• Feine Pastete aus Gänseleber mit Pflaumenchutney
und gebratenen Nüssen
• Cremesuppe mit Gänseklein und Tomatenconcassé
• Confierte Gänsekeule am Thymian, gedünstetes Rot-und Weißkraut,
Kartoffelknödel mit gebratenem Speck und Semmelknödeln
• Marinierte Birne in Rotwein mit Mascarpone und Karamell

• Fine goose liver pate with plum chutney and roast nuts
• Cream soup with goose giblets and tomato concassé
• Confit of goose legs with thyme, two kinds of stewed cabbage,
potato dumpling with roast bacon and bread dumpling
• Pear marinated in red wine and mascarpone with caramel straw
