Nutritional herbal candy was prepared byusing three different treatments T 1(carrot 70 percent, orange 20 percent, gingellyseed 10 percent, aloevera 5 percent). T 2(carrot 60 percent, orange 25 percent,gingelly seed 15 percent, aloevera 5 percent) and T 3(carrot 50 percent, orange30 percent, gingelly seed 20 percent, aloevera 5 percent). Sensory evaluation ofthe prepared product was carried out using the nine point hedonic scale. Theexperiment was replicated four times and the data obtained during investigationwere statistically analysed by using analysis of variance (ANOVA) and criticaldifference (C.D) techniques. The cost of the candy was found on the basis ofraw ingredients only, at prevailing prices candy was obtained in T 1as comparedto other treatment. The calculated nutritive value of product showed that as thepercentage of carrot increased the carotene content increases, energycarbohydrate increase with increase of gingelly seed and orange. Over all it wasconcluded T 3of orange, carrot, gingelly seeds candy through value additionwith aloevera was found to be most acceptable.Keywords: Gingelly seed, Hedonic scale, Aloevera, Carotene, ANOVAAloevera plants such as aloevera barbadensis are known for their medicinal use.Traditionally, aloe was used topically to heal wounds and for various skin conditions, andorally as a laxative. People use aloetopically for osteoarthritis, burns, sunburns, and psoriasis. Aloevera gel can be found inhundreds of skin products, including lotions and sunblocks.
