City & Guilds Advanced Diploma<br />
(Level 3) Professional Cookery<br />
This qualification is ideal for students wanting to<br />
gain the skills needed to deliver a great dining<br />
experience to customers. You will learn essential<br />
skills in areas like Food Safety, Handling Payments<br />
& Bookings and Serving Food & Beverages.<br />
Areas covered at this level also include Bar Service,<br />
Table Theatre (Gueridon) and Menu Design.<br />
Entry requirements<br />
You must have at least three GCSEs at A* to D grade,<br />
preferably including English and Maths, or a Certificate in<br />
Food & Beverage Services and/or relevant experience of<br />
working in the Catering industry.<br />
Course Expenses<br />
Kit and uniform - approximately £150.<br />
Trips/Residentials<br />
A variety of visits are planned, as well as visits from<br />
guest speakers.<br />
Work Experience<br />
There are opportunities for work experience available<br />
across a wide range of catering establishments.<br />
Career Prospects/Progression<br />
Upon successful completion of this course, you may like<br />
to progress to a related Level 3 course, such as an<br />
Advanced Apprenticeship or the Diploma in Food & Beverage<br />
Service Supervision.<br />
This course allows you to learn and practice<br />
advanced cookery techniques and a range of kitchen<br />
and pastry skills in our modern and professional<br />
training kitchen and restaurant. You will be able to<br />
develop the skills you need to supervise a team,<br />
create and monitor food safety management<br />
systems. In gastronomy, the emphasis will be on<br />
the principles of the dining experience.<br />
Entry Requirements<br />
You must have at least three GCSEs at A* to C grade, preferably<br />
including English and Maths. You must also have a VRQ Diploma<br />
in Professional Cookery or relevant experience of working in a<br />
professional kitchen at a supervisory level.<br />
