Berufsausbildung bei <strong>de</strong>r ZDS<br />

Ausbildung mit Auszeichnung<br />
Die ZDS ist ein staatlich anerkanntes<br />
<strong>Berufskolleg</strong> in privater Trägerschaft.<br />
Grundpfeiler <strong>de</strong>r ZDS ist die dreijährige<br />
Ausbildung zur Fachkraft für Süßwarentechnik<br />
(bun<strong>de</strong>sweit) und Fachkraft für<br />
Lebensmitteltechnik (nur NRW). Auszubil<strong>de</strong>n<strong>de</strong><br />
aus ganz Deutschland, von Flensburg<br />
bis Füssen und oft genug auch aus<br />
Österreich und <strong>de</strong>r Schweiz kommen für<br />
die Ausbildung zur Fachkraft für Süßwarentechnik<br />
nach Solingen. In Form von<br />
Blockunterricht verbringen die Fachkräfte<br />
für Süßwarentechnik 12 Wochen pro Jahr in<br />
<strong>de</strong>r ZDS, jeweils 4 Wochen in Vollzeitunterricht.<br />
Je<strong>de</strong>s Jahr beginnen ca. 100 neue<br />
Schüler mit dieser Grundausbildung.<br />
„Alle großen Süßwarenfirmen schicken<br />
ihre Azubis“, erläutert Pflugmacher. „Beson<strong>de</strong>rs<br />
diejenigen, die sie für verantwortungsvolle<br />
Positionen qualifizieren wollen.<br />
Die ZDS ist seit mehr als einem halben<br />
Jahrhun<strong>de</strong>rt Partner <strong>de</strong>r Süßwarenwirtschaft.<br />
Was kann man Besseres für die<br />
Jugendlichen tun, als ihnen eine gute Grundund<br />
Fachausbildung zu bieten, mit <strong>de</strong>r sie<br />
im Betrieb später eine verantwortungsvolle<br />
Position einnehmen können!“<br />
Die Berufsausbildung, die im dualen<br />
System organisiert ist, vermittelt im schulischen<br />
Teil in <strong>de</strong>r Unter- und Mittelstufe<br />
ein breites Wissensspektrum, welches an<br />
<strong>de</strong>r ZDS vermittelt wird. In <strong>de</strong>r Oberstufe<br />
entschei<strong>de</strong>n sich die Auszubil<strong>de</strong>n<strong>de</strong>n für<br />
eine <strong>de</strong>r vier Fachsparten: Schokola<strong>de</strong>,<br />
Zuckerwaren, Konfekt o<strong>de</strong>r Dauerbackwaren.<br />
Neben <strong>de</strong>n theoretischen Kenntnissen<br />
wer<strong>de</strong>n auch Fertigkeiten vermittelt,<br />
die in Form von „Technologischen<br />
Übungen“ in <strong>de</strong>n gewählten Fachsparten<br />
und <strong>de</strong>n entsprechen<strong>de</strong>n Technika an mo<strong>de</strong>rnen<br />
Maschinen durchgeführt wer<strong>de</strong>n.<br />
Pflugmacher: „Die Produkte und ihre Herstellung<br />
wer<strong>de</strong>n von <strong>de</strong>r Basis an kennen<br />
gelernt. Die Auszubil<strong>de</strong>n<strong>de</strong>n bekommen<br />
ein Gefühl für Rohstoffe und ebenso für<br />
das Innere einer Maschine. Dieses Feeling<br />
für die Rohstoffe und Produkte ist es, was<br />
die Ausbildung so begehrt macht.“<br />

<strong>Vocational</strong> training at the ZDS<br />
Training with distinction<br />
The ZDS is a state-approved vocational<br />
college with private sponsorship. The<br />
cornerstone of the ZDS is its three-year<br />
course of training as specialist in confectionery<br />
technology (nationwi<strong>de</strong>) and<br />
specialist in food technology (North<br />
Rhine-Westphalia only). Trainees from<br />
all over Germany – and, often enough,<br />
from Austria and Switzerland too –<br />
come to Solingen to train as specialists<br />
in confectionery technology. In blocks<br />
of instruction, these spend 12 weeks a<br />
year in the ZDS with four weeks of fulltime<br />
instruction at a time. Every year,<br />
around 100 new pupils commence this<br />
basic training.<br />
”All the big confectionery firms send their<br />
trainees”, explains Alfred Pflugmacher,<br />
”especially those which want to qualify<br />
them for positions of responsibility. The<br />
ZDS has been the partner of the confectionery<br />
industry for more than half a<br />
century. What could be better for young<br />
people than to provi<strong>de</strong> them with a<br />
good basic and specialised training so<br />
that they can occupy a responsible<br />
position in their company later on?”<br />
The school part of the vocational training<br />
– which is organised as a dual<br />
system – conveys a wi<strong>de</strong> spectrum of<br />
knowledge at the lower and middle<br />
level. In the upper level, the trainees<br />
<strong>de</strong>ci<strong>de</strong> on one of the four special areas:<br />
chocolate, sugar confectionery, sweets<br />
and long-life bakery products. Apart<br />
from the theoretical knowledge, skills<br />
are imparted too: in the form of ”technological<br />
exercises” in the special areas<br />
selected, this is carried out on mo<strong>de</strong>rn<br />
machinery at the corresponding college<br />
of technology. As Alfred Pflugmacher<br />
says: ”The trainees get to know the products<br />
and their manufacture starting<br />
with the basics. They get a feel for raw<br />
materials as well as how the machinery<br />
works. This feel for the raw materials<br />
and products is what makes the training<br />
so popular.”
