their partner, Bob Hitchcock, and the name Behrens and Hitchcock will be
history after the following 2004s are released. Under the new name, Erna
Schein (Les Behrens’ mother’s name), the goal will be to produce more limited,
but also more interesting cuvées. Beginning with the 2005s, all the wines will
be released under the Erna Schein label, and production is unlikely to exceed
3,000 cases.…From a wine critic’s perspective, the wines are wonderful. They

voluptuous, brash effort,” likening it too a “sexy beast” (was reviewed
as 2005 Fat Boy in The Wine Advocate, Issue 168). 65% Merlot, 27%
Cabernet Sauvignon, 8% Petit Verdot. 375 cases produced.

Wine Critic Stephen Tanzer writes that the wine “finishes with suave
tannins and terrific sappy, peppery length” giving it a barrel score of
91-94. (International Wine Cellar, Issue 132). 95% Cabernet

This wine has a beautiful dark garnet color with a nose that opens up
to floral aromas of orchid and violet and moves on to notes of sage and
Asian Spice. The mouthfeel is lush and balanced with plenty of stuffing.
Focused flavors of black cherry, tamarind and sassafras follow
through to a plum and cardamom finish. 46% Syrah, 34% Merlot,
13% Cabernet Franc, 7% Petit Verdot. 330 cases produced.
2006 Petite Sirah Spring Mountain District_ ______________ 54.99
The Spring Mountain District Petite Sirah is yet another 2006 that
leaves us gushing about the layers of sweet and rich spice. A gorgeous
purple/black color with edges of magenta, the wine exudes marvelous
aromas of holiday spice, cinnamon, clove and telicherry. This is a powerful
wine with silky tannins and a solid structure to support the flavors
of cola, cassis, espresso and sweet, smoky oak. 92% Petite Sirah,
8% Cabernet Sauvignon. 300 cases produced.

Tokaji Aszu—Aszu is the term for grapes infected with noble
rot. Destalked hand-picked Aszu grapes are stored 6-8 days,
then kneaded to a pulp which is added to base Tokay wine, or
to must, by the puttony (hod of 20-25 kilos). The eventual
sweetness depends on the number of puttonyos added to the
136-140 litre barrels (called Gorci) of one-year-old base wine -
usually 3,4 and 5 puttonyos. 6 is exceptional.
Tokaji Aszu Essencia—Only individually hand-selected
Aszu grapes. Only produced in exceptional years from the best
vineyards.
Tokaji Aszu Essence—Destalked hand-picked Aszu grapes.
While grapes are being stored (see Tokay Aszu) the pressure of
their own weight the tub (one puttonyo yields only 142 millimeters
of this Essence). The juice is then allowed to ferment
extremely slowly for many years in oak casks
