„Gelernt ist gelernt.“ Berufsausbildung bei der ZDS 28 Ausbildung mit Auszeichnung Die ZDS ist ein staatlich anerkanntes Berufskolleg in privater Trägerschaft. Grundpfeiler der ZDS ist die dreijährige Ausbildung zur Fachkraft für Süßwarentechnik (bundesweit) und Fachkraft für Lebensmitteltechnik (nur NRW). Auszubildende aus ganz Deutschland, von Flensburg bis Füssen und oft genug auch aus Österreich und der Schweiz kommen für die Ausbildung zur Fachkraft für Süßwarentechnik nach Solingen. In Form von Blockunterricht verbringen die Fachkräfte für Süßwarentechnik 12 Wochen pro Jahr in der ZDS, jeweils 4 Wochen in Vollzeitunterricht. Jedes Jahr beginnen ca. 100 neue Schüler mit dieser Grundausbildung. „Alle großen Süßwarenfirmen schicken ihre Azubis“, erläutert Pflugmacher. „Besonders diejenigen, die sie für verantwortungsvolle Positionen qualifizieren wollen. Die ZDS ist seit mehr als einem halben Jahrhundert Partner der Süßwarenwirtschaft. Was kann man Besseres für die Jugendlichen tun, als ihnen eine gute Grundund Fachausbildung zu bieten, mit der sie im Betrieb später eine verantwortungsvolle Position einnehmen können!“ Die Berufsausbildung, die im dualen System organisiert ist, vermittelt im schulischen Teil in der Unter- und Mittelstufe ein breites Wissensspektrum, welches an der ZDS vermittelt wird. In der Oberstufe entscheiden sich die Auszubildenden für eine der vier Fachsparten: Schokolade, Zuckerwaren, Konfekt oder Dauerbackwaren. Neben den theoretischen Kenntnissen werden auch Fertigkeiten vermittelt, die in Form von „Technologischen Übungen“ in den gewählten Fachsparten und den entsprechenden Technika an modernen Maschinen durchgeführt werden. Pflugmacher: „Die Produkte und ihre Herstellung werden von der Basis an kennen gelernt. Die Auszubildenden bekommen ein Gefühl für Rohstoffe und ebenso für das Innere einer Maschine. Dieses Feeling für die Rohstoffe und Produkte ist es, was die Ausbildung so begehrt macht.“ ”Once you’ve learnt it.” Vocational training at the ZDS Training with distinction The ZDS is a state-approved vocational college with private sponsorship. The cornerstone of the ZDS is its three-year course of training as specialist in confectionery technology (nationwide) and specialist in food technology (North Rhine-Westphalia only). Trainees from all over Germany – and, often enough, from Austria and Switzerland too – come to Solingen to train as specialists in confectionery technology. In blocks of instruction, these spend 12 weeks a year in the ZDS with four weeks of fulltime instruction at a time. Every year, around 100 new pupils commence this basic training. ”All the big confectionery firms send their trainees”, explains Alfred Pflugmacher, ”especially those which want to qualify them for positions of responsibility. The ZDS has been the partner of the confectionery industry for more than half a century. What could be better for young people than to provide them with a good basic and specialised training so that they can occupy a responsible position in their company later on?” The school part of the vocational training – which is organised as a dual system – conveys a wide spectrum of knowledge at the lower and middle level. In the upper level, the trainees decide on one of the four special areas: chocolate, sugar confectionery, sweets and long-life bakery products. Apart from the theoretical knowledge, skills are imparted too: in the form of ”technological exercises” in the special areas selected, this is carried out on modern machinery at the corresponding college of technology. As Alfred Pflugmacher says: ”The trainees get to know the products and their manufacture starting with the basics. They get a feel for raw materials as well as how the machinery works. This feel for the raw materials and products is what makes the training so popular.”
29 Der jährliche Höhepunkt ist die Abschlussprüfung der Fachkräfte für Süßwarentechnik. Sowohl im Kenntnisteil als auch im Fertigkeitsteil wird die Prüfung von der IHK Solingen/Wuppertal/Remscheid durchgeführt und findet an der ZDS statt. Der Kenntnisteil der Abschlussprüfung umfasst die Fächer Technologie der Süßwarenherstellung, Mathematik und WISO. Zum Fertigkeitsteil gehört auch eine Eigenkreation: ein eigenes Produkt, das der Prüfling selbst erfunden und entwickelt hat. Bei dieser Prüfung sind Erfindergeist und Kreativität ebenso gefragt wie Handfertigkeit und Maschinenwissen. Am Ende erhalten die drei besten Absolventen der Schule eine Anerkennungsurkunde von der ZDS. Zusätzlich lobt der BDSI Preise von 500, 400 und 300 Euro für die besten Absolventen aus. Sehr häufig sind es Mädchen, die die Jahrgangsbesten stellen und die Preise erhalten. In der ZDS durchlaufen etwa gleich viele Jungen und Mädchen die Ausbildung. Worauf ist der Schulleiter besonders stolz? „Auf den Praxisbereich: Von jedem Rohstoff bis zum Produkt kann der ganze Werdegang jeder Süßware nachvollzogen werden.“ The annual highlight is the final examination for the specialists in confectionery technology. In the areas of both knowledge and skills, the examination is carried out by the Chamber of Industry and Commerce of Solingen-Wuppertal- Remscheid and takes place at the ZDS. The theoretical part of the final examination comprises the subjects of confectionery manufacturing technology, mathematics and economics and social science. The area of practical skills also includes an original creation – a product which has been invented and developed by the candidate himself or herself. This examination calls for inventiveness and creativity as much as dex- terity and knowledge of machinery. At the end, the three best graduates of the college receive a certificate of commendation from the ZDS. The BDSI also offers prizes of EUR 500, 400 and 300 for the best graduates. Very often it’s the girls who are among the best in their year and who win the prizes. At the ZDS, just about as many girls as boys pass through the training. What is the college principal especially proud of? “The practical area: from each raw material right down to the product, the whole development process of each confection is made comprehensible.” Meisterlehrgang Master craftspersons’ courses Nachdem die frischgebackenen Fachkräfte zwei Jahre Berufserfahrung gesammelt haben, lassen sich viele in der ZDS zum Geprüfte/n Industriemeister/in, Fachrichtung Süßwaren bzw. Fachrichtung Lebensmittel ausbilden. Pflugmacher: „Wir haben es immer wieder erfahren: Die ZDS bildet Führungsnachwuchs aus. Wer hier Meister geworden ist, wird später in Schlüsselpositionen seines Unternehmens gehen und Verantwortung für die Produktion von Süßwaren übernehmen.“ After the newly qualified specialist personnel have acquired two years of professional experience, many of them train at the ZDS as qualified master craftspersons in industry in the subject area of either confectionery or food. “Again and again, we’ve seen that the ZDS produces young managers”, states Alfred Pflugmacher. “Whoever becomes a master craftsperson here will go on to hold a key position in their company and take on responsibility for the production of confectionery.”
