Cuisine ฉบับนี้จะพาคุณไปลิ้มลอง 2 รส ในร้านน่านั่งที่ตั้งอยู่ในสองจังหวัดใหญ่ของ
อีสาน นอกจากจะได้สัมผัสรสแรก คือรสชาติของอาหารที่เปลี่ยนไปตามกระแสและวัฒนธรรม
ยังจะได้รับรสที่สอง คือ รสสัมผัสทางสายตา ที่มาพร้อมกับการออกแบบเชิงสถาปัตยกรรม
ที่เปี่ยมด้วยแรงบันดาลใจ
The Cuisine column in this issue will take you to taste 2 different style restaurants
which locate in 2 main provinces of the northeast region of Thailand. Other than the
taste of food which has been changed by the trend and culture, you will also appreciate
the taste of the architectural design which is full of inspiration.
Dose Factory
ร้านอาหาร โดส แฟคตอรี่ เป็นสาขาที่สองของ โดส
เอสเปรสโซ่ (ประเทศไทย) ที่ จ.อุดรธานี แนวคิดของโดส
แฟคตอรี่มาจากสถานที่ก่อสร้างที่เป็นโกดังประกอบรถ
สามล้อเครื่องเก่า จึงต้องการเก็บบรรยากาศและกลิ่นอาย
ของความเป็นอุตสาหกรรมเดิมไว้ จึงออกแบบให้ใช้
โครงสร้างเดิมและเผยให้เห็นโครงสร้างเดิมทั้งหมดด้วย
ฟังก์ชั่นที่ถูกแบ่งออกเป็นส่วนทานอาหารประมาณ 40
เปอร์เซ็นต์ที่เหลือเป็นส่วนของครัว ห้องน้ำ ห้องเก็บของ ห้อง
เวิร์กช็อป และโรงคั่วกาแฟเล็กๆ อยู่ภายใน
TH Gallery & Cafe’ ตั้งอยู่ในซอยกิ่งสวายเรียงซึ่งอยู ่
หลังโรงพยาบาลโคราชเมมโมเรียล แกลเลอรี่& คาเฟ่นี้แสดง
ผลงานออกแบบสถาปัตยกรรม ผลงานศิลปะ และรองรับการ
เป็นสภากาแฟ ซึ่งมีแนวทางการออกแบบสร้างสรรค์ภายใต้
รูปแบบไทยร่วมสมัยที่มีความเป็นไทยและมีความทันสมัย
ด้วยการนำลักษณะไทยอย่างความโปร่งโล่ง การวางผัง
อาคารสอดคล้องกับสภาพของบริเวณทิศที่ตั้งอาคารลักษณะ
ไทยถูกนำมาปรับใช้ในการออกแบบด้วยไวยากรณ์แบบ
สถาปัตยกรรมสมัยใหม่ผ่านรูปทรงเรขาคณิต วัสดุพื้นฐานที่
หาได้ทั่วไปในพื้นที่ชุมชน ยกตัวอย่างเช่น ประตูไม้เดิม
หน้าต่างไม้เดิม บล็อกลม ผนัง หลังคา และผนังใช้กระเบื้อง
แป้นเกล็ดที่ผสมผสานกันระหว่างวัสดุธรรมชาติและวัสดุ
ก่อสร้างในระบบอุตสาหกรรม นอกจากนี้อาคารได้รับการ
ผสานความเป็นไทยในมิติความโปร่ง แทรกธรรมชาติเข้าไว้
ในสถาปัตยกรรมด้วยการเก็บรักษาต้นไม้เดิมเอาไว้ในผืน
ดินที่ตั้ง
เจ้าของต้องการให้ โดส แฟคตอรี่ เป็นเหมือนโรงงาน
สร้างแรงบันดาลใจให้กับคนทุกกลุ่ม ทั้งคนที่ต้องการเรียน
รู้เรื่องกาแฟ อาหารเพื่อสุขภาพ และคนที่สนใจเรื่องศิลปะ
และการออกแบบ ก็สามารถเข้ามาศึกษากระบวนการ
ออกแบบจากตัวอาคารนี้ได้
TH Gallery & Caffé locates in Soi Ging Swairiang behind
Korat Memorial Hospital. This café exhibits architectural
design and art works. It is accepted as a coffee club
which is designed in Thai contemporary style. Its design
applied Thai style open space and Thai building axis
Dose Factory is the second branch of Dose
Espresso (Thailand) in Udonthani province. The concept
of Dose Factory came from its construction site which
used to be an old motor tricycle assembly factory.
In order to keep the industrial ambience of the old
factory, it was designed to use and show the remaining
structure. Only 40% of the interior space is arranged to
be dining area when the rest is for kitchen, toilets,
storage, workshop space, and a coffee roasting room.
The owner wanted Dose Factory to be like the
inspiration factory for everyone. Either people who like
coffee and healthy food or ones who are interested in
art and design can come to study the design process
from this building.

theory within the modern geometric form. The basic
materials are available in local neighborhood such as
old wooden doors, old wooden windows, and ventilation
blocks. Materials for walls and roof are fiber cement
shingles which are the combination of natural and industrial
raw materials. The design of building also expresses Thai
traditional open space and the nature by keeping the
remaining primary trees in the site.
