Tortola’s Sausage<br />
pistachio with creamy scrambled eggs with cauliflower and broccoli<br />
Butifarra de Palombe<br />
avec crémeux aux pistaches et œufs cassés avec chou-fleur et brocoli<br />
Butifarra de Tórtolas<br />
con cremoso de pistacho y huevos rotos con coliflor y brocoli<br />
Sausage:<br />
• 800 gr of minced boneless<br />
tortola<br />
• 200 gr minced pork jowls<br />
• 200 gr of minced pork<br />
• 200 gr of diced foie<br />
• Onion Confit<br />
• Salt, pepper<br />
• Brandy<br />
Mix the ingredients and make sure<br />
that the sausage stuffing is firmly<br />
compressed. Just before serving<br />
cook the sausage on a hot grill till<br />
done and then cut into equal parts.<br />
Pistachio cream:<br />
• Peeled green pistachios<br />
• Chicken Broth<br />
• Cream and Milk<br />
• Salt and Pepper<br />
Grind the pistachios in a food processor<br />
to release the fat. Then<br />
gradually add the chicken broth,<br />
finally the cream and then the milk<br />
until you have a light cream. Strain<br />
through a chinese and keep in a<br />
cold place.<br />
Accompaniment:<br />
Scrambled eggs with cauliflower<br />
and broccoli:<br />
Cook the eggs at 63°C.<br />
Chop the broccoli and cauliflower<br />
very very fine (like cous-cous)<br />
Mix the cooked eggs and the cauliflower/broccoli<br />
mixture.<br />
Pour in a bowl. Finally, in the middle<br />
of the mixture add the eggs.<br />
8 Gas�tron�ø�mad<br />
Pour la butifarra:<br />
• 800 gr de palombe désossée et<br />
hachée<br />
• 200 gr de gorge de porc hachée<br />
• 200 gr de porc haché<br />
• 200 g de foie coupé en dés<br />
• Confit d’oignons<br />
• Sel, poivre<br />
• Brandy<br />
Bien mixer l’ensemble et faire un<br />
boudin très tassé. Juste avant de<br />
servir, le saisir à la plancha et le<br />
couper en deux.<br />
Pour le crémeux aux pistaches:<br />
• Pistaches vertes pelées<br />
• Fond de volaille<br />
• Crème fraîche et lait<br />
• Sel et poivre<br />
Broyer les pistaches dans une<br />
Thermomix (programme chaud),<br />
afin de libérer la graisse; puis<br />
ajouter progressivement le fond<br />
de volaille puis la crème fraîche<br />
et le lait jusqu’à l’obtention d’une<br />
crème légère. Filtrer et réserver<br />
au froid.<br />
Accompagnement:<br />
Oœufs cassés avec chou-fleur et<br />
brocoli:<br />
Œufs cuits à 63 degrés.<br />
«Semoule» obtenue en égrainant<br />
le brocoli et le chou-fleur.<br />
Casser les œufs cuits sur la «semoule»<br />
et mélanger. Servir dans<br />
une asiette creuse.<br />

Para la butifarra:<br />
• 800 gr de tórtola deshuesada y<br />
picada<br />
• 200 gr de papada de cerdo<br />
picada<br />
• 200 gr de picada de cerdo<br />
• 200 gr de foie en dados<br />
• Cebolla confitada<br />
• Sal, pimienta<br />
• Brandy<br />
Lo mezclaremos todo bien y lo<br />
empezaremos a embutir intentando<br />
que la butifarra quede bien<br />
presionada. Al momento de servir<br />
la marcaremos a la plancha y la<br />
partiremos a la mitad.<br />
Para el cremoso de pistacho:<br />
• Pistacho verde pelado refinado<br />
• Caldo de pollo<br />
• Nata y leche<br />
• Sal y pimienta<br />
Trituraremos el pistacho en la<br />
Thermomix con temperatura, para<br />
que suelte toda la grasa; seguidamente<br />
añadiremos el caldo de<br />
pollo poco a poco y finalmente la<br />
nata y la leche hasta conseguir<br />
una crema ligera. Colar por chino,<br />
reservar en frío.<br />
Acompañamiento:<br />
Huevos rotos con coliflor y brócoli:<br />
Huevos cocidos a 63 grados.<br />
Cous cous hecho al hacer migas<br />
con el brócoli y la coliflor.<br />
Romperemos los huevos ya cocidos<br />
y los mezlcaremos con el<br />
cous cous. Lo serviremos en un<br />
plato hondo. Finalmente al medio<br />
del plato le añadiremos crema de<br />
huevo para darle mas untuosidad<br />
al plato.
