also made from certain<br />
varieties of vegetables, finely<br />
chopped and marinated in<br />
brine or oil along with<br />

Chillies<br />
Since chillies are soaked in<br />
buttermilk during<br />
preparation, their pungency<br />
mostly goes away. These chillies<br />
add a nice mix of sour, salty and<br />
mildly pungent flavour to the whole<br />
meal. So, do not be afraid to take a bite<br />

Once seated, the banana leaf will be placed in front of you and<br />
that will be your plate. Utensils while eating this meal is highly<br />
discouraged as you already have the spoons, forks and knives<br />
needed. Use your fingers!<br />
To clean your leaf, sprinkle some water on your leaf and<br />
wipe it with your hands, pushing the water off your<br />

If you are not having a vegetarian banana leaf meal, this usually<br />
gets placed on your leaf next and it depends on what you choose.<br />
Popular choices include 'Chicken 65' which is marinated chicken<br />
with 65 different herbs and spices, mutton 'perattal' which is dry<br />
mutton curry or some spicy squid sambal. Feeling adventurous?<br />

not, it begins with the vegetables<br />
placed on the top part of your<br />
