Squash blossoms brighten up any<br />
market in <strong>Mexico</strong>, where they are<br />
known as flores de calabaza. The<br />
most used for culinary use are<br />
Cucurbita pepo. In the same plant<br />
there are male and female flowers,<br />
which give the fruit.<br />
Squash blossoms are soft, delicate,<br />
and are packed with nutrients.<br />
When stuffed, and fried they turn<br />
deliciously crispy. It contains<br />
flavonoids that protect the<br />
cardiovascular system, is a source<br />
of folic acid, vitamin A, potassium<br />
and calcium, especially needed<br />
before and during the first months<br />
of pregnancy.<br />
There’s something very<br />
satisfying about the combination of<br />
the mildly sweet squash blossoms<br />
with creamy cheese.
