impossible to carry out and, if carried out ofif-hand by legislative<br />

enactments, as Mr. Hammond suggested to-day,<br />

would put the dairy industry out of business. I don't say<br />

that Mr. Hammond means that but after all if they go on<br />

enacting on the whole subject the way it is thought it might<br />

be done it would absolutely terminate the whole dairy<br />

business. The thing to do is to go at it from within, and<br />

place our industry above the assaults<br />

of those who know<br />

nothing of its fundamentals.<br />

Now, with all of this lot of things I have said, what is<br />

the remedy? The remedy is — organization in the milk<br />

business more than any other business in the world. It<br />

does n't mean moving against a common enemy. If there<br />

is any one thing organization tends toward, it is selfimprovement;<br />

that is what I look to it for.<br />

In the second place, we have got to do something with<br />

our markets, in order to get the people of this<br />

country^ to<br />

realize that they should be using from four to ten times as<br />

much milk products as they do, in order to fully satisfy<br />

their physiological<br />

needs and economic needs, — from four<br />

to ten times as much should be used as is used to-day in<br />

order to fully justify the situation.<br />

And to accomplish this, I want to say to you this whole<br />

question becomes a matter of education; it is a matter of<br />

presenting right information on the part of every man that<br />

does know about our Indus tr>\<br />

You know what the agricultural colleges have done,<br />

and yet there comes a point beyond which they can not go<br />

there is an abyss that they don't cross. But now we have<br />

the county agent; he attempts to cross the abyss; he<br />

attempts to teach of agricultural products; and he goes<br />

right out and shows the farmer what to do, and he is the<br />

man who is turning the trick. You have no idea of the<br />

difference that this is making, and the responsiveness of<br />

the average farmer who wants to know what to do. I was<br />

talking to a gentleman this morning, and he asked, "How
