong>es<br />
F<strong>in</strong>e w<strong>in</strong>e <strong>in</strong>vestment doesn’t go much beyond top Bordeaux, where supplies from some<br />
producers has actually shrunk ( caused, often, by the search for improved quality br<strong>in</strong>g<strong>in</strong>g<br />
reduced yields ) and some Burgundy, Champagne, Rhone and just one or two Italian and<br />
Spanish w<strong>in</strong>es and a few Ports. Perhaps 75% of the traded f<strong>in</strong>e w<strong>in</strong>e market is produced by<br />
the top Bordeaux châteaux, as Serena Sutcliffe MW says,<br />
‘The F<strong>in</strong>e w<strong>in</strong>e trade is absolutely concentrated on the very top French w<strong>in</strong>es’<br />
