Unjust or unintelligent warfare upon the milk producer<br />

imperils not only the interests directly involved in<br />

the industry, but still more vitally the interests of every<br />

individual dependent for his daily food upon milk or its<br />

products.<br />

The National Dairy Council aims to bring into this<br />

grave situation deeper understanding, more harmonious<br />

action, and more profound realization of the fundamental<br />

importance of the entire subject. Amongst the problems<br />

which present themselves for immediate attention it has<br />

chosen to regard as most important the widespread ignorance<br />

on the part of the public as to the essential value of<br />

milk.<br />

^Vhen one considers the fact that it would be practically<br />

impossible to rear the young of<br />

the nation without milk;<br />

that some form of proteid food is absolutely essential to the<br />

growth and maturing of young animals, and most important<br />

of these, children;<br />

that milk is the cheapest form of animal<br />

proteid food that is to be had; that it is the only animal<br />

proteid which contains all the elements necessary to growth<br />

and development; that its various products in its more<br />

permanent form as butter, cheese, condensed milk, ice<br />

cream, and milk powder are cheaper and better food than<br />

any other available — it is high time that the public should<br />

be brought to a realization that milk is not a luxury, but a<br />

necessity; that it is not expensive, but relatively cheap;<br />

and consequently that, by thorough organization of the<br />

point of view of the public, an enormously greater and more<br />

stable market can be created which will stimulate and<br />

encourage larger production and higher quality at every<br />

point.<br />

It is common knowledge that there has been in this<br />

country this year a surplus of milk. Are you disposed to<br />

question why try to increase the supply? Let me answer<br />

by another question. Does any thinking man believe that<br />

there is more milk than the country needs? The answer
