Diante deste cenário, a microbiologia tornou-se a principal aliada para o entendimento e funcionamento de todo sistema. Para explanar um pouco melhor sobre este entendimento, dividimos o assunto em dois artigos (4º e 5º da série). O primeiro mostrará como é possível obter bioflocos heterotróficos em poucos dias, e o segundo, como controlamos o nitrito de forma direta e eficiente no sistema BRASYS (Biofloc, RAS and Aquaponics System). Entendendo a comunidade microbiana No artigo anterior, explanou-se a importância do controle do volume de sólidos no cultivo de tilápias em sistemas superintensivos, que adotam o bioflocos como o cerne de controle dos elementos nitrogenados. Entretanto, o estudo dos ciclos biogeoquímicos do nitrogênio e carbono permite compreender e modular a síntese de polímeros orgânicos, como os polihidroxialcanoatos (PHAs) (Figura 1). Este composto é inerente em vesículas de acúmulo de reserva energética nas bactérias heterotróficas, como o Bacillus subtilis (Babel et al. 2001). A maioria dos probióticos disponíveis no mercado possuem esta bactéria como ingr<strong>ed</strong>iente principal no cultivo de bioflocos. Os PHAs podem representar cerca de 80% da matéria seca das bactérias e até 16% do peso seco do bioflocos (Schryver et al. 2012). A síntese deste polímero pelas bactérias heterotróficas depende diretamente da disponibilidade de fonte de amônia e carbono orgânico, cujo produto é armazenado no citoplasma bacteriano. A equação estequiométrica da síntese deste composto é representada por (Ebeling et al., 2006): NH 4 + + 1,18C 6 H 12 O 6 (carbono orgânico) + HCO 3 - + 2,06O 2 -> C 5 H 7 O 2 N (PHA) + 6,06H 2 O + 3,07CO 2 . Convertendo de mols para gramas, para assimilar 1g de nitrogênio-amoniacal são necessários 15,17g de carboidrato (carbono orgânico), 3,57g de bicarbonatos (alcalinidade) e 4,71g de oxigênio. Com isso, são produzidos 8,07g de biomassa bacteriana e 9,65g de gás carbônico. Neste contexto, a amônia oriunda das excretas dos animais cultivados e da degradação da matéria orgânica presente na água de cultivo destina-se a síntese de biomassa bacteriana (PHA), desde que os parâmetros físico-químicos estejam adequados. Esta biomassa, de forma suplementar, serve de alimento para os animais, uma vez que possui alto teor de proteína microbiana, como podemos confirmar com a análise por espectrofotometria (espectrofotômetro de bolso SCiO®).
