Se discuten los diversos factores que puedan<br />
producir toxicidad en grasas sobrecalentadas. A<br />
pesar <strong>de</strong> que <strong>la</strong> formaciún <strong>de</strong> peróxidos, hidroperóxidos<br />
y productos polimerizados parecen ser<br />
los principales responsables, <strong>la</strong>s evi<strong>de</strong>ncias hasta<br />
ahora conocidas no son <strong>de</strong>finitivas.<br />
Dado que los aceites y grasas usados en <strong>la</strong><br />
preparación <strong>de</strong> alimentos en<strong>la</strong>tados süfren un<br />
proceso <strong>de</strong> calentamiento, y lIado que algunos<br />
alimentos caseros son fritos en aceites o grasas<br />
sobrecalentadas, el problema reviste mucho interés<br />
<strong>de</strong>s<strong>de</strong> el plll1to <strong>de</strong> vista nutricional.<br />
