City & Guilds Diploma (Level 1)<br />

Introduction to<br />

Professional Cookery<br />

This course is suitable for you if your goal is to<br />

work in the Hospitality & Catering industry and you<br />

want to begin professional training. During<br />

this course you will be introduced to the Hospitality<br />

& Catering industry, food preparation and cooking<br />

skills, healthier food and special diets, food<br />

safety, health & safety awareness, equipment,<br />

introduction to workplace skills,<br />

food and beverage service skills, customer<br />

care, team working and communication.<br />

Entry Requirements<br />

You need a good level of English and Maths, a passion for<br />

developing practical skills and knowledge and to be well organised<br />

and motivated.<br />

Course Expenses<br />

Kit and uniform – approximately £250.<br />

Trips/Residential<br />

A variety of visits are planned, as well as visits from<br />

guest speakers.<br />

Work Experience<br />

There are opportunities for work experience with a wide<br />

range of local and national catering establishments.<br />

Career Prospects/Progression<br />

Students who successfully complete this qualification and gain<br />

a good Merit profile may be able to progress to the City & Guilds<br />

Diploma in Professional Cookery or the City & Guilds Diploma in<br />

Food & Beverage Services. Alternatively, you can apply for<br />

an Apprenticeship or employment in the industry.<br />

City & Guilds Diploma (Level 2)<br />

Professional Cookery<br />

This course, supported by the Craft Guild of Chefs<br />

and designed with the help of the Hospitality<br />

industry, develops on skills you learn during the<br />

Introductory Diploma course. You will learn about<br />

all aspects of food preparation and cooking to<br />

help you pursue your chef training. You will learn<br />

techniques to prepare, cook and serve meat, fish,<br />

vegetables and pastry dishes, together with how<br />

to plan menus effectively, taking into account<br />

nutrition, cultural influences and food trends.<br />

Work Experience<br />

There are opportunities for work experience available across a<br />

wide range of catering establishments.<br />

Career Prospects/Progression<br />

Upon successful completion of this qualification, you may like<br />

to progress to a related Level 3 course, such as an Advanced<br />

Apprenticeship or the Advanced Diploma in Professional Cookery.<br />

Entry Requirements<br />

You must have at least three GCSEs at A* to D grade, preferably<br />

including English and Maths. You must also have an Introductory<br />

Diploma in Professional Cookery and/or relevant experience of<br />

working in the catering industry.<br />
