Spirits were dampened somewhat at this year’s Fruit<br />
Logistica. Last year in Berlin there was hardly a trace<br />
of the current economic woes: exhibitors and visitors<br />
were, as usual, in an upbeat mood, a feeling of optimism<br />
coming from “Europe’s economic engine”. This<br />
year, though, the mood swing was palpable as the<br />
numbers of exhibitors and visitors were down a notch<br />
or two. This is not to say this, the world’s fresh produce<br />
event par excellence, will not retain its top<br />
billing, a role in all likelihood it will long continue to<br />
play. Yet this time change was in the air for the Old<br />
World, a certain realisation that Europe is no longer<br />
the centre of the trade’s universe. For example, the<br />
there was an air of enthusiasm at the stands of producers<br />
Chile, Brazil and Argentina and from China,<br />
India and Pakistan as they sought out prospective<br />
customers but were no longer focused solely on<br />
Europeans or North Americans. There is now a sold<br />
network of global business relations and countries<br />
once considered as outsiders are interacting a lot with<br />
one another.<br />
A good case in point is Turkey, the show’s official<br />
2012 partner country. It’s already a formidable powerhouse<br />
with 44 million tons of produce and export revenues<br />
of US $2.1 billion in 2011. And its F&V industry<br />
aspires to even greater heights, setting its sights on<br />
an export target of $10 billion by 2023. Indeed, Turkey<br />
is not waiting to strike the “usual” free-trade deal with<br />
the EU but is looking eastwards, to Russia first, and<br />
farther afield to the Middle East and the enormous<br />
markets of Asia. As we’ve noted, the lower profile projected<br />
by European producers was especially evident<br />
with Spain and its 274 exhibitors. The country is perhaps<br />
feeling the pinch of the downturn more than<br />
other producers, though it may well be concentrating<br />
its attention on boosting the growth of its own show,<br />
Fruit Attraction in Madrid, as the feature event of its<br />
overall business strategy.<br />

Aria più dimessa al Fruit Logistica quest’anno. L’anno<br />
scorso alla kermesse berlinese della crisi non vi era<br />
quasi nessuna percezione: espositori e visitatori come al<br />
solito in crescita, clima ottimistico: stare all’interno della<br />
“locomotiva d’Europa” dava una spinta di ottimismo.<br />
L’atmosfera quest’anno è senz’altro cambiata, sia dal<br />
punto di vista degli espositori che dei visitatori, entrambi<br />
in calo. Non che la manifestazione abbia dato segnali<br />
negativi, il Fruit Logistica si è ritagliata il ruolo di manifestazione<br />
mondiale per eccellenza, un ruolo che le spetterà<br />
presumibilmente ancora per lungo tempo. La sensazione<br />
è però che per il Vecchio Continente, forse, inizia<br />
a tirare un’aria diversa. Ci si rende conto allora che<br />
l’Europa non è più, perlomeno commercialmente, l’ombelico<br />
del pianeta. Negli stand per esempio dei Paesi<br />
sudamericani (Cile, Brasile, Argentina, ecc.) o di quelli<br />
asiatici (a partire dalla Cina, l’India, il Pakistan, ecc.) si<br />
vive una certa effervescenza e la caccia al cliente non<br />
riguarda più certo solo gli europei e i nordamericani. Una<br />
fitta rete di relazioni trasversali attraversa oramai tutto il<br />
globo e i paesi “out-sider” colloquiano sempre di più fra<br />
di loro.<br />
Un bell’esempio di questa tendenza è la Turchia, il<br />
Paese partner ufficiale 2012. Si tratta di un formidabile<br />
produttore (44 milioni di t di ortofrutticoli nel 2011) che è<br />
già una potenza nella esportazione (2,1 miliardi di dollari<br />
Usa), ma che vuole assolutamente diventare leader:<br />
l’obbiettivo dichiarato è infatti di esportare per 10 miliardi<br />
di dollari entro il 2023. <strong>Il</strong> Paese non punta certo alla<br />
sola Europa (e, infatti, non fa la fila per strappare il “classico”<br />
accordo di libero scambio con la Ue), ma<br />
all’Europa dell’Est (Russia in testa), ai Paesi arabi e a<br />
tutto il grande mercato asiatico. Per l’Europa si è notata<br />
una presenza meno pronunciata soprattutto per la<br />
Spagna (274 espositori) che subisce forse più degli altri<br />
la crisi ma appare anche più concentrata nello sviluppare<br />
a fondo una propria manifestazione (il Fruit Attraction<br />
di Madrid) come vero momento cardine della propria<br />
strategia commerciale.<br />

Bayer to introduce new safe, high-performance<br />
products and boost supply-chain projects<br />

In announcing the debut of major new<br />
novelties, Bayer also noted it expected to<br />
see more than a fifth in future earnings<br />
from these innovative products for grain,<br />
grape and produce. The company also<br />
said it will take a more direct approach to<br />
customer relations through an upgrade of<br />
its BayDir programme.<br />
Bayer noted too that the Magis Project in<br />
Italy will be enlarged to take in wine and<br />
table grape and new titles in its<br />
Coltura&Cultura imprint will be released.<br />
The head of the company’s Italian operations,<br />
Karina Von Detten, announced that<br />
Bayer CropScience will increase its<br />
world-wide investments to €850 million<br />

by 2015, a notable 20% rise, and that<br />
Italy, where the company has been a<br />
major player in agriculture R&D for 40<br />

step in innovation will be directed towards<br />
eco-sustainability by substituting old<br />
spray formulas with new, performanceenhancing,<br />
and safer, active ingredients.<br />

innovazioni e oltre un quinto del fatturato<br />
sarà realizzato con nuovi prodotti per<br />
cereali, vite, ortofrutta. Sarà, inoltre, sviluppato<br />
un approccio più diretto al cliente<br />
con il potenziamento del progetto Baydir.<br />
Continuerà il progetto Magis, allargato<br />
dall’uva da vino a quella da tavola e<br />
saranno pubblicati altri volumi della collana<br />
Coltura&Cultura.<br />
La nuova responsabile della filiale italiana,<br />
Karina Von Detten, ha annunciato che,<br />
a livello globale, Bayer Cropscience incrementerà<br />
del 20% gli investimenti (850<br />
milioni nel 2015) e l’Italia, dove l’azienda<br />
vanta 40 anni di esperienza nell’ambito<br />
della ricerca sul campo, aumenterà il suo<br />
ruolo chiave nell’area del sud Europa.<br />
L’innovazione sarà anche il primo passo<br />
per l’ecosostenibilità, con la sostituzione<br />
di vecchie molecole con altre più performanti<br />

Magic Code, stamps for prizes reserved for greengrocers<br />
Magic Code, la raccolta punti riservata ai fruttivendoli<br />
At a recent press conference in Milan,<br />
Melinda, Apofruit, Sant’Orsola and Simba,<br />
four of the country’s leading fruit companies,<br />
announced the start of the test phase<br />
of Magic Code, a contest for prizes based<br />
on collecting the stamps to be handed out<br />
with purchases of produce by greengrocers.<br />
The initial stage, which kicked off on<br />
1 February and will last over the next<br />
twelve months, involves 250 selected<br />
retailers in Milan and another 50 in Bari.<br />
On a more technical note, the contest will<br />
be handled through a Quick Response<br />
code, a kind of identification sticker that<br />
will be placed on every package format of<br />
the items listed in this pilot-stage of the<br />
promotion. The participating retailers will<br />
photograph the QR code number using<br />
mobile phones with the necessary data on<br />
special sim cards provided by the sponsoring<br />
producers. The mobiles will also be<br />
used – and here’s the new twist – by the<br />
retailers themselves to send the logged<br />
data directly to the sponsors.<br />
«The software package installed in the<br />
terminal for the stamp-points and<br />
requests for prizes includes a ‘Talks to Us’<br />
section that lets the greengrocers forward<br />
via messaging any questions they have<br />
directly to the sponsors. They can even<br />
include a snapshot» noted Andrea Severi<br />
of Apofruit.<br />
This approach to securing customer loyalty<br />
for these small produce retailers is<br />
intended to help promote the cultural and<br />
professional profile they stand for in the<br />
community. It’s also a way of their sharing<br />
useful information with shoppers so as to<br />
help them make more informed choices<br />
and even to increase their purchases of<br />

del progetto Magic Code, un concorso a<br />
premi ad accumulazione punti lanciato da<br />
quattro grandi produttori italiani di frutta<br />
(Melinda, Apofruit, Sant’Orsola e Simba)<br />
esclusivamente per i dettaglianti di settore.<br />
La fase sperimentale del progetto è<br />
riservata a 250 dettaglianti specialisti in<br />
ortofrutta di Milano e 50 di Bari e durerà<br />
dodici mesi (la partenza è stata l’uno febbraio).<br />
Tecnicamente la raccolta punti si svolge<br />
attraverso il Quick response code identifi-<br />
cativo unico che, dal primo febbraio, contrassegna<br />
ogni imballaggio dei prodotti<br />
inseriti nel progetto pilota. I dettaglianti<br />
partecipanti alla raccolta test, fotograferanno<br />
il Qr code con il telefono cellulare<br />
dotato di sim dati che è stato loro consegnato.<br />
Lo stesso cellulare servirà – e qui<br />
sta la vera novità – agli stessi dettaglianti<br />
per comunicare, anche se in forma dati,<br />
direttamente con i produttori.<br />
«Nel software installato nel terminale per<br />
la raccolta punti e la richiesta premi c’è la<br />
sezione ‘Parla con noi’ attraverso la quale<br />
i fruttivendoli possono rivolgere le loro<br />
domande direttamente ai produttori tramite<br />
messaggio con la possibilità di allegare<br />
una foto» ha spiegato Andrea Severi<br />

part in the 2nd CineFrutta – Healthy Diet<br />
Festival is growing. CineFrutta is a forumcum-competition<br />

fruit and vegetables promoted by the<br />
TerraOrti producer organisation based at<br />
Piana del Sele for middle- and upperschool<br />
students in Italy and the other EU<br />

The markets of Bologna and Perpignan have<br />
just signed deal in a joint logistical effort to<br />
boost their profiles in the fruit and vegetable<br />
trade. The accord, which essentially calls for<br />
increased F&V volumes between the partners,<br />
was signed at the end of talks by the<br />
Bologna Municipal Food Market (Caab) and<br />
the Perpignan public-private Pyrenees<br />
Mediterranean Hub (Mp2) consortium,<br />
Europe’s largest F&V industry gateway.<br />
The deal was underwritten by the wholesalers<br />
belonging to Fedagro-Acmo and growers<br />
of AgriBologna operating out of Caab in<br />
Bologna and the St. Charles Interna tional industry<br />
associations belonging to France’s<br />
national fruit and vegetable importers consortium<br />
(Snifl), the national road-transport<br />
federation (Fntr66) and St. Charles Export.<br />
Overall yearly volumes leaving Perpignan<br />
for Bologna currently amount to nearly<br />
€130 million and that flowing between<br />
Bologna headed for Perpignan to about<br />
€40 million. The purpose of the new agreement<br />
is to rapidly boost these figures.<br />

Pyrenees-Mediterranean hub includes the<br />
enormous St. Charles Market, which handles<br />
a yearly produce trade amounting to 4 million<br />
tons from Europe and the Mediterranean<br />
Basin and another 3 million tons from the Atlantic<br />
area, the big Port Vendres sea-to-road<br />
logistics terminal and a big rail hub. Taken as<br />
a whole, it is one of the biggest logistics gateways<br />

Two of the most important companies in the sector have responded to increasing<br />
market demand with products that are cheap and environmentally friendly<br />
Prodotti economici ed ecosostenibili: così due tra le maggiori imprese del settore<br />
rispondono alle sempre più crescenti richieste del mercato<br />
Innovation is the watchword, but keeping cost in<br />
mind and an eye on eco-sustainability (though with<br />
different solutions). Those are the lines along which<br />
some of the most important Italian companies in the<br />
F&V packaging business are moving.<br />
The latest creations from Nespak (part of the Guillin<br />
Group, which earns 500 million euros a year in the<br />
food packaging sector and which has eighteen industrial<br />
and commercial plants divided between France,<br />
Spain, Portugal, UK, Italy, Poland and Holland, for a<br />
total workforce of two thousand) are new fruit nest<br />
trays, for Saturnia flat peaches and for prickly pears,<br />
a new clamshell punnet for table grapes, which fit 10<br />
to a 40x60 container, a complete set of new honeycombed<br />
trays in expanded polystyrene, a new bowl<br />

Fare innovazione, ma con attenzione all’economicità<br />
e con uno sguardo (seppure con soluzioni e modalità<br />
differenti) all’ecosostenibilità. Sono queste alcune<br />
delle direttrici lungo le quali si stanno muovendo alcune<br />
delle maggiori aziende italiane di packaging ortofrutticolo.<br />
In casa Nespak (azienda del Groupe Guillin, una realtà<br />
che fattura circa 500 milioni di euro nel settore packaging<br />
per alimenti, con diciotto siti industriali e commerciali<br />
ripartiti tra Francia, Spagna, Portogallo, Uk, Italia,<br />
Polonia e Olanda per circa duemila collaboratori), le ultime<br />
creazioni sono gli alveoli realizzati per la pesca<br />
Saturnia (pesca piatta), per i fichi d’India, un nuovo<br />
cestino clamshell per l’uva da tavola cassettabile in dieci<br />
pezzi nel 40x60, una serie completa di nuovi vassoi<br />
alveolati in polistirolo espanso, una nuova ciotola per<br />
insalate di IV gamma e una nuova gamma di modelli<br />
realizzati per i piccoli frutti.<br />
Amici dell’ambiente<br />
«Per seguire le sempre più complesse esigenze del<br />
mercato – spiega il responsabile marketing Matteo<br />
Camillini - Nespak realizza ogni anno decine di nuovi<br />
modelli per elevare il livello del valore aggiunto dell’ortofrutta<br />
e contribuire alla creazione di nuove occasioni<br />
d’acquisto. A causa dei rialzi delle materie prime di<br />
questi ultimi anni e della continua ricerca, da parte dei<br />
nostri clienti, di packaging innovativi ma economici,

Environmentally friendly<br />
«Every year, in order to respond to the increasingly<br />
complex requirements of the market – explains marketing<br />
manager Matteo Camillini – Nespak produces<br />
dozens of new models designed to raise value added<br />
levels on F&V and stimulate consumption. Because of<br />
rising raw material prices in recent years, and the fact<br />
that our customers are looking for packaging that is<br />
innovative and cheap, Nespak has identified a number<br />
of crucial guidelines for the present and the future.<br />
Firstly, the “re-engineering” of our models, in order to<br />
maintain the same physical characteristics while<br />
reducing the plastic content, so as to obtain cheaper<br />
products with lower environmental impact. Then we<br />
are creating new models to meet all the requirements<br />
created by market segmentation in the F&V sector<br />
and, finally, we are looking for environment friendly<br />
materials and partnerships which will enable us to<br />
replace part of the plastic with inert materials and<br />
move in the direction of closed-loop recycling».<br />
Bioplastics are not the solution<br />
Camillini is not in favour of the plastics of<br />
biomass origin which are being<br />
employed by some of Nespak’s<br />
competitors.<br />

la sostituzione di una parte di plastica con sostanze<br />
inerti e collaborazioni che portino verso forme di riciclo<br />

La bioplastica che non convince<br />
Camillini è sfavorevole all’utilizzo di materie plastiche di<br />
origine vegetale, utilizzate invece da competitors di<br />
Nespak.<br />
«Pur avendo realizzato alcune referenze con plastiche<br />
di origine vegetale – ha spiegato - non pensiamo possano<br />
essere la soluzione ideale. Recenti studi stanno<br />
mettendo in forte discussione il reale vantaggio per<br />
l’ambiente di questo genere di plastiche rispetto a<br />
quelle tradizionali. Oltretutto in Italia<br />
non esistono canali per un<br />
corretto compostaggio<br />
e smaltimento<br />

mass origin – he explains – we do not think that bioplastics<br />
represent the ideal solution. Recent studies are<br />
casting serious doubt on the real environmental advantages<br />
of this kind of plastic with respect to traditional<br />
plastics. Besides, in Italy there are no channels for the<br />
proper composting and disposal of bioplastics and that<br />
undermines any effort in this direction from the word go.<br />
It is no coincidence that the British, who are famous for<br />
being packaging experts, have opted for the recycling<br />
of fossil-fuel plastics rather than for bioplastics, whose<br />
claimed advantages have not been verified in practice».<br />
Thermosealed punnets<br />
Innovation is also characteristic of ILIP, a long established<br />
Bologna-based company specializing in packaging<br />
for food products. It has revamped its range for<br />
the packaging of delicate products, such as soft fruit<br />
and tomatoes, with its new line of thermosealed TS<br />
punnets in r-PET. This brand-new line, which has only<br />
recently been made public, ensures good product visibility<br />
thanks to the concentration of the ribs in the<br />
corners, as well as good ventilation, even in the presence<br />
of absorbent materials or when the punnets are<br />
stacked, thanks to the presence of lateral and vertical<br />
holes above the base.<br />
«The new range of thermosealed packaging – explains<br />
the company – offers other advantages too. Internally<br />
the corners have been rounded to prevent damage to<br />
the product. Moreover, thanks to their design, the containers<br />
in the TS range combine perfect machinability<br />
and strength with the lowest possible weight».<br />
Recycled PET<br />
«In order to meet the increasing demand for environmentally<br />
friendly products, all products in the TS line<br />
are produced utilizing at least 80% recycled PET –<br />
says Roberto Zanichelli, ILIP marketing manager – and<br />
this enables energy savings of 67% and a 56% reduction<br />
in greenhouse gas emissions compared to the<br />
same product made in virgin PET. The choice of thermosealing<br />
also helps reduce the environmental impact<br />
of the packaging, eliminating the need for a lid».<br />
TS punnets are designed for standard European and<br />
UK crates and make for perfect stacking at the point<br />
of sale. With their differing sizes and heights, the four<br />
products in the TS range can contain from 125 grams<br />
to a kilo of product.<br />
«With the latest innovations in the TS range for small<br />
fruits and tomatoes – concludes Roberto Zanichelli –<br />
ILIP, a market leader in thermoformed plastic packaging<br />
materials for fruits and vegetables, has confirmed<br />
its commitment to an efficient and effective product<br />
that can create added value and protect the packaged<br />
product in complete safety and convenience,<br />

Le cestelle termosaldabili<br />
L’innovazione contraddistingue anche <strong>Il</strong>ip, storica azienda<br />
bolognese specializzata nel packaging per prodotti<br />
agroalimentari. Con la linea di cestelle termosaldabili TS<br />
in r-Pet, <strong>Il</strong>ip ha infatti rinnovato la propria gamma per il<br />
confezionamento di prodotti delicati, come frutti di<br />
bosco e pomodorini. L’inedita linea, che recentemente<br />
ha fatto le sue primissime uscite ufficiali, garantisce<br />
un’elevata visibilità del prodotto grazie alle nervature<br />
concentrate negli angoli della cestella e un´ottima ventilazione,<br />
anche in presenza di assorbenti o cestelle impilate,<br />
grazie alla presenza di forature laterali e verticali rialzate<br />
dalla base.<br />
«<strong>Il</strong> nuovo assortimento per il confezionamento in termosaldatura<br />
– spiegano dall’azienda bolognese - presenta<br />
altri vantaggi. Gli angoli delle nervature interne sono<br />
smussati, per prevenire eventuali danneggiamenti del<br />
prodotto. Inoltre, grazie alla progettazione specifica per<br />
il confezionamento in termosaldatura, i contenitori della<br />
gamma TS presentano una perfetta macchinabilità e<br />
un’elevata resistenza, pur contenendo al massimo il<br />
peso della cestella».<br />
Pet riciclato<br />
«Per rispondere alla sempre maggior richiesta di prodotti<br />
eco-compatibili, tutte le referenze della linea TS sono<br />
prodotte con almeno l’80% di Pet riciclato – afferma<br />
Roberto Zanichelli, responsabile marketing di <strong>Il</strong>ip – e<br />
questo consente un risparmio energetico del 67% e una<br />
riduzione del 56% nelle emissioni di gas serra rispetto<br />
allo stesso prodotto realizzato in Pet vergine. Anche la<br />
scelta della termosaldatura contribuisce a ridurre l’impatto<br />
ambientale del packaging, eliminando la necessità<br />
del coperchio».<br />
Le confezioni TS sono progettate per cassette standard<br />
Europee e Uk e rendono possibile una perfetta impilabilità<br />

The gradual growth of the organic farming sector has<br />
gone hand in hand with demands from distributors of<br />
organic foods for packaging that’s coherent with the<br />
content it contains. If we realise that only 30-40% of<br />
“traditional” packaging today can be recycled, the<br />
complete, and altogether natural, closing of the circle<br />
of the food supply chain has been achieved with compostable<br />
packaging whose raw materials return to the<br />
dust from which they came.<br />
One of the leading firms in the field is the Italy-based<br />
Novamont, which twenty years ago introduced the<br />
market to Mater-Bi, a bio-plastic mostly derived from<br />
corn starch that was initially used to make bags for<br />
recycling waste and is currently being employed in a<br />

<strong>Il</strong> progressivo sviluppo dell’agricoltura biologica è<br />
andato di pari passo con la richiesta, da parte dei<br />
distributori dei prodotti bio, di un packaging che fosse<br />
coerente con il contenuto. Considerando che solo il<br />
30-40% dei packaging “tradizionali” possono essere<br />
riciclati, la completa, e del tutto naturale, chiusura del<br />
cerchio della catena alimentare è stata raggiunta con<br />
gli imballaggi compostabili, attraverso i quali la materia<br />
prima, con cui sono stati realizzati, torna alla terra, là<br />
da dove è venuta.<br />
Tra i fautori di questa svolta l’italiana Novamont che,<br />
vent’anni fa, ha lanciato sul mercato il Mater-Bi, una bioplastica<br />
derivata principalmente dall’amido di mais; inizialmente<br />
usato per i sacchi della raccolta differenziata e<br />
oggi applicato nei suoi diversi formati. Nel settore ortofrutticolo<br />
e della IV gamma viene usato sotto forma di

industry and the fresh-cut trade as a clear film wrap<br />
for packaging fruit and vegetables, as extruded mesh<br />
to hold, for example, garlic, potatoes, carrots and<br />
apples, and as woven mesh for citrus fruit.<br />
«Biodegradable packaging was originally designed to<br />
meet technical demands like handling resistance to<br />
the traction of packaging lines and elasticity – noted<br />
Stefano Facco, Novamont’s new business developer<br />
manager. – In time, its scope was expanded to the<br />
material’s functional performance and today R&D is<br />
focusing on how bio-packaging interacts with what it<br />
contains in an effort to elucidate potential advantages<br />
it may deliver as to upgrading storability in terms of<br />
factors affecting longer shelf-life like protection<br />
against light, and so forth».<br />
The use of commodities in the manufacture of this kind<br />
of packaging, however, raises questions about the<br />
compatibility of this source of raw materials with its<br />
main role as wrap for human food and animal feed.<br />
«The acreage being used to grow corn for delivery to<br />
Novamont – said Facco – is idle or land no longer used<br />
as arable so it’s not being taken away from foodstuffs.<br />
Most of this acreage is situated in north-east Italy,<br />
where the growing districts best suited to maize are<br />
located. In effect, Novamont uses a mere 0.1% of all<br />
the corn starch produced in the country, with most of it<br />
earmarked for the pharmaceutical and feed industries».<br />
The use of compostable plastic films is today common<br />
practice throughout all the big supermarket<br />
chains, going even beyond that for organics alone.<br />
«Apart from recycling by consumers themselves, –<br />
concluded Novamont’s Facco – the use of biodegradable<br />
polymers also makes it possible to cut landfill<br />
costs throughout the entire supply chain. That it lets<br />
you compost container and content together can be a<br />
big advantage in handling commodities, especially at<br />
those links in the supply chain like those processing<br />
fresh-cut salads and supermarkets that need to eliminate<br />
surplus food at the expiry of sell-by date».<br />

pone però interrogativi sulla compatibilità con la principale<br />
destinazione verso l’alimentazione umana e poi animale<br />
di queste materie prime. «Le aree su cui viene coltivato<br />
il mais conferito a Novamont – ribatte Facco –<br />
sono terreni inutilizzati, dismessi, non sottratti perciò al<br />
food. In Italia sono collocate per lo più nel Nord Est della<br />
Penisola, zona vocata nella produzione di mais.<br />
Novamont assorbe solo lo 0,1% dell’amido di mais prodotto<br />
in Italia. La maggior parte va all’industria farmaceutica<br />
e dei mangimi».<br />
L’utilizzo dei film compostabili è diffuso ormai presso<br />
tutti i player della grande distribuzione, anche al di fuori<br />
del settore biologico: «Oltre al riciclo da parte del consumatore<br />
finale – conclude il manager Novamont – l’impiego<br />
dei polimeri biodegradabili può anche consentire<br />
risparmi sui costi di smaltimento lungo la filiera produttiva.<br />
La possibilità di smaltire insieme packaging e contenuto<br />
può essere vantaggiosa sia per le industrie, in particolare<br />
nelle catene di produzione che hanno un’elevata<br />
percentuale di scarti, come quella delle insalate di IV<br />
gamma, sia per i supermercati per i prodotti da eliminare<br />
perché prossimi alla scadenza».

The F&V industry is looking at the 2012 season with<br />
some trepidation and a lot of question marks.<br />
After a see-sawing 2011, this is the cautionary note a<br />
number of key players in the Piedmont and Lombardy<br />
sector are striking as the new year gets under way.<br />
“We had a bumper kiwi crop in Piedmont – noted<br />

dopo l’andamento altalenante del 2011, guardano al<br />
nuovo anno con estrema cautela.
Domenico Sacchetto, President of the region’s Aop<br />
producer organisation. – Quality was also good, and<br />
the market is responding pretty well, too, although the<br />
mid-to-small size range makes it a harder than usual<br />
sell. We hope things will start looking up even if the<br />
competition is gearing up this year because Greece<br />
had a bigger than usual crop and the overall business<br />
climate is not much help. As I said before, we’ve got<br />
a bumper crop this year with some 110 thousand tons<br />
and export 80-85% of it to the Far East, including<br />
Taiwan and Singapore, to New Zealand, the US and<br />
Canada. The good new is that up to mid-January<br />
we’ve already sold more than a third. Apple too is<br />
posting a good performance. For, although we have a<br />
smaller crop than last year, the quality of Gala, our<br />
leader, is excellent and demand is way up. So there’s<br />
reason to be optimistic here”.<br />
See-sawing trends<br />
Last, but not least, is the good news for sweet chestnut,<br />
another prime cash crop in Piedmont. Here, too,<br />
Sacchetto said that years of bio-pest management<br />
efforts to curb cinipide galligeno, the chestnut gall<br />
wasp, a perennial plague of this fruit, are finally bringing<br />
it under reasonable control.<br />
“Let me go back to kiwi for a moment –<br />
added Carlo Manzo, CEO of Ortofruit<br />
Italia. – The only problem here is<br />
not with the crop as such, but<br />
with consumption. We’ve been<br />
seeing a decline in retail sales<br />
throughout Europe attributable<br />
in part to a loss of<br />
household purchasing<br />
power. A look at the<br />
apple trend shows a<br />
straighter line. We’re<br />
trying to boost its<br />
trade profile by<br />
exporting to Europe<br />
and North and<br />
South America while<br />
keeping an eye on<br />
potential market<br />
openings in the Far<br />
East”.<br />
If some of the major fruit<br />
crops of Ortofruit Italia have<br />
an overall an up-and-down trend,<br />
we see much the same profile for vegetables,<br />
which account for 20% of the company’s<br />
receipts.<br />
“While it’s still too early for any reliable forecasts<br />
for 2012 – noted Manzo – a look back at the 2011 season<br />
shows that a lot depended on time of year. For<br />
instance, sales of courgette and cucumber in June and<br />

110mila tonnellate e ad oggi (metà gennaio, n.d.r.) ne<br />
abbiamo già venduti oltre 1/3. Sul fronte delle mele,<br />
invece, abbiamo ottenuto soddisfazioni: un po’ meno<br />
produzione dello scorso anno, ma la qualità della varietà<br />
Gala (quella che va per la maggiore) è ottima e c’è<br />
molta richiesta. Sono quindi assai ottimista per questo<br />
mercato”.<br />
Andamenti altalenanti<br />
Per ultimo, ma non meno importante, buone notizie<br />
arrivano anche da un’altra eccellenza<br />
del Piemonte: la castagna.<br />

July collapsed in the wake of the Escherichia coli scare,<br />
whereas those of tomato and cauliflower held up well”.<br />
Taking a different tack<br />
We then shifted our glance to the produce sector in<br />
Lombardy and asked Tiziano Caprioli, the head of<br />
Opo Bellaguarda, a producer organisation with over a<br />
hundred members growing mainly melon, watermelon<br />
and squash but also pear, bell pepper and aubergine,<br />
for his view. He didn’t mince his words.<br />
“Take pear, for example – he said. – The market is<br />
weak and there’s no end in sight to the doldrums. We<br />
just about broke even with melon, but watermelon<br />
was a disaster because of the bad weather during last<br />
summer’s growing season. We just don’t know what<br />
to expect this year. Indeed, although you often hear<br />
that things will turn around, the market only wants to<br />
know the price. Right now, we just wan to know if<br />
there’s any hope for growers who focus on quality and<br />
invest in advanced management practices and equipment.<br />
That’s really why we went to Fruit Logistica<br />
2012 in the first place”.<br />
There’s also news about what’s happening with producer<br />
organisations. The new year started off well for<br />
Uno Lombardia, an umbrella group that increased<br />
membership of associated POs from nine to twelve,<br />
strengthening its position as one of the leaders in the<br />
country’s produce industry.<br />

so Sacchetto, infatti, ha detto che dopo anni di lotta biologica,<br />
il cinipide galligeno, vera e propria piaga degli<br />
ultimi anni per questo frutto, sta sensibilmente regredendo.<br />
“Per il kiwi – ha aggiunto Carlo Manzo, direttore di<br />
Ortofruit Italia – non ci sono problemi di prodotto, ma di<br />
consumi. Si è verificata una flessione a livello europeo,<br />
che si può spiegare in parte con una minore disponibilità<br />
economica da parte delle famiglie. L’andamento delle<br />
mele mostra invece una maggiore linearità. Per affrontare<br />
questa situazione cerchiamo di costruire un programma<br />
commerciale andando sia in Europa sia in America<br />
del Nord e del Sud, senza escludere peraltro l’estremo<br />
Oriente”.<br />
Se altalenante è dunque il bilancio per alcune delle principali<br />
varietà di frutta prodotte da Ortofruit Italia, così lo<br />
è pure sul fronte degli orticoli, che rappresentano il 20%<br />
della produzione aziendale.<br />
“Premesso che non è ancora possibile fare alcuna<br />
previsione per il 2012 – ha detto Manzo – per il 2011<br />
l’andamento del mercato è dipeso molto dal periodo.<br />
Ad esempio, dopo il caso Escherichia coli, a giugno e<br />
luglio non c’è stata vendita di zucchine e cetrioli.<br />
Tuttavia, varietà come pomodori e cavolfiori si sono<br />
difese”.<br />
In cerca di strategie<br />
Sul fronte lombardo, il direttore di Opo Bellaguarda<br />
(organizzazione di produttori con oltre 100 soci, specializzata<br />
soprattutto in meloni, angurie e<br />
zucche, ma anche pere, peperoni e<br />
melanzane), Tiziano Caprioli, non ha<br />
usato mezzi termini.<br />
“Per quanto riguarda le pere – ha detto –<br />
il mercato langue e continua a languire.<br />
Con i meloni, siamo riusciti a recuperare i<br />
costi, con le angurie è stato un disastro, a<br />
causa dell’andamento climatico non favorevole<br />
dell’estate scorsa. Per il futuro non<br />
so cosa aspettarmi: anche se spesso<br />
viene dichiarato l’opposto, il mercato<br />
guarda soltanto al prezzo. In questo<br />
momento, ci interessa capire se c’è speranza<br />
per chi produce qualità e investe in<br />
tecniche e strutture avanzate. La nostra<br />
partecipazione a Fruit Logistica 2012 è<br />
stata motivata anche da questo”.<br />
Infine, sempre sul fronte delle organizzazioni<br />
di produttori, il 2012 è iniziato all’insegna<br />
di altre aggregazioni. L’Aop Uno<br />
Lombardia, associazione di organizzazioni<br />
di produttori, ha incrementato il nume-<br />
ro delle Op associate, passando da nove<br />
a dodici e affermandosi quindi sempre più<br />
come una delle realtà nazionali più importanti<br />
nel settore ortofrutticolo.

That is hardly surprisingly, perhaps, as that single<br />
state in the north-western corner of the US grows<br />

however, and the organisation’s chief executive Kris<br />
Marceca says there are a whole host of reasons this<br />
generation of the European fruit trade should take<br />
another look at the Usaec offer.<br />
The Usaec represents 11 apple producing states:<br />
New York, Michigan, California, Pennsylvania, Vir -<br />
ginia, and the six states that make up New England<br />
– Massachusetts, Vermont, Connecticut, Maine,<br />
New Hampshire and Rhode Island. Over the last five<br />
years, these states have produced a combined average<br />
apple crop of nearly 1.5 million metric tonnes a<br />
year.<br />
In that five-year period, the value of exports have<br />
increased, says Marceca. «There is an important processing<br />
industry for apples in the US and if you take<br />
both the fresh crop and the crop grown for processing<br />
into account, around 12 per cent of the overall US<br />
crop is exported. However, if you look only at the crop<br />
grown specifically for the fresh market, then we<br />
export an average of around 30 per cent of our apple<br />
production each year» she says.<br />
«I think that figure would surprise most people in<br />
Europe, as there is a perception that the vast majority<br />
of US apples are sold domestically. It certainly surprises<br />
people in the trade in the US when it is pointed<br />
out to them».<br />
New cultivars<br />
The export focus has sharpened in recent years, a<br />
trend that has filtered its way down to the orchards,<br />
where there has been a significant shift in the varieties<br />
being planted. The dominant positions held for many<br />
years by the Red and Golden Delicious are being<br />
challenged by a number of newer varieties, to the<br />
extent that a number of the Usaec member states do<br />
not count either of them as their number one any<br />
longer.<br />
«It’s a fact that a number of Usaec members produce<br />
varieties that are not produced in Washington in any<br />
great volume. – Empire from New York has been the<br />
major example in years past, but there are sizeable<br />
orchards of different varieties being planted across<br />
the country to account for changing demand patterns<br />
around the world» Marceca says.<br />
A natural trade partner<br />
New York is the largest producer state in the Usaec,<br />
with a five-year average of 588,202 t of apple production,<br />
which translates into around 30 million<br />
bushel boxes annually. More than 700 commercial<br />
companies grow on 52,000 acres of orchard and<br />
roughly 55 per cent of their crop is earmarked for the<br />
fresh market. «New York is characterised by the<br />

and shippers» – says Marceca. – «The younger generation<br />
continues to come through into positions of<br />
leadership in the industry, which in turn assures its<br />
longevity».<br />
The state’s location near the key ports of the US<br />
East coast makes it an obvious sender to Europe<br />
and, particularly with Empire, shippers have a very<br />
strong relationship with the UK market, as well as<br />
some business in Ireland and Scandinavia.<br />
McIntosh has also held a significant place in the<br />
apple deal in the UK and Ireland for more than 100<br />
years. It may be seen as a slightly old-fashioned<br />
apple now, but it has the advantage of eating well,<br />
being well known and retaining a good level of popularity<br />
with children.<br />
Some 40% of the apple crop exported every year by the US is<br />

«Penso che molti europei troveranno questo dato singolare<br />
perché è opinione generale che la stragrande maggioranza<br />
delle mele Usa sia destinata al mercato interno.<br />
Sicuramente, chi si stupisce all’emergere di tali cifre<br />
sono gli attori del commercio statunitense».<br />
Nuove cultivar<br />
Negli ultimi anni le esportazioni sono più mirate, un trend<br />
che ha finito col coinvolgere anche i frutteti, dove si assiste<br />
a un importante cambiamento nelle varietà coltivate.<br />
La posizione dominante, occupata per anni da Red e<br />
Golden Delicious, è oggi insidiata da un discreto numero<br />
di nuove cultivar, tanto che ormai in alcuni stati<br />
dell’Usaec nessuna delle due varietà in questione figura<br />
sul gradino più alto del podio.<br />
‹‹Non v’è alcun dubbio che un certo numero di membri<br />
dell’Usaec produce ora varietà che non sono più coltivate<br />
in grande quantità nello stato di Washington, come<br />
ha dimostrato recentemente la mela Empire di New<br />
York. Ma non è tutto perché, per rispondere ai cambiamenti<br />
nella domanda a livello mondiale, ovunque nel<br />
Paese sorgono frutteti di notevoli dimensioni in cui si<br />
presta grande attenzione a diversificare le cultivar›› riferisce<br />
Marceca.<br />
Un interlocutore naturale<br />
All’interno dell’Usaec, quello di New York è il maggior<br />
stato produttore di mele con un raccolto quinquennale<br />
medio di 588.202 tonnellate, ossia circa 30 milioni di<br />
casse ogni anno (1 bushel per cassa). Si contano oltre<br />
700 società commerciali su 52mila acri destinati a frutteto<br />
che riservano approssimativamente il 55% della<br />
propria produzione al mercato fresco.<br />
«Lo stato di New York - sostiene Marceca - è caratterizzato<br />
dalla natura multigenerazionale delle ditte di frutticoltura<br />
e trasporto a conduzione familiare. Le nuove<br />
generazioni continuano a conquistare ruoli di leadership<br />
nell’industria, assicurandole così longevità».<br />
«Vista la posizione strategica rispetto ai maggiori porti<br />
della East Coast, lo stato di New York è l’interlocutore<br />
naturale per l’Europa. Per quanto riguarda anzitutto la<br />
varietà Empire, il mercato di riferimento è il Regno Unito,<br />
come pure alcune aziende in Irlanda e Scandinavia. E<br />
sempre nei Paesi anglofoni del vecchio continente sono<br />
oltre cent’anni che anche la mela McIntosh ha un posto<br />
di tutto rispetto nel settore. Ora può anche sembrare<br />
una varietà antiquata, ma gusto e notorietà depongono<br />
a suo favore, per non parlare del fatto che è particolarmente<br />
amata dai bambini. Nello stato di New York la<br />
produzione dell’Empire è in crescita, ma vi si coltivano<br />
anche altre venti varietà. Negli ultimi anni le più diffuse<br />
sono state la Gala, la Honeycrisp e la Jonagold.

plantings of Gala, Honeycrisp and Jonagold in<br />
the last few years. There has also been a huge<br />
amount of investment in infrastructure, with a number<br />
of new packing and cold-storage facilities constructed<br />
in the last five years».<br />
Michigan ranks second<br />
Michigan comes next on the list in terms of volume,<br />
with a five-year average of around 20 m bushels and<br />
45 per cent for the fresh market. Surrounded by the<br />
largest fresh water reserve in the world, the Great<br />
Lakes, the state’s 900 growers are within 500 miles of<br />
more than half of the US population. Like New York’s,<br />
Michigan’s shippers are predominantly multi-generational<br />
family firms and between them have more than<br />
20 varieties in their mix, with recent new planting<br />
activity based around Gala, Jonagold and Fuji.<br />
Marceca says that «Michigan’s crop this year is well<br />
above the five-year average after the best growing<br />
conditions for some years. Colour and brix levels have<br />
been excellent and, as a consequence, more shippers<br />
are looking at the export market later in the season.<br />
Michigan had traditionally sold a lot of fruit in Europe,<br />
but this has dropped off in the last decade. Shippers<br />
have recognised this, however, and several are<br />

Michigan al secondo posto<br />
In termini di volume il Michigan è al secondo posto con<br />
una media annua di 20 milioni di bushel e il 45% del raccolto<br />
destinato al mercato fresco. Oltre la metà della<br />
popolazione statunitense risiede a meno di 500 miglia<br />
dallo stato con la più grande riserva d’acqua del mondo,<br />
i Grandi Laghi, in cui operano 900 frutticoltori. Come<br />
nello stato di New York, anche in Michigan si tratta prevalentemente<br />
di aziende multigenerazionali a conduzione<br />
familiare che offrono oltre venti varietà e che di recente<br />
si sono lanciate sulla Gala, la Jonagold e la Fuji.<br />
«Quest’anno – aggiunge Marceca – in Michigan il raccolto<br />
è stato ben al di sopra della media quinquennale<br />
dopo le migliori condizioni di crescita protrattesi per<br />
alcuni anni. Visti gli eccellenti risultati raggiunti dal punto<br />
di vista del colore e del livello Brix, aumenta l’attenzione<br />
verso i mercati d’esportazione anche a stagione avanzata.<br />
Nell’ultimo decennio le tradizionali esportazioni di<br />
frutta dal Michigan alle piazze europee sono calate, ma<br />
gli esportatori se ne sono accorti e hanno reagito investendo<br />
tempo e risorse per migliorare strutture e offerta,<br />
senza perdere di vista le esigenze dei consumatori esteri<br />
e del mercato interno».<br />

Good California weather<br />
Europe has never been the top target for California’s<br />
shippers, who tend to pick and ship to take advantage<br />
of their early window. «In years when their crop<br />
is on time and especially in years like this when they<br />
have had an earlier crop than Washington, there is<br />
plenty of potential for Californian product in Europe»<br />
– Marceca says. – «California has a 3-million box crop<br />
of fresh apples, acreages are increasing and higher<br />
density plantings in the north of the state will raise<br />
that further in the next few years. The size and colour<br />
of their Cripps Pink and Fuji could make them very<br />
attractive to European consumers, but volume-wise<br />
we’re looking at niche opportunities rather than major<br />
programmes».<br />
As well as the traditional basket of apples,<br />
Pennsylvania and Virginia growers are also planting<br />
more Gala and Fuji, and because of their geographic<br />
position, they have advantages growing some of the<br />
later varieties such as Cripps Pink with very consistent<br />
quality. «As returns for processing apples have<br />
dropped, growers in both Pennsylvania and Virginia<br />
have begun to concentrate more on fresh potential<br />
and they too have invested in facilities while upgrading<br />
their varietal mix».<br />
Closer relations with the Old World<br />
«The New England states, in the far North Eastern<br />
section of the US, specialise in varieties that grow<br />
particularly well in the region. McIntosh, Cortland,<br />
Empire and Red Delicious are the mainstay types,<br />
but, although there is a perception that McIntosh is<br />
the only major variety grown in New England, the<br />
region is evolving through the replanting of existing<br />
strains and new plantings of Gala and Honeycrisp as<br />
the next generation comes into the industry and looks<br />
to shape its future», Marceca says.<br />
«Collectively these states can meet a lot of peoples’<br />
needs, and importers who would like to spread their<br />
offer of US apples over an extended period can work<br />
with several growers through one or more dedicated<br />
shippers. We’re extremely experienced exporters and<br />
a large part of that experience was gained in Europe.<br />
Although we have worked together for many years,<br />
we recognise it’s important to keep the European<br />
market updated on our progress. We’d very much like<br />
to build on our relationships and also find new partners.<br />
There is no desire to dip in and dip out of the<br />
marketplace. We know we have fantastic, tasty<br />
apples and we want to share them with the European<br />
consumer».<br />

Al contrario del Michigan, la California, che raccoglie<br />
ed esporta in brevissimo tempo per sfruttare il naturale<br />
vantaggio delle favorevoli condizioni climatiche, non<br />
ha mai considerato l’Europa come la sua piazza principale.<br />
«Quando il raccolto arriva puntuale - sostiene<br />
Marceca - e soprattutto in anni come questo in cui<br />
sulla West Coast la frutta è maturata prima che nello<br />
stato di Washington, il potenziale californiano in fatto<br />
di esportazioni verso il vecchio continente è notevole.<br />
La California produce già tre milioni di casse di mele<br />
fresche e sono in aumento gli acri adibiti a questa coltivazione;<br />
si tratta però di numeri che continueranno a<br />
crescere grazie alla semina ad alta densità attuata nel<br />
nord del Paese. <strong>Il</strong> colore e le dimensioni delle Cripps<br />
Pink e delle Fuji californiane sono un elemento di<br />
attrattiva per i consumatori europei, ma per una questione<br />
di volumi ci interessano maggiormente opportunità<br />
di nicchia piuttosto che programmi di ampio<br />
respiro».<br />
In Pennsylvania e in Virginia, oltre alle mele tradizionali,<br />
ci si concentra sulle cultivar Gala e Fuji. Data la posizione<br />
geografica è poi possibile trarre profitto dalle varietà<br />
tardive come la Cripps Pink, che qui è un frutto di ottima<br />
qualità. «A causa del calo dei guadagni nella lavorazione<br />
delle mele, gli agricoltori di entrambi gli stati hanno<br />
cominciato a dedicare più attenzione al prodotto per il<br />
consumo fresco, investendo, anche in questo caso,<br />
nelle strutture e aggiornando le varietà offerte».<br />
Più relazioni col vecchio continente<br />
«Gli stati del New England, nell’appendice nord-orientale<br />
degli Stati Uniti, sono invece specializzati in varietà<br />
particolarmente adatte a tali regioni: McIntosh, Cortland,<br />
Empire e Red Delicious sono le principali. A differenza di<br />
quanto si crede comunemente, la McIntosh non è, però,<br />
l’unica cultivar di punta prodotta in New England, che<br />
sta invece ripiantando varietà già esistenti e sperimentando<br />
nuove cultivar come la Gala e la Honeycrip, una<br />
sorta di vessillo della nuova generazione che si sta<br />
affacciando all’industria e che cerca un modo per disegnare<br />
il suo futuro» asserisce Marceca.<br />
«Insieme questi stati possono sopperire alle esigenze di<br />
molti. Inoltre, gli importatori che mirano ad allargare la<br />
propria offerta di mele statunitensi a lungo termine possono<br />
certamente lavorare con numerosi coltivatori attraverso<br />
uno o più canali specializzati. Siamo esportatori di<br />
notevole esperienza, un’esperienza accumulata in larga<br />
misura in Europa. Nonostante la collaborazione consolidata<br />
nel corso di anni, riconosciamo che è importante<br />
mantenere il mercato europeo aggiornato sui nostri progressi.<br />
Desideriamo rafforzare le relazioni già esistenti e<br />
trovare nuovi partner. Non ci interessa entrare e uscire dai<br />
mercati. Sappiamo di avere mele eccezionali e gustose e<br />
intendiamo condividerle con i consumatori europei».<br />

The 26 January last saw the presentation, in<br />
Bologna, of the “Ortofrutta d’Italia” (the Italian fruit<br />
and vegetables) project. We are talking here about a<br />
major initiative in support of fruit and vegetables<br />

ABologna, lo scorso 26 gennaio, è stato presentato<br />
il progetto “Ortofrutta d’Italia”. Si tratta di<br />
una grande iniziativa promozionale a supporto della<br />
frutta e degli ortaggi ‘Made in Italy’ indirizzata ai con-

The real novelty about this initiative is that for the first<br />
time sixteen big Italian F&V companies have joined<br />
forces in order to develop a promotional project in a<br />
way that is organized and systematic. The management<br />
of the initiative has been entrusted to the CSO<br />
(Centro Servizi Ortofutticoli - Centre for F&V services)<br />
of Ferrara, which is thus destined to play an increasingly<br />
pivotal role in the national fruit and vegetable<br />
system<br />
As Mario Tamanti, managing director of the Cso, has<br />
said, “the great strength of this initiative lies in the way<br />
in which it has united the efforts of numerous Italian<br />
companies which between them represent 12 thousand<br />
agricultural concerns. Now more than ever it is<br />
important that fruit and vegetables reposition themselves<br />
in the minds of consumers, so that they are no<br />
longer considered superfluous or replaceable, but are<br />
appreciated for their natural qualities and the pleasure<br />
they can afford”.<br />
Declining consumption is indeed a phenomenon that<br />
has for some time now reached alarming proportions.<br />
At the news conference, Cso chairman Paolo Bruni<br />
po inted out that “since 2000, consumption of fruit has<br />
fallen by 500 thousand tons and that of vegetables by<br />
al most 700 thousand tons. And if we also consider<br />
that F&V now represents only 3% of total household<br />
expenditure, and that the Italian family spends on<br />
average only 1.5 euros per day on F&V, the situation<br />
appears even more worrying”.<br />
The promotional activity envisaged by the project will<br />
take the form of advertisements in the major newspapers<br />
and television programmes which will focus on<br />
the work of the producers. The print campaign, which<br />
will be carried out in two periods corresponding to the<br />
main production seasons, aims at achieving 40 million<br />
consumer contacts.<br />

<strong>Il</strong> calo dei consumi è, in effetti, un fenomeno da tempo<br />
più che allarmante.<br />
«In Italia dal 2000 ad oggi – ha sottolineato durante la<br />
conferenza stampa il presidente del Cso Paolo Bruni<br />
– si sono consumate 500mila tonnellate in meno di<br />
frutta e quasi 700mila in meno di ortaggi. Se poi pensiamo<br />
che l’acquisto di ortofrutta rappresenta oggi<br />
appena il 3% della spesa totale e che ogni famiglia<br />
italiana spende in media, per frutta e verdura, solo<br />
1,5 euro al giorno il dato si fa ancora più preoccu -<br />
pante».<br />
L’attività promozionale consisterà in comunicazioni pubblicitarie<br />
su grandi quotidiani e trasmissioni televisive<br />
improntate sull’attività dei produttori. Per la campagna<br />
di stampa, che sarà effettuata in due periodi corrispondenti<br />
alle principali stagionalità, si prevedono non meno<br />

the consequences of the international crisis, especially<br />
in 2009 and 2011, with 2010 being an intervening<br />
year of relative recovery. But if we analyze the horticultural<br />
sector in detail, we discover something interesting:<br />
prices, that is to say, the value of production,<br />
have borne the brunt of the crisis, while it has had little<br />
or no impact on volumes, which indeed in many<br />
cases have actually increased.<br />
Apart from specific economic and financial choices,<br />
this is in large part a result of Dutch attitudes towards<br />
the market, which have always differed from those of,<br />
for example, Mediterranean countries.<br />
Strategy and credibility<br />
The F&V sector has always been prone to ups and<br />
downs, but the customer is king and should never be<br />
abandoned, even in the midst of the worst economic<br />
crisis of the century, nor should you ever give up on<br />
the quest to maximize quality.<br />
This winter’s terrible citrus crisis, for example, with<br />
prices well below production costs, has induced<br />
many farmers, from Spain to Egypt, to leave the<br />
oranges on the trees, even if it means compromising<br />
future production. It could never happen in Holland.<br />
Take cucumbers, for example: even if the market<br />
price drops to two cents per kg, as happened in<br />
Holland in the summer of 2011, it is still harvested<br />
and sold. In the short term, of course, that means<br />
financial loses, but in the long-term it translates into<br />
greater credibility with customers, especially with<br />
supermarkets.<br />
2011 is exemplary in this regard. Export volumes<br />
remained more or less equal to 2010, but dropped<br />
significantly in value, a downturn that was largely due<br />
to the 2-3 month block on exports of greenhouse vegetables<br />
following the “killer bacteria” (Escherichia coli)<br />
Holland’s high-tech greenhouses are getting ever larger in order<br />
to secure economies of scale. In just two years the average size<br />
has increased from 3.7 to 4.9 ha/farm.<br />

Oltre che da precise scelte economiche e finanziarie, ciò<br />
dipende in gran parte anche dal diverso atteggiamento<br />
che gli olandesi hanno sempre avuto verso il mercato,<br />
ad esempio rispetto ai Paesi mediterranei.<br />
Strategia e credibilità<br />
<strong>Il</strong> settore ortofrutticolo è fatto da sempre di alti e bassi,<br />
ma il cliente è il re e non va mai abbandonato, nemmeno<br />
nel pieno della crisi economica più nera dell’ultimo<br />
secolo, né si deve mai rinunciare alla ricerca della massima<br />
qualità.<br />
La terribile crisi degli agrumi di quest’inverno, ad esempio,<br />
con prezzi ben al di sotto dei costi di produzione, ha<br />
indotto molti coltivatori, dalla Spagna fino all’Egitto, a<br />
lasciare le arance sulle piante, anche a costo di comprometterne<br />
le produzioni future. In Olanda non potrebbe<br />
mai succedere. Prendiamo ad esempio il cetriolo: anche<br />
se il prezzo di mercato scende a due centesimi al kg,<br />
com’è successo nell’estate 2011 in Olanda, si continua<br />
comunque a raccoglierlo e a venderlo. Nel breve periodo<br />
significa, ovviamente, perdere un sacco di soldi, ma<br />
nel lungo termine si traduce in grande credibilità verso i<br />

between producers and distribution, in order to maximize<br />

The Port of Rotterdam has further plans for expansion<br />
in the pipeline for 2012, which is a sign that at the end<br />
of the day the Dutch remedy for overcoming the crisis<br />
boils down to not feeling sorry for yourself and investing<br />
in the future.<br />

In the Netherlands, finance for new<br />
investments is based primarily on the<br />
farmer’s professional expertise, to which<br />
much more weight is given than to<br />
assets. In times of crisis banks attempt<br />
to give the sector as much help as possible<br />
in the expectation of better times,<br />
so the only companies which go to the<br />
wall are those which are small and outdated<br />

alla fine la vera parola d’ordine di tutto il sistema ortofrutticolo<br />
olandese per uscire dalla crisi è una sola: vietato<br />

base del livello professionale dell’agricoltore,<br />
valutato assai di più del suo patrimo-<br />
nio (l’equity è circa il 27%). In caso di crisi<br />
si cerca di aiutare il settore più che si può,<br />
in attesa di tempi migliori, quindi vengono<br />
abbandonate solo le aziende più piccole,<br />
obsolete, non inserite in solidi circuiti<br />
commerciali. Le aziende più grosse e<br />
moderne (troppo grosse per fallire, si<br />
potrebbe anche dire), vengono salvate a<br />
tutti i costi dalle banche, che sennò<br />
vedrebbero crollare rapidamente anche il<br />
valore dei propri assets.<br />
Questa gestione lungimirante è possibile<br />
anche perché affidata dalle banche a veri<br />
e propri specialisti di settore, tra cui troviamo<br />
spesso anche degli ex-agricoltori leader<br />
che sanno bene come rendere redditizi<br />
gli investimenti in agricoltura.<br />

fresh-cut produce, whose popularity with Italian<br />
households owes much to effort the big supermarket<br />
chains are making to promote their private label trade.<br />
According to a 2011 Symphony IRI survey of big retail<br />
outlets, private label or in-house items now account for<br />
17.2% of their packaged food sales, for a €9 billion<br />
turnover, a figure that rises to 11 billion is we include the<br />
discount chains. It’s a trend that industry observers had<br />
widely anticipated given the gap still separating Italy<br />
from countries where big retail and, hence, private-label<br />
branding achieved early and widespread success.<br />
An uphill path<br />
In effect, Italy’s far from the numbers the UK posts,<br />
where the private-label sector claims some 43% of<br />
sales. The same hols true for Germany, where it has a<br />
32% share, and France, where it’s 28%. Yet we are<br />
better than the world average, which is just shy of 15%.<br />
«The private label trade – said Gianmaria Marzoli,<br />
Vice-president of Symphony Iri Group – posted higher<br />
numbers than all competitors in 2011, with a 7.1% rise<br />
in turnover, up €600 million on the year. It’s a performance<br />
that also means more shelf space, which was up<br />
3.2%. What’s remarkable, and gives us a yardstick to<br />
gauge the enormous growth potential still latent in the<br />
trade, is the different rate of private-label penetration<br />
throughout the national marketplace In areas like<br />
Emilia-Romagna and Tuscany, the notable efforts of<br />
some chains have pushed its share over 22%. By contrast,<br />
the Campania area brings up the rear with a<br />
10.8% share, although the rate is also below the<br />
national average in other regions like Veneto».<br />
On the other hand, the current trend towards recession<br />
and the stepped-up efforts by the country’s<br />
households to shop for the lowest prices are the main<br />
forces driving the private-label market. Another factor<br />
is the considerable effect generated under the combined<br />
policies of the more or less big chains, policies<br />
that focus on investing heavily in the private-label<br />
sector, broadening its stock and targeting it to segments<br />
by consumer use or by purchasing power.<br />
Demands of discerning consumers<br />
«If we look at the factors inducing consumers to<br />
choose private-label items – noted Guido Cristini, who<br />
holds the chair in marketing at Parma University and is<br />
the coordinator of market analysis at the brand-name<br />
oversight committee – we of course see that the priceto-quality<br />
ratio is the main one. Yet, we’re also beginning<br />
to see signs of the trade’s developing maturity in<br />
that other factors like eco-sustainability, awareness of<br />
the environment and all its related issues, product<br />
innovation, which until now had been the preserve of<br />

Secondo dati Symphony Iri riferiti al 2011, i prodotti a<br />
marchio del distributore hanno raggiunto quota 17,2%<br />
del mercato del largo consumo confezionato, per un<br />
controvalore di 9 miliardi di euro, che diventano 11 se si<br />
comprende anche il canale discount. Un trend, questo,<br />
che gli analisti avevano ampiamente previsto, visto il gap<br />
che divideva (e tuttora divide) l’Italia dai Paesi che hanno<br />
conosciuto una precoce affermazione della distribuzione<br />
moderna e una conseguente maggior diffusione delle<br />
private label.<br />
Un percorso in salita<br />
Siamo ben lontani, infatti, dalle percentuali britanniche,<br />
visto che in Uk le private label raggiungono un’incidenza<br />
del 43%. O dalla Germania, che si attesta a quota<br />
32% e dalla Francia che arriva al 28%. Ma siamo sopra<br />
alla media mondiale, che sfiora il 15%.<br />
«Le private label nel 2011 – dichiara Gianmaria Marzoli,<br />
vice presidente di Symphony Iri Group – sono andate<br />
meglio di tutti, con una crescita del fatturato del 7,1%,<br />
pari a +600 milioni di euro e un crescente spazio a scaffale,<br />
che ha mostrato un +3,2%. Ciò che colpisce, e che<br />
dà la misura di un grande potenziale di crescita tuttora<br />
inespresso, è la differente penetrazione dei prodotti a<br />
marchio del distributore sul territorio nazionale. In alcune<br />
aree, come l’Emilia-Romagna e la Toscana, anche<br />
grazie all’ottimo lavoro portato avanti da alcune catene,<br />
le private label superano il 22% di quota di mercato.<br />
Fanalino di coda è, invece, la Campania, che mostra<br />
una quota del 10,8%, ma anche altre in realtà, pensiamo<br />
al Veneto, l’incidenza delle pl è ben al di sotto della<br />
media nazionale».<br />
Tuttavia è la crisi economica in atto, e la conseguente<br />
ricerca della massima convenienza da parte delle<br />
famiglie italiane, a spingere sul pedale dell’acceleratore,<br />
assieme all’azione congiunta delle catene distributive<br />
più o meno grandi, che hanno deciso di investire<br />
con forza nei prodotti a marchio, allargando l’offerta e<br />
segmentandola per destinazione d’uso/capacità di<br />
spesa.<br />
Richieste di un consumatore evoluto<br />
«Se guardiamo ai fattori che spingono un consumatore<br />
a scegliere le private label – spiega Guido Cristini,<br />
ordinario di marketing all’Università di Parma e coordinatore<br />
scientifico dell’Osservatorio sulla marca commerciale<br />
– naturalmente il rapporto prezzo/qualità<br />
rimane in primo piano. Tuttavia, e questo è un altro<br />
segnale di maturazione di questo comparto, oggi si<br />
stanno facendo strada altri fattori come la sostenibilità,<br />

the big brand names, and the demand for locally<br />
farmed foodstuffs are gaining greater momentum<br />
now». No longer, then, is the private-label item simply<br />
a way to use its cheaper prices as its main sales pitch<br />
to win the custom, and part of the budgets, of the<br />
country’s households. Now that the big chains stock a<br />
greater, in-depth assortment of own-house labelled<br />
items, they are in a better position to meet the<br />
demands of discerning shoppers. So, if we breakdown<br />
the growth figures by quality level/price of the various<br />
lines of private-label items, we find that next to the<br />
9.8% rise in the first-price range, which is the cheapest<br />
category, is the even more spectacular 23.5% performance<br />
of the premium-price items of higher quality.<br />
A good 2011 showing, with a 9.1% rise in sales, was<br />
also posted by organics, always one of the mainstays of<br />
those chains that focus more on their own-label sector.<br />
«We’ve got to start thinking in terms of private-label<br />
consumers – concluded Cristini. – They are no longer<br />
a segment of cheap-price only. Indeed, our surveys<br />
indicate that the persons spending more are shoppers<br />
with at least a mid-to-high educational level and<br />
a similar socio-economic standing. These consumers<br />
represent, of course, the larger households of 4-5<br />
members. They are more inclined to have bigger<br />
shopping bills and most reside in the North, more<br />
specifically in the north-western regions, of the country.<br />
Implicit here is the fact that sales under private<br />
labels in the regions of the South are still lower than<br />
average».<br />

grado di dare risposte alle richieste del consumatore<br />
evoluto. Così, segmentando il dato di crescita in base<br />
al livello qualitativo/di prezzo delle varie linee di pl,<br />
emerge che a fianco del +9,8% messo a segno dalle<br />
gamme di primo prezzo, che beneficiano di un approccio<br />
improntato alla massima convenienza, sono le linee<br />
premium, quelle con un profilo qualitativo più elevato,<br />
a mostrare le performance più brillanti, addirittura<br />
+23,5% a valore.<br />
Bene anche il biologico, da sempre uno dei cavalli di<br />
battaglia delle catene più attente alle private label, che<br />
ha messo a segno nel 2011 un +9,1% a valore.<br />
«Dobbiamo pensare al consumatore di private label –<br />
conclude Cristini – non più come a una figura involuta:<br />
secondo le nostre ricerche, infatti, vediamo che<br />
quelli che spendono di più sono persone con una<br />
scolarità medio alta e un’analoga classe socio/economica.<br />
Naturalmente sono le famiglie più grandi, quelle<br />
da 4-5 componenti, a mostrare una propensione<br />
all’acquisto più elevata, e residenti al Nord, con una<br />
prevalenza delle regioni nord-occidentali: al Sud le private<br />
label mostrano ancora performance inferiori alla<br />
media».

del Paese e favorirne la riconoscibilità sui mercati intenazionali<br />
Anew brand for Chilean fruit has just seen the<br />
light of day. The result of cooperation between<br />
the public and private sectors, the new brand has<br />
been created for the purpose of promoting the<br />
Chilean F&V sector world wide. The project, which<br />
was first presented at the Fruit Logistica in Berlin,<br />
will be promoted at other major F&V sector shows<br />
in the course of 2012 in order to boost trade relations<br />
with markets in the United States, Europe and<br />
Asia.<br />
The new “Fruit from Chile” (in Spanish, Frutas de<br />
Chile) brand will form part of an ambitious marketing<br />
plan costing $1 million, through which the Chilean<br />
F&V industry intends to promote itself on international<br />
markets. The realization of the project was made possible<br />
thanks to a long collaboration between the<br />
Association of Chilean fruit exporters, the Fruit<br />
Exporters Association (ASOEX) and the government<br />
agency ProChile, which highlighted the benefits that<br />
the project would bring to the country origin, in particular<br />
the positive impact it would have on product<br />
quality and employment.<br />
Félix de Vicente, director of ProChile emphasizes the<br />
benefits: «The creation of a sector trade mark allows<br />
us to consolidate the position of those districts which,<br />
though long engaged in the export sector, still need to<br />
strengthen their presence in foreign markets with<br />
high-impact promotional campaigns in order to inform<br />
the world that Chile has quality products and services<br />
in areas other than those with which it is traditionally<br />
associated».<br />
Ronald Bown, Chairman of ASOEX, added: «Through<br />
this restyling, Chile wants to draw attention to those<br />

Variety<br />

the fruit and vegetables come from, and their quality<br />
and variety, which are the product of the country’s<br />
geographical diversity, its privileged climate and<br />
other unparalleled features of Chilean fruit production.<br />
The communication strategy for 2012 and 2013<br />
envisages a series of actions based on the promotion<br />
of different trade marks, in addition to developing<br />
the brand in different languages. The development<br />
of other sub-brands, using the same graphical<br />
structure, is a possibility that will not be neglected.<br />
According to official statistics from Asoex, Chile’s<br />
fresh fruit exports reached 2.64 million tons during the<br />

Citrus per gli agrumi, Cherries dedicato alle ciliegie,<br />

Hass Avocados e Kiwifruit. Non è trascurabile poi<br />
la possibilità che si creino altri sotto-marchi, utilizzando<br />
la stessa struttura grafica.<br />
Secondo le statistiche ufficiali dell’Asoex, le esportazioni<br />
di frutta fresca dal Cile hanno raggiunto i 2,64 milioni di<br />
tonnellate durante la stagione 2010-2011 (7,2% in più<br />
rispetto al 2009-2010), trasformando il paese nel primo<br />
esportatore di uva da tavola, prugne e mirtilli, secondo<br />
per la distribuzione di avocado, terzo per kiwi e<br />
lamponi, quarto per le pesche e quinto per<br />

Sprouts was founded by a family of entrepreneurs<br />
from San Diego, the heirs of Henry Boney, their grandfather,<br />
who, beginning with the classic fruit stall in<br />
1943, went on to create a series of small chains like<br />
Boney’s, Bradshaw’s, and Superama which he sold it<br />
in 1956, to then invent the Speedee Mart chain of C-<br />
Stores that was bought by 7-Eleven. In 1976, the<br />
Boney family launched Windmill Farms which specialized<br />
in health food, only to sell it in order to finance<br />
Henry’s Marketplace (1997), which in its turn was sold<br />
to Wild Oats. Finally, in 2002, Sprouts Farmers Market<br />
was born, a chain specializing in fresh produce, which<br />
today boasts more than 100 stores and annual sales<br />
of nearly $ 1.5 billion.<br />
Innovation in product assortment<br />
Sprouts is a hybrid. It remains open from 7 am to 11<br />
pm. It is based on a 3-4 thousand square meters format<br />
designed by the Los Angeles architectural firm<br />
Nadel in which there is space for about 40 thousand<br />
products, above all fresh produce, and 80-90 staff. It<br />
is inspired by principles derived from two models:<br />
Trader Joe’s (low prices, good communications and<br />
private labels) and Wholefoods (quality and organic<br />
products). In short, we are talking about a category<br />
killer with all the trappings of the fresh food store:<br />
simplicity, clarity in positioning, serial replicability. The<br />
winning factor, however, remains product depth and a<br />
F&V symbolize the Sprouts image.<br />

discount stores or wholesale clubs. The shelves are<br />
low and allow you to grasp at a glance everything that<br />
is being offered. Natural eco-friendly materials like<br />
untreated wood prevail. Indeed, in many cases, the<br />
display is a simple accumulation of packaged goods,<br />
but ordered to perfection. In other words, display<br />
structures are unobtrusive and allow products to<br />
speak for themselves. The layout consists of many<br />
points of attraction, so that the client is not obliged to<br />
make the kind of journey that is typical of other supermarkets.<br />
The perimeter walls house refrigerated units<br />
containing cheeses, juices and take away food, with<br />
large overhanging panels which either symbolically or<br />
verbally ( in the style of Trader Joe’s with its playful,<br />
naïve graphics) indicate places of production and<br />
recall the atmosphere of a farmers’ market.<br />
This is completed by a bakery counter that exploits<br />
the drawing power of a continual supply of products<br />
produced throughout the day. The fish department<br />
boasts deliveries six days a week, while that of prepared<br />
meats, in keeping with the logic of full-service,<br />

il core-business, questo reparto è rifornito quotidianamente<br />
e garantisce il massimo della freschezza.<br />
Essenziale ma attraente<br />
<strong>Il</strong> disegno di questi superstore prevede un ambiente<br />
essenziale, ma non disadorno come quello dei discount<br />
o dei wholesale club. Le scaffalature sono basse e consentono<br />
di cogliere a colpo d’occhio tutta l’esposizione<br />
del punto di vendita. Vi prevale l’utilizzo di materiali naturali<br />
ed eco-compatibili come il legno non trattato.<br />
Addirittura, in molti casi, il display è costituito dal semplice<br />
accumulo della merce imballata, ma tutto in un<br />
ordine perfetto. Così le strutture risultano poco appariscenti<br />
e lasciano spazio al prodotto che parla di sé. <strong>Il</strong><br />
layout è costituito da numerosi punti di attrazione,<br />
cosicché il cliente non sia obbligato ai classici percorsi<br />
degli altri supermercati. Le pareti perimetrali ospitano gli<br />
scaffali refrigerati dei formaggi, dei succhi e della gastronomia<br />
d’asporto, sovrastati da ampi pannelli e decorazioni<br />
essenziali che, in forma simbolica o verbale, rimandano<br />
(sullo stile lanciato da Trader Joe’s con la sua grafica<br />
spontanea, scherzosa e naif) ai luoghi di produzione<br />
e all’atmosfera agreste di un farmer market, appunto.<br />
<strong>Il</strong> tutto è completato dal banco del bakery che sfrutta<br />
come richiamo una produzione che si articola nell’arco<br />
dell’intera giornata. <strong>Il</strong> reparto del pesce vanta una consegna<br />
sei giorni alla settimana, mentre quello delle<br />
carni preparate sposa la logica full-service per cui il<br />
cliente può scegliere o ordinare i suoi tagli o le sue preparazioni<br />

Essentially Sprouts pursues a mission based on three<br />
points: customer service of an extraordinary high level,<br />
unbeatable prices and an impeccable point of sale with<br />
a great deal of flexibility. Each area in fact enjoys a<br />
great deal of autonomy in choosing suppliers so as to<br />
permit them to draw on local production and pursue,<br />
as far as possible, a philosophy of “zero-food miles”.<br />
And all of this is pursued with a logic of extremely<br />
aggressive pricing thanks to very low running costs!<br />
A very interesting feature of Sprouts is its handling of<br />
personnel management and customer relations. “We<br />
meet on the floor,” say the store managers. This means<br />
that meetings are held in the point of sale and often<br />
involve customers whose<br />
opinions are listened to<br />
with the greatest attention.<br />
Since it functions as<br />
a sort of neighbourhood<br />
store in the community in<br />
which it is based, and<br />
given that by the nature<br />
of what it offers it attracts<br />
large numbers of customers,<br />
Sprouts operates<br />
a rule whereby customers<br />

itself a “farmer’s market”,<br />
Sprouts combines, contrary<br />
to what happens in<br />
Italy, a highly coherent<br />
approach to the philosophy<br />
of freshness with<br />
hypermodern organization<br />

naturali e vitamine, presentate in logica di massificazione<br />
del cosiddetto wellness wall.<br />
<strong>Il</strong> cliente alle riunioni<br />
In sostanza, Sprouts persegue una missione basata su<br />
tre punti: uno straordinario customer service, un price<br />
for value imbattibile dai concorrenti, un punto di vendita<br />
impeccabile a cui aggiungere una notevole flessibilità.<br />
Ogni area gode, infatti, di una notevole autonomia nelle<br />
proprie scelte di approvvigionamento così da poter valorizzare<br />
le produzioni locali e perseguire, per quanto possibile,<br />
la filosofia del “chilometro-zero”. Tutto questo<br />
ricondotto a una logica di prezzi estremamente aggressivi,<br />
grazie a costi di gestione molto contenuti!<br />
Una caratteristica molto interessante di Sprouts è la<br />
gestione del personale e la relazione con il cliente. “We<br />

dire che le riunioni di lavoro si fanno nel punto di vendita<br />
e capita spesso che vi<br />

The Dico (DIscount COop) chain entered the discount<br />
market in northern Italy way back in 1994 as<br />
a result of the joint venture involving Coop<br />
Romagna-Marche, Coop Emilia-Veneto, Coop<br />
Estense, Coop Nordemilia, Coop Liguria, Coop<br />
Lombardia e Nova Coop. Initially called Sviluppo<br />
Discount S.p.A, after a merger with Sviluppo<br />
Discount, it then grew through the buy-out of<br />
Conad’s TopDì discount chain and became Dico,<br />
one of the country’s leading discount retailers. By<br />
2007, Dico had expanded into all of Italy’s regions<br />
and by 2008 had no fewer than 367 outlets, <strong>24</strong>4<br />
owned outright and 123 in franchising. Growth is ha<br />
habit for Dico Discount as by the end of 2011 it<br />
boasted 437 outlets, 330 directly owned and 107<br />
affiliates.<br />
Food quality and safety are the backbone of the<br />
items in Dico’s assortment, an approach that<br />
ensures scrupulous monitoring of processing procedures<br />
and of the items dispatched by suppliers.<br />
Indeed, foods bearing the Dico label must comply<br />
with specific oversight procedures for suppliers,<br />
ingredients and processing methods in order ensure<br />
they are suitable for sale. Then too suppliers must<br />
comply with strict standards, including inspection<br />
procedures to assure compliance and periodic laboratory<br />
testing to make sure food quality is up to<br />
company standards and remains so over time. Not<br />

Dico, infatti, procedimenti specifici per la valutazione<br />
preventiva di fornitori, materie prime e processi produttivi<br />
ne assicurano l’idoneità. Vengono poi predisposti<br />
severi capitolati di fornitura, procedure di rilevazione di<br />
non conformità e programmi di analisi periodiche per<br />
verificare che la qualità dell’assortimento resti costante.<br />
Ma c’è di più: presso laboratori accreditati Sinal è in funzione<br />
un sistema che assicura e monitora nel tempo la<br />
qualità del prodotto Dico con ulteriori controlli chimici e<br />
microbiologici. Da non dimenticare poi la convenienza:

not least, is pricing: accurate sorting by suppliers<br />

We talked about all this and more with Cristiano<br />
Zingarlini, head of produce purchasing at Dico<br />
S.p.A.<br />
Can you tell us how Dico actually manages its<br />
fresh produce supplies?<br />
Dico undertook a thorough overhaul of its fruit and<br />
vegetable business in 2011, a radical move that led to<br />
the setting up of four new nation-wide supply hubs in<br />
six weeks in addition to the main one in Tuscany.<br />
When it comes to produce, we currently work from<br />
five regional hubs located in Veneto, Piedmont,<br />
Campania, Tuscany and the Marches. This is a strategic<br />
set-up with a national reach that’s designed to<br />
promote logistical synergies aimed at ensuring fresh<br />
supplies for sale on a daily basis in our fruit and vegetable<br />
departments.<br />
Can you say something about logistics, an area<br />
that’s a key factor in the fresh produce industry?<br />
How are you organised here?<br />
Our logistics operations are at the full-time service<br />
of our outlets. The idea is to make sure sic deliveries<br />
a week of fresh food reach our supermarkets. To<br />
make a long story short, the produce we buy goes<br />
from field harvest to our shelves in no more than 10-<br />
16 hours. It’s our way of making sure our customers<br />
reap the full advantage of the short supply-chain<br />
concept in terms of real freshness and quality. The<br />
effort that goes into this approach is the fruit of<br />
proper planning and hands-on, efficient execution<br />
from one step to the next that our company is<br />
famous for.<br />
What kind of volumes do you handle?<br />
Our hub network handled a combined yearly produce<br />
volume in 2011 that was just shy of nine million<br />
crates, all the crates and boxes being recyclable<br />
from CPR, a very concrete way of showing how<br />
strongly we’re committed to environmental protection.<br />
What do you think are the key strategic factors<br />
that make up your market edge?<br />
The basic strategy we follow in the business model of<br />
our fruit and vegetable operations is built on principles<br />
designed to meet consumer expectations to the<br />
full. Our competitive edge comes from the fact that<br />

settore del fresco?<br />
L’ortofrutta Dico nel 2011 è stata protagonista di un<br />
rinnovamento radicale che ha visto l’attivazione di<br />
quattro piattaforme in sei settimane sul territorio nazionale,<br />
in aggiunta alla capostipite in Toscana. Nello specifico,<br />
per la distribuzione di ortofrutta, siamo organizzati<br />
su cinque piattaforme distribuite in Veneto,<br />
Piemonte, Campania, Toscana e Marche. Senza dubbio,<br />
questa disposizione strategica delle piattaforme<br />
sul territorio nazionale favorisce sinergie logistiche<br />
garantendo quotidianamente la freschezza dei prodotti<br />
serviti nei vari reparti.<br />
Ci parli della logistica, uno dei pilastri dell’industria del<br />
fresco. Com’è strutturata operativamente?<br />
La nostra logistica opera incessantemente al servizio del<br />
punto vendita, garantendo sei consegne la settimana di<br />
prodotti freschi. In sintesi possiamo dire che, dalla raccolta<br />
in produzione alla sistemazione sui banchi di vendita,<br />
il prodotto non supera mai le 10-16 ore per cui il<br />
cliente gode appieno del vero concetto di filiera corta<br />

delivery calendars with our growers and following<br />
through up the supply chain to meet the targets<br />
we’ve set. For example, since we’re so highly<br />
focused on food safety, the supply contracts we<br />
have with grower cooperatives or producer organisations<br />
have a built in, concrete system of guarantees<br />
that is backed up first by constant laboratory<br />
testing and then by hands-on quality control procedures.<br />
Given that we are a discount chain, our real<br />
forte for households is the sale of basic foods in the<br />
mid-market range that are advantageous to a customer<br />
base that is looking for what is seasonal,<br />
healthful and affordable.<br />
What approach do you use to meet customer<br />
demands?<br />
We stock an assortment of some 130 items, 50 of<br />
which are packaged for fast and convenient shopping.<br />
We then plan aggressive promotionals and highfrequency<br />
bargain spots, all based on produce of<br />
national provenance.<br />
Do you monitor emerging market trends?<br />
Trends have a lot to do with professional intuition in<br />
that if you simply follow them, they out run you and<br />
you often find yourself out of synch with consumer<br />
demands. That’s why we try to keep a watchful eye<br />
and ear close to our territorial ground so we can<br />
keep up with any new signals coming from our customers.<br />
What are your key supply markets?<br />
We are firm believers in what the growers in our country<br />
have to offer and invest our time and resources in<br />

Quali sono le leve strategiche<br />
che ritiene fondamentali per la competitività<br />
aziendale?<br />
La nostra strategia nel settore ortofrutta è forte di principi<br />
finalizzati alla piena soddisfazione del cliente. In particolare,<br />
ci rende competitivi il fatto di privilegiare elementi<br />
molto semplici ma fondamentali, come la qualità<br />
dei prodotti in termini organolettici, il prezzo inteso come<br />
elemento di coerenza offerto al cliente e il servizio che<br />
coniuga, valorizza ed eleva a miglior prestazione i due<br />
elementi precedenti.<br />
Quali sono le varietà che vi danno maggiori soddisfazioni?<br />
Ogni giorno scegliamo sempre e comunque le migliori<br />
varietà nei territori più vocati pianificando i calendari con<br />
i produttori e seguendo i programmi. Nello specifico,<br />
essendo intransigenti in termini di sicurezza alimentare,<br />
il rapporto di fornitura con cooperative e/o organizzazioni<br />
di produttori innesca un concreto sistema di assicurazione,<br />
completato da un programma costante di analisi<br />
di laboratorio prima, e da un controllo qualità serratissimo<br />
poi. Operando nel canale Discount siamo apprezzati<br />
nelle vendite di prodotti basici di media prestazione a<br />
vantaggio di una clientela attenta a conciliare la stagionalità,<br />
il mangiar sano e la quadratura del bilancio familiare.<br />
Che cosa fate per andare incontro alle esigenze del<br />
consumatore?<br />
Offriamo un assortimento di circa 130 referenze, di cui<br />
50 confezionate per agevolare la rapidità d’acquisto. A<br />
tutto ciò si somma un piano promozionale aggressivo e<br />
spot di opportunità ad alta frequenza, il tutto attingendo<br />
da produzioni nazionali.

What are your best selling items?<br />
Our lead items are the fruit and vegetables from<br />
domestic producers chosen by growing district and<br />
put on sale as part of the assortments we think best<br />
meet the demands of customers who are looking for<br />
the right quality-to-price ratio.<br />
Do you focus more on quality or on price?<br />
Since prices in today’s market keep declining,<br />
engaging in any kind of price war would make<br />
sense only if the selective factors regarding quality<br />
are there to back it up. In other words, it’s the<br />
shopper who first of all has the power to decide<br />
whether the price is right and who is willing neither<br />
to sacrifice quality nor to lower expectations since<br />
hard-earned money is about to be sent even if he<br />
or she is dealing with what we might call “nextbest”<br />
items. It goes without saying that whatever<br />
one buys, it has to be the best item at the given<br />
moment at the best price. The best produce buyer<br />
is the shopper with the best professional eye.<br />
That’s how you can tell what demands your facing<br />
and how to meet them to fulfil the expectations of<br />
your customers.<br />
How does your company compare to the competition?<br />
If we look at our profile in the domestic market, our<br />
position is excellent since we’ve put our energy into<br />
working closely with producers who are willing to let<br />
themselves be guided by current and emerging consumer<br />
demands. This gives us an edge every day in<br />
prices that are well matched to the items we sell and<br />
the attraction our stock assortment holds for shoppers.<br />
What’s your view of the EU’s proposed directive<br />
about the labelling of genetically modified foods?<br />
I think it’s a must for consumers to have all the information<br />
they need to make their choices. It’s really a<br />
right and everyone should fall in line with it. Indeed,<br />
it’s something that its goes hand in hand with increasing<br />
consumer awareness that fruit and vegetables<br />
contribute a lot towards our well-being and in protecting<br />
our health.<br />
What about your near-term plans and targets?<br />
Well, right now our plans call for expanding the range<br />
of fruit and vegetable items in our supply-chain<br />
assortment. It’s part of our strong commitment to our<br />
producers and consumers, with Dico underwriting the<br />
guarantee for all parties concerned.<br />

vigili sul territorio e di stare a stretto contatto con la<br />
clientela per cogliere sul campo nuovi segnali.<br />
Quali sono i vostri mercati di riferimento?<br />
Siamo orientati al prodotto italiano, investendo energie e<br />
risorse per dare continuità e concretezza a una linea di<br />
qualità con un focus enorme in tema di sicurezza alimentare.<br />
E i vostri prodotti di punta?<br />
I nostri punti di forza sono i prodotti italiani selezionati<br />
per territorio e proposti in assortimenti adatti a una clientela<br />
che ne apprezza il conseguente rapporto qualitàprezzo.<br />
Puntate di più sulla qualità o sul prezzo?<br />
In tempi in cui l’elemento prezzo all’origine è in continua<br />
flessione, la battaglia del prezzo ha senso solo se sorretta<br />
da elementi selettivi riguardo alla qualità. Mi spiego<br />
meglio: il cliente più di tutti ha la capacità di recepire la<br />
bontà della proposta, non transige sulla qualità e non è<br />
disposto a mediare sull’acquisto poiché, anche se si<br />
tratta di prodotti “poveri”, li acquista con sacrifici. Va da<br />
sé che ciò che acquista deve essere il miglior prodotto<br />
nel miglior momento alla migliore condizione. <strong>Il</strong> miglior<br />
buyer ortofrutta è rappresentato dal cliente che è il<br />
miglior tecnico in assoluto. Da ciò si evince quante esigenze<br />
si devono considerare per soddisfare in pieno le<br />
attese del cliente.<br />
Come si profila la vostra azienda rispetto alla concorrenza?<br />
Sul panorama nazionale siamo posizionati in modo davvero<br />
eccellente, avendo puntato su produttori che si<br />
sono lasciati guidare per seguire le esigenze in evoluzione<br />
del consumatore. Questo ci consente di essere ogni<br />
giorno competitivi con i prezzi, accattivanti con le proposte<br />
e attraenti nell’assortimento.<br />
Cosa ne pensa del progetto di legge europeo sull’etichettatura<br />
di prodotti geneticamente modificati?<br />
Ritengo imprescindibile fornire quante più notizie e informazioni<br />
necessarie al consumatore: un diritto cui nessuno<br />
si può sottrarre, anche in funzione di una sempre<br />
maggiore consapevolezza che frutta e verdura concorrono<br />
a migliorare il benessere e a preservare la salute.<br />
Progetti e obiettivi per il prossimo futuro?<br />
Abbiamo in cantiere lo sviluppo di un’ampia gamma di<br />
prodotti ortofrutticoli di filiera a marchio, a suggello di un<br />
patto tra chi produce e il consumatore finale, il tutto<br />
supportato da noi in veste di garanti.<br />

The French have once again confirmed their willingness<br />
to unite and pull together, even in a niche<br />
sector like that of soybean sprouts. Since 8 July 2011,<br />
following a crisis that that was a severe blow to the<br />
sector, French soybean sprout producers have united<br />
in the AFPGG: the Association française des Produ -<br />
cteurs de Graines germées (French association of<br />
soybean sprout producers).<br />
The four principal producers, L’Atelier Vert,<br />
Germ’Line, Vitalfa and Wostin, which between them<br />
account for 70% of the soybean sprout market, have<br />
joined the association.<br />
The objectives of the association are to represent its<br />
members in national, international and professional<br />
institutions and defend their interests; to guarantee the<br />
promotion of soybean sprouts, and set up an official<br />
protocol to ensure quality; and to take any collective<br />

Icugini d’oltralpe hanno confermato ancora una volta il<br />
loro orientamento a fare gruppo e sistema anche in un<br />
settore di nicchia come quello dei germogli di soia.<br />
Dall’8 luglio 2011, infatti, in seguito all’ondata di crisi che<br />
ha toccato pesantemente il settore, i produttori francesi<br />
di germogli si sono riuniti nell’Afpgg: Association française<br />
des producteurs de graines germées (associazione<br />
francese dei produttori di germogli di soia).<br />
Dell’associazione fanno parte i quattro principali produttori,<br />
che rappresentano il 70% del mercato dei germogli<br />
in Francia: L’atélier Vert, Germ’Line, Vitalfa e Wostin.<br />
Gli obiettivi dell’associazione sono la rappresentazione<br />
dei propri membri nelle istituzioni nazionali, internazionali<br />
e professionali e difendere i loro interessi; garantire la<br />
promozione dei germogli di soia; istituire e garantire un<br />
protocollo ufficiale di qualità; realizzare tutte le azioni collettive<br />
conformi all’interesse generale e compatibili con<br />
le norme europee.<br />
Dal <strong>24</strong> ottobre scorso, inoltre, un logo viene apposto<br />
sugli imballaggi per assicurare ai consumatori l’applicazione<br />
del protocollo di qualità. Attraverso “il protocollo<br />
ufficiale di qualità” i produttori s’impegnano a garantire il<br />
controllo e l’ispezione della produzione.<br />

di ogni lotto di seme. Questo consente di individuare<br />
in anticipo un potenziale germoglio contaminato su<br />
100mila semi.<br />

undertake to ensure the monitoring and inspection of<br />
production.<br />
Four step quality control<br />
Before germination through the certification of each batch<br />
of seeds. This allows for advance detection of a<br />
potentially contaminated shoot in batches of 100<br />
thousand seeds.<br />

Inspection of production by an independent body<br />
Production is inspected by an independent body,<br />
namely by Merieux Silliker laboratories.<br />
These are random inspections based on a procedure<br />
that takes in to account good production practices<br />
(HACCP) and respects “the official quality protocol”.<br />
Origin and variety of seeds<br />
In the case of mung bean sprouts (more commonly<br />
known as soybean sprouts), the seeds utilized come<br />
mainly from China and Burma; in the case of other<br />
varieties they come from France or Italy. The seeds<br />
which are specifically destined for soilless germination<br />
differ from those used for open field cultivation.<br />
The bean sprouts that are available on the market<br />
belong to one of five major plant families.<br />
Legumes: alfalfa, mung beans, lentils, peas, chickpeas.<br />

Germination<br />
In the case of soilless germination, the dormant state<br />
is interrupted when the seed comes into contact with<br />
water and a heat source. Within a few days (2 to 8<br />
depending on variety) the so called “radicle” is produced,<br />
the embryonic form of the plant.<br />
It is at this embryonic stage that the seed contains the<br />
food reserves that will be needed for the future growth<br />
of the plant. At this stage it produces enzymes, transforms<br />
proteins into amino acids and the vitamins and<br />
the micronutrients initially present increase by 8 to 10<br />
times: a wheat shoot contains about six times more<br />
vitamin C and 3 times more vitamin A than the seed.<br />

La germinazione<br />
Coltivato fuori suolo, il seme interrompe il riposo vegetativo<br />
poiché viene in contatto con l’acqua e una fonte<br />
di calore. Nel giro di qualche giorno (da 2 a 8 a seconda<br />
delle varietà) emette la cosiddetta “radichetta”, forma<br />
embrionale della vita del vegetale.<br />
È a questo stadio embrionale che il seme forma le riserve<br />
in nutrimento che saranno necessarie alla pianta per<br />
la sua crescita futura. In questa fase, produce degli enzimi,<br />
trasforma le proteine in amminoacidi e moltiplica da<br />
8 a 10 volte il tenore in vitamine e oligoelementi inizialmente<br />
presenti: un germoglio di frumento contiene circa<br />
sei volte in più di vitamina C e tre volte di vitamina A<br />
rispetto a un seme di frumento.<br />
Moltiplicatrice del tenore in vitamine (in particolare B e C)<br />
e in minerali (magnesio, calcio, ferro e fosforo principalmente),<br />
la germinazione aumenta simultaneamente la<br />
loro biodisponibilità. Essi saranno, quindi, più prontamente<br />
assorbiti dall’organismo. I germogli, inoltre,<br />
essendo ricchi di enzimi, facilitano la digestione degli alimenti<br />
cotti che ne sono poveri. Sono anche una fonte di<br />
carotene, utile a combattere l’invecchiamento prematuro<br />
delle cellule. Infine, e soprattutto, sono molto ricchi di<br />
proteine di alta qualità, perché contengono tutti gli<br />
amminoacidi essenziali.<br />

By boosting the vitamin (especially B and C) and mineral<br />
(magnesium, calcium, iron and phosphorus mainly)<br />
content, germination simultaneously increases<br />
their bioavailability. They can, therefore, be more<br />
readily absorbed by the body. Moreover, as they are<br />
rich in enzymes, sprouts aid the digestion of cooked<br />
food otherwise poor in this regard. They are also a<br />
source of carotene, which is useful in combating the<br />
premature aging of cells. Finally, and importantly, they<br />
are very rich in high-quality protein, because they<br />
contain all the essential amino acids.<br />
The French market<br />
In France, after long having been rather limited, the<br />
consumption of soybean sprouts has increased considerably<br />
since 2000. Most notably, since 2002, they<br />
figure on catering sector menus and now the restaurant<br />
and hotel sector has followed suit. The large<br />
supermarket chains have recently moved into this<br />
market which now has a turnover of 40 million euros<br />
(consumer sales in 2010).<br />
In Italy, seven producers cover 80% of the market.<br />
With approximately 200 employees, the sector generates<br />
an annual turnover of around 15 million euros.<br />
Though faced with competition from a wide range of<br />
varieties, the mung bean leads the field. Indeed, soybean<br />
sprouts account for 90% of 15 thousand tons of<br />
bean sprouts marketed every year in France.<br />
The European market<br />
At European level, there are about hundred companies<br />
in the sector, employing about two thousand people<br />
between them, for a turnover of about 150 million euros.<br />
In terms of consumer sales, the European market is<br />
worth about 400 million euros. The Dutch and the British<br />
are the biggest consumers of soybean sprouts.<br />

circa 200 impiegati, la filiera genera un fatturato annuale<br />
di circa 15 milioni di euro.<br />
A fronte di una vasta gamma di varietà, il fagiolino<br />
mungo si posiziona in cima alle vendite. In effetti, il 90%<br />
delle 15mila tonnellate di germogli commercializzate<br />
ogni anno in Francia è costituito da germogli di soia.<br />

There might be a lot of variability in fresh-cut processing<br />
lines according to the type of product and<br />
to the complexity of the operations. From very simple<br />
tools (knives, tables, and) that might be used in small<br />
fresh-cut fruit operations, to fully automated lines for<br />
fresh-cut salads. Regardless of their complexity, the<br />
equipments used in fresh-cut processing strongly<br />
affect the quality of the final product. Therefore they<br />
have to be selected and designed according to the<br />
type of product that has to be processed. Here are<br />
some examples.<br />

presente un certo margine di variabilità in relazione<br />
al tipo di prodotto in oggetto e alla complessità delle<br />
operazioni adottate: dagli strumenti più semplici (coltelli,<br />
tavoli, vasche) che possono essere utilizzati nelle operazioni<br />
più elementari di lavorazione della frutta, fino alle<br />
linee totalmente automatizzate per la preparazione delle<br />
insalate. Indipendentemente dalla loro complessità, le<br />
attrezzature utilizzate influenzano in modo determinante<br />
la qualità del prodotto finale. Tali dispositivi vanno pertanto<br />
concepiti e selezionati in base al tipo di prodotto<br />
da sottoporre a lavorazione. Di seguito alcuni esempi.
chanical damage associated to trimming, peeling,<br />
shredding, slicing, and dicing operations depends<br />
on the proper sharpness of the cutting tool; improper<br />
management of this step can result in rapid<br />
browning of the cut surface, translucency, loss of<br />
turgor and texture, and juice leakage. Choosing<br />
proper tools and adopting innovative materials (i.e.<br />
ceramics) and technologies (water-jet cutters) can<br />
dramatically decrease the negative effects of<br />
mechanical damage.<br />
<strong>Fresh</strong>-cut industry does not have a “killing step” to<br />
destroy all microbial contamination, so washing efficiency<br />
is of paramount importance in reducing microbial<br />
load; choosing the right washer configuration for<br />
a certain type of product will surely contribute to a<br />
better safety and a longer shelf-life.<br />
Bagged produce does not require excess moisture on<br />
its surface, so after washing and rinsing, drying operation<br />
is critical in order to keep quality and reduce<br />
microbial growth; the evolution in drying equipment<br />
technology – from various types of spin-dryers, very<br />
efficient but potentially damaging, to the different<br />
configuration of tunnels – ensures the best operating<br />
conditions for a certain kind of product.<br />
A number of “things” – generally originating from the<br />
field – can be part of the raw material (mostly vegetal<br />
parts, but also small insects, dirty particles, plastic<br />
pieces, etc.) and should be removed during processing.<br />
Prevention is critical and so is a proper design of<br />
the processing line, but specific equipments (perforated<br />
cylinders, adhering tapes, vision systems) can<br />
make the difference in keeping the potential number<br />
of complains practically close to zero.<br />
Of course, this is only a few examples of how equipment<br />
might affect the produce final quality and<br />
potential shelf-life. Innovation plays a key role in<br />
increasing plant automation and flexibility in the<br />
application, with a constant attention to potential<br />
impact on the product.<br />
<strong>Il</strong> danno meccanico diretto e indiretto associato a operazioni<br />
di taglio, sbucciatura, sminuzzatura, affettatura e<br />
spezzettatura dipende dal filo della lama utilizzata. Un<br />
uso scorretto in questa fase può determinare un rapido<br />
inscurimento della superficie tagliata, translucenza, perdita<br />
di turgore, consistenza e succo. Scegliere strumenti<br />
appropriati, adottare materiali (es. ceramica) e tecnologie<br />
(taglio ad acqua) innovativi può ridurre notevolmente<br />
gli effetti negativi dei danni meccanici.<br />
L’industria della IV gamma non dispone di una “fase di<br />
abbattimento” per la distruzione dei microbi, dunque<br />
l’efficacia del lavaggio è di primaria importanza per minimizzare<br />
la contaminazione da microrganismi. La scelta<br />
della configurazione di lavaggio più idonea al prodotto<br />
contribuisce certamente a migliorarne la qualità e ad<br />
aumentarne la shelf-life.<br />
I prodotti insacchettati non richiedono eccessiva umidità;<br />
pertanto, dopo il lavaggio e il risciacquo, l’operazione di<br />
asciugatura è fondamentale per assicurare la qualità e<br />
ridurre la crescita di colonie microbiche. L’evoluzione della<br />
tecnologia legata alle apparecchiature per l’asciugatura –<br />
da varie tipologie di centrifuga, molto efficienti ma potenzialmente<br />
dannose, a soluzioni diverse quali i tunnel – gara -<br />
ntisce che si operi al meglio in base al tipo di prodotto.<br />
Nelle materie prime si possono annidare diversi elementi<br />
che generalmente provengono dai campi (solitamente<br />
si tratta di parti vegetali, ma può trattarsi anche di piccoli<br />
insetti, particelle di sporco, pezzi di plastica, ecc.)<br />
che devono essere rimossi durante la lavorazione. La<br />
prevenzione è certamente fondamentale, così come lo è<br />
un’adeguata concezione della linea di lavorazione, ma<br />
dispositivi specifici (cilindri perforati, nastri adesivi,<br />
videocontrolli) possono veramente fare la differenza.<br />
Naturalmente quelli sopracitati sono solo alcuni esempi di<br />
come i macchinari possono incidere sulla qualità finale del<br />
prodotto e la sua shelf-life potenziale. L’innovazione gioca<br />
un ruolo fondamentale nell’incremento dell’automazione<br />
degli impianti e della flessibilità nell’applicazione, senza<br />
dimenticare il possibile impatto sul prodotto.<br />

Shelf-life<br />
There are also other factors that affect the shelf-life of<br />
fresh-cut products. «First of all – maintains Jeff<br />
Brecht, University of Gainesville, Florida – in order to<br />
achieve an absolutely ready-to-eat experience for the<br />
consumer when the package is opened, it is essential<br />
to select the optimum maturity or ripeness stage for<br />
processing. Secondly, using very sharp implements<br />
and otherwise avoiding any unnecessary injury to the<br />
product during processing helps maintain better<br />
product quality. Optimum temperature management<br />
(rapid cooling to and maintenance of 5°C or less) is a<br />
nonnegotiable requirement for maintaining fresh-cut<br />
product quality, but temperature control alone is not<br />
enough and thus most fresh-cut products must be<br />
handled in properly designed modified atmosphere<br />
packaging to supplement good temperature management.<br />
When all of these factors are properly<br />
addressed, the result is a satisfying consumer experience<br />
that ensures repeat sales».<br />
The impact of packaging<br />
Modified Atmosphere Packaging (MAP) is one of the<br />
key technologies associated with the optimization<br />
and shelf life extension of fresh-cut produce.<br />
«Modified atmosphere packaging, when combined<br />
with proper postharvest handling procedures and<br />

La shelf-life<br />
Vi sono, poi, diversi altri fattori che influiscono sulla shelflife<br />
della IV gamma. «Innanzitutto – spiega Jeff Brecht,<br />
dell’Università di Gainesville, Florida – affinché il consumatore<br />
viva una vera esperienza di freschezza all’apertura<br />
della confezione, occorre selezionare per la lavorazione i<br />
prodotti quando sono nella fase ottimale di maturazione.<br />
In secondo luogo, durante la lavorazione, è buona norma<br />
evitare l’impiego di utensili molto appuntiti che potrebbero<br />
procurare al prodotto danni non necessari. Una buona<br />
gestione della temperatura (raffreddamento rapido e mantenimento<br />
a 5°C o temperatura inferiore), pur essendo un<br />
requisito non negoziabile per il mantenimento della qualità<br />
della IV gamma, non è sufficiente: molti prodotti freschi<br />
pronti per il consumo devono essere adeguatamente confezionati<br />
in atmosfera modificata per consentire il mantenimento<br />
della giusta temperatura. Se si tiene conto di tutti<br />
questi fattori, il risultato è un’esperienza soddisfacente per<br />
il consumatore che diventa garanzia di ulteriori vendite».<br />
L’impatto del packaging<br />
<strong>Il</strong> confezionamento in atmosfera modificata o protettiva<br />
(Map) è una delle tecnologie chiave associate all’ottimizzazione<br />
e all’estensione della shelf-life dei prodotti freschi<br />
pronti per il consumo. «L’atmosfera protettiva, quando<br />
combinata ad adeguate procedure di trattamento<br />
postraccolta e gestione della temperatura – sostiene Jeff
temperature control management – explains Jeff<br />
Brandenburg, Jsb Group Consultant, Llc Greenfield,<br />
Usa – can have a positive impact on the quality and<br />
shelf life of fresh-cut produce. It is important to understand<br />
that MAP is only effective if there is consistent<br />
temperature management throughout the entire life<br />
cycle of the product, including processing, as well as<br />
the entire distribution channel. Lack of temperature<br />
control will result in physiological variations that compromise<br />
the effectiveness of the packaging system».<br />
Brandenburg also adds: «Properly designed MAP is<br />
the combination of reduced O2 and increased CO2<br />
within the package, with the optimal combination<br />
being unique to each produce variety. By reducing O 2<br />
concentrations below about 10% around many fresh<br />
fruits and vegetables their respiration rate slows,<br />
which in turn indirectly slows the rates at which they<br />
ripen, age, and decay. In addition, reducing the O 2<br />
concentration can, in some cases, reduce oxidative<br />
browning reactions, which can be of particular concern<br />
in fresh-cut products. By increasing the CO 2<br />
level within the package, CO 2 dissolves in water and<br />

Brandenburg aggiunge che «un’atmosfera protettiva<br />
adeguatamente formulata è la combinazione di ridotto<br />
contenuto di O 2 e concentrazione superiore di CO 2 nella<br />
confezione, una combinazione che varia da prodotto a<br />
prodotto. Riducendo la concentrazione di O 2 al di sotto<br />
del 10% circa, la frequenza respiratoria di molte varietà<br />
di frutta e ortaggi rallenta, causando il conseguente rallentamento<br />
di maturazione, invecchiamento e decomposizione.<br />
Inoltre, la diminuzione dell’O 2 può, in certi<br />
casi, ridurre l’inscurimento dovuto ai processi di ossidazione<br />
che possono costituire un problema per i prodotti<br />

produces carbonic acid, which will cause a drop in pH<br />
and create an acidifying effect. This acidification, as<br />
well as direct antimicrobial effects, can suppress the<br />
growth of many spoilage microorganisms and for this<br />
reason is essential in many extended shelf life packages».<br />
Expiring date<br />
On the importance of the expiring date as guarantee<br />
of quality we asked David Gombas, Senior Vice<br />
President - Food Safety and Technology United <strong>Fresh</strong><br />
Produce Association, Washington, DC.<br />
«It may only take one bad experience for a consumer<br />
to turn away from a product or brand. Expiration<br />
dates are one tool to avoid such an experience.<br />
Whether fresh-cut products intentionally have a<br />
short shelf-life (e.g., less than five days) or require<br />
the longest possible shelf-life (e.g., where products<br />
require extra time to reach their retail destination),<br />
expiration dates on the product package will assist<br />
retail handlers to rotate old product off the shelf and<br />
ensure consumers have only fresh product, with sufficient<br />
shelf-life to accommodate likely storage time<br />
and conditions in consumers’ homes and still provide<br />
a high quality product at consumption.<br />
Expiration dates will also assist consumers to avoid<br />
product that retail handlers may have missed, or that<br />
may have been in the consumer’s refrigerator longer<br />
than intended and may no longer have acceptable<br />
quality».<br />
Under ideal conditions, any fresh-cut product<br />
should achieve at least five days shelf-life. «Beyond<br />
that, fresh-cut operations should undertake a realistic<br />
study before setting an expiration date, considering<br />
particularly the likely range of initial produce<br />
quality and temperatures that the final product will<br />
experience in transport, storage, display and in consumers’<br />
hands. Overestimating shelf-life will result<br />
in poor experiences by some consumers; underestimating<br />
shelf-life can result in fewer sales than necessary».<br />

La data di scadenza<br />
Sull’utilità della data di scadenza quale garanzia di qualità,<br />
abbiamo sentito David Gombas, vice presidente<br />
Sicurezza alimentare e tecnologie della United <strong>Fresh</strong><br />
Produce Association di Washington DC.<br />
«Le date di scadenza sono uno strumento per evitare ai<br />
consumatori cattive esperienze e, quindi, per evitare che<br />
si disamorino di un prodotto o di un marchio.<br />
Indipendentemente dalla durata della shelf-life, la data di<br />
scadenza sulla confezione aiuta i rivenditori a ruotare gli<br />
articoli in modo che i clienti abbiano sempre prodotti freschi<br />
con una durata sufficiente e tale da rispecchiare i<br />
probabili tempi di conservazione e da adattarsi alle condizioni<br />
presenti nelle case dei consumatori, affinché, al<br />
momento dell’apertura della confezione, essi godano di<br />
un prodotto di alta qualità. La data di scadenza è, infatti,<br />
utile anche agli stessi consumatori per identificare<br />
prodotti sfuggiti all’attenzione dei rivenditori o lasciati<br />
erroneamente troppo a lungo nel frigorifero dopo l’acquisto<br />
e pertanto non più accettabili da un punto di vista<br />
qualitativo».<br />
In condizioni ideali, spiega ancora Gombas, ogni prodotto<br />
fresco pronto per il consumo dovrebbe avere una<br />
shelf-life di almeno cinque giorni. «Oltre tale limite, prima<br />
di fissare una data di scadenza, si dovrebbero effettuare<br />
studi realistici che prendano in considerazione la possibile<br />
qualità iniziale e la temperatura a cui sarà potenzialmente<br />
sottoposto il prodotto finito durante trasporto,<br />
conservazione ed esposizione, nonché dopo l’acquisto.<br />
Una sopravvalutazione della shelf-life risulta, infatti, per<br />
alcuni clienti una cattiva esperienza, mentre una sua<br />
sottovaluzione potrebbe ostacolare le vendite».<br />

The international 11th Private Label Istanbul 2012 for the marketing<br />
of own-food brands will be held in the Turkish city from 28<br />
to 31 March.<br />
The CNR Expo Center will be the venue of the showcase event<br />
for producers and suppliers of big retail chains selling food<br />
and non food items. Exhibitors will be featuring the latest in<br />
emerging trends and novelties regarding products and equipment.<br />
At last year’s show the nearly 6,500 visitors from Turkey, the<br />
United States, Europe, including the Balkans, the Middle East,<br />
North Africa and central Asia saw more than 150 participating<br />

L’undicesima fiera internazionale dei prodotti di largo consumo,<br />
“Private Label Istanbul 2012”, si svolgerà nella città turca dal 28 al<br />
31 marzo prossimi.<br />
La manifestazione, che avrà luogo presso il Cnr Expo exibition centre,<br />
è dedicata ai prodotti a marchio ed è rivolta a produttori e fornitori<br />
delle catene di vendita al dettaglio del settore alimentare e non.<br />
Gli espositori andranno all’appuntamento presentando le ultime tendenze<br />
e le novità in fatto di prodotti e attrezzature.<br />
L’anno scorso più di 150 aziende hanno partecipato alla fiera, mentre<br />
circa 6.500 sono stati i visitatori provenienti, oltre che dalla<br />
Turchia, da Stati Uniti, Europa, Medio Oriente, Nord Africa, Asia centrale<br />

Chiquita celebrated 20 years of cooperation<br />
with Rainforest Alliance, during the<br />
recent Fruit Logistica, and it opened the<br />
celebrations with a meeting-debate on the<br />
importance of partnership and cooperation<br />

full of temptations lived in 13 GS<br />
Carrefour hypermarkets, in which Kanzi®<br />
was the centre of some winning tasting,<br />
the 9 th and 10 th December last. The customers<br />
of the points of sale of the French<br />
retailer partner of the hypermarkets<br />
Rivalta, Massalengo and Ortofin from<br />
Ravenna, in Piedmont, Lombardy, Veneto,<br />
Tuscany and Friuli Venezia Giulia regions,<br />
had the chance to discover the appealing<br />
taste of that apple cropped in Italy by the<br />
producers of Alto Adige Consortia, Vog and<br />
Vip, thanks to some in-store activities.<br />
During those two promotional days, hostesses<br />
dressed in black offered to consumers<br />
engaged in pre-Christmas shopping,<br />
a delightful break made of Kanzi®,<br />
as well as some gadgets, such as the very<br />
sought-after books of recipes and the<br />
practical apple cutters. Furthermore, all<br />
the participants received a small paper<br />
invitation to join the Facebook community<br />
that tells the tempting world of Kanzi®,<br />
to pursue on-line the experience started<br />
in the real world.<br />
