Desperandum – reportedly the country’s first and only<br />
Australian Certified Organic rum, inspired by the cane<br />
fields of the Sunshine Coast and the fervent belief that it’s<br />
about time Australia had a rum equal to the world’s best.<br />
Matt Hobson is the founder and chief imaginer of CAVU<br />
Distilling, which encompasses both Sunshine & Sons<br />
spirits and liqueurs and Nil Desperandum, and said since<br />
2020 they’ve been producing what is estimated to be the<br />
third largest production of rum in the country.<br />
“We are really committed to producing Australia’s finest<br />
rum, and we describe it like that with good reason – it’s<br />
delicious, with an amazing taste that comes from organic<br />
ingredients. It’s a wonderful experience for drinkers<br />
and has an elevated, enjoyable quality that people will<br />
certainly recognise from imported rums, but possibly<br />
never from an Australian rum.<br />
“It’s Australian Certified Organic, meaning there’s no<br />
chemicals used in the agricultural origins of the molasses<br />
that we’re using, nor in production and packaging. The<br />
rum is 100% pure and unadulterated.<br />
“Unlike rum that’s been produced in Australia for a very<br />
long time, we’re not adding any caramel for colouring,<br />
and there’s also no sweeteners or things such as<br />
glycerine, which are used to enhance the qualities of a<br />
rum that isn’t potentially as premium as ours,” he said.<br />
