Κρητικό πρωινό Cretan breakfast<br />
Το πρωινό γεύμα είναι ένα από τα σημαντικότερα γεύματα που<br />
μπορούμε να προσφέρουμε στον οργανισμό μας στο ξεκίνημα της<br />
ημέρας. Τη διατροφή των Κρητικών από την μινωική ακόμα εποχή<br />
αποτελούσαν κυρίως τα τρόφιμα από φυτικές πηγές.<br />
Σε γενικές γραμμές θα λέγαμε ότι οι Κρητικοί κατανάλωναν και<br />
καταναλώνουν τρόφιμα που υφίστανται ελάχιστη ή και καθόλου<br />
επεξεργασία και αυτό είναι και ένα από τα «Μυστικά» που καθιστά<br />
το κρητικό πρωινό ένα γεύμα απόλυτα υγιεινό και υψηλής<br />
θρεπτικής αξίας.<br />
Το κρητικό πρωινό πλέον προσφέρεται στα περισσότερα ξενοδοχεία<br />
της Κρήτης και γίνεται όλο και πιο γνωστό λόγω τον άρτιων<br />
πρώτων υλών και προϊόντων, όπως τα τυριά, που κατέχουν σημαντική<br />
θέση στο τραπέζι και στην καρδιά των Κρητικών. Το Κρητικό<br />
παραδοσιακό ψωμί και το παξιμάδι αντίστοιχα, αποτελούν ένα<br />
μεγάλο κομμάτι της Κρητικής διατροφής και κουλτούρας, για<br />
αυτό και το κρητικό πρωινό είναι πλούσιο σε αυτά.<br />
Τα αρωματικά φυτά και τα αφεψήματα αποτελούν επίσης μια<br />
σπουδαία παράδοση με έντονα αρώματα και χαρακτηριστικά για<br />
την Κρήτη. Το θυμαρίσιο μέλι, ένα ακόμα ιδιαίτερο προϊόν λόγω<br />
των ξεχωριστών και έντονων αρωματικών και γευστικών χαρακτηριστικών<br />
του, παράγεται από τα άφθονα βότανα της Κρητικής<br />
Γης, που το καθορίζουν και από τις πιο υγιεινές γλυκαντικές ουσίες.<br />
Μερικά από τα χαρακτηριστικά προϊόντα και εδέσματα ενός<br />
Κρητικού πρωινού είναι:<br />
Γραβιέρα Κρήτης, πηχτόγαλο Χανίων, ξινομυζήθρα, ξύγαλο Σητείας,<br />
ανθόγαλο, μυζήθρα, στάκα, απάκι, σύγκλινα, ψωμί, παξιμάδια, θυμαρίσιο<br />
μέλι, μαρμελάδες από εσπεριδοειδή, καλιτσούνια και πίτες,<br />
λυχναράκια, σιμιγδαλένιος χαλβάς, μουσταλευριά, ξεροτήγανα,<br />
τηγανίτες, λουκουμάδες, ντάκος, σφουγγάτο με διάφορα λαχανικά<br />
και αρωματικά χορταρικά εποχής, αυγά με στάκα.<br />
Breakfast is one of the most important meals that we can<br />
offer to our body to start the day. The diet of Cretans from<br />
minoan era were still mainly products from plant sources.<br />
Generally, we would say that Cretans used to eat and consume<br />
products that undergo minimal or no process, and<br />
this is one of the "secrets" that makes the Cretan breakfast<br />
a meal absolutely healthy and with high nutritional value.<br />
Cretan breakfast is now available in most of the hotels of<br />
Crete and becomes more popular, thanks to the raw materials<br />
and products, such as cheese, which has an important<br />
place in the heart of the Cretans. The Cretan traditional<br />
bread and rusk respectively, represent a large chunk of the<br />
Cretan diet and culture, which is the reason why the Cretan<br />
breakfast is rich in them.<br />
The herbs and herbal teas are also part of a great tradition<br />
of the flavors and characteristics of Crete. The honey,<br />
another unique product, thanks to its intense aroma and<br />
flavor characteristics, is produced from Cretan herbs,<br />
which define it to one of the healthiest sweeteners.<br />
Some of the typical products and dishes of the<br />
traditional Cretan breakfast are:<br />
Cretan graviera cheese, pichtogalo (fresh white goat<br />
cheese) from Chania, xinomyzithra (sour & salted white<br />
goat cheese), xygalo (sour soft cheese) from Sitia, mizithra<br />
(white goat cheese), staka (fresh goat butter), apaki (smoked<br />
pork), siglina (smoked pork preserved in fat), bread, rusk,<br />
thyme honey, kalitsounia (pies with salted mizithra cheese),<br />
lychnarakia (pies with sweet mizithra cheese), xerotigana<br />
(fried thin dough with honey & cinnamon), pancakes,<br />
loukoumades, ntakos, “sfougato” (cretan omellete) with<br />
vegetables and aromatic herbs, eggs with staka.<br />

Υλικά<br />
2 αυγά<br />
2 κουταλιές στάκα<br />
1 κουταλιά αλεύρι<br />
2 κουταλιές νερό<br />
Αλάτι<br />
Φρεσκοκομμένο πιπέρι<br />
Εκτέλεση<br />
Σε ένα τηγάνι βάζουμε τη στάκα σε σιγανή φωτιά να ζεσταθεί μαζί<br />
με το νερό. Ρίχνουμε ένα ένα τα αυγά και τα περιχύνουμε µε την<br />
στάκα ώστε να ψηθούν τα αυγά. Προσθέτουμε αλάτι και φρεσκοκομμένο<br />
πιπέρι και σερβίρουμε.<br />
Eggs with staka<br />
Ingredients<br />
2 eggs<br />
2 tablespoons “staka”<br />
1 tablespoon flour<br />
2 tablespoons water<br />
Salt<br />
Freshly ground pepper<br />
Preparation Method<br />
Put the “staka” in a pan, over low heat and warm along<br />
with water. Pour the eggs one by one and pour the “staka”,<br />
so that the eggs are cooked. Add salt and freshly ground<br />
pepper and serve.
