Ingredients: 250 ml oil (neutral in taste, e.g. Canola oil), 3 complete<br />
middle-sized fish (Sompate), 3 small onions, 4 cloves of garlic, 1<br />
eggplant ½ white cabbage, 3 capsicums (green, red, yellow), 4 carrots,<br />
100 g tomato purée, 500 g sieved tomatoes, 1 kg Basmati Rice, salt,<br />
bouillon, ground pepper.<br />
Preparation: Cut off the fish’s head and tail, remove its scales (leave<br />
the bones) and cut it in thirds. Then wash thoroughly under running<br />
water. Heat 250 ml oil in a big pot. Put the fish in a bowl and spice it<br />
with 1 tbsp. of salt and a pinch of ground pepperoni. Next, put the fish<br />
in the hot oil and deep-fry until the fish is golden brown on all sides<br />
(depending on the size approximately 10 min). Meanwhile, wash the<br />
rice, steam/cook it, and strain it while still underdone (after about half<br />
of the recommended cooking time). Cut 2 onions and 2 cloves of garlic<br />
into cubes and deep-fry them in the already used pot. After about 3-4<br />
min, add the tomato purée and 100 ml of water. Add a cube of bouillon<br />
and a pinch of grounded pepperoni. Put 2 ½ litres of water in the pot.<br />
Stirring regularly, let the stock simmer at a good temperature. Add the<br />
sieved tomatoes and a pinch of salt. Cut ½ of the green capsicums into<br />
cubes, cut the carrots and white cabbage into halves, the eggplant into<br />
quarters, and cook them in the sauce. Season with bouillon. Remove<br />
cooked vegetables from the stock. Place the fish in the brew and remove<br />
after about 10-15 min. Keep vegetables and fish warm on different<br />
plates. Cut the remaining cloves of garlic, an onion and the second half<br />
of the yellow, green and red capsicum into cubes and place them in<br />
the pot. Add the underdone rice to the sauce and cook it. Now you can<br />
either serve each component on a different platter or you can put a base<br />
of rice into a soup plate and top it with fish and vegetable and eat it<br />
either Senegalese-style with your hands or with a spoon. Bon appétit!<br />

Zutaten: 250 ml geschmacksneutrales<br />
Öl (z.B. Rapsöl), 3 ganze mittelgroße<br />
Fische (Sompate), 3 kleine Zwiebeln, 4 Knoblauchzehen, 1 Aubergine,<br />
1/2 Kopf Weißkohl, 3 Paprika , 4 Möhren, 100 g Tomatenmark, 500 g passierte<br />
Tomaten, 1 kg Basmati Reis, Zum Würzen: Salz, Suppenbrühe, Gemahlene Peperoni.<br />
Zubereitung: Kopf und Schwanzflossen der Fische abtrennen, ausnehmen,<br />
von Schuppen befreien (Gräten belassen) und dritteln. Dann unter fließendem<br />
Wasser gründlich waschen. 250 ml Öl in einem großen Topf erhitzen, Fisch in<br />
eine Schüssel geben und mit 1 EL Salz und einer Prise Peperonipulver würzen.<br />
Anschließend den Fisch in das heiße Öl geben und von allen Seiten goldgelb<br />
frittieren (je nach Größe ca. 10 min). Währenddessen den Reis waschen,<br />
anschließend dampfgaren/kochen und noch ungar abseihen (nach ca. der<br />
Hälfte der empfohlenen Gardauer). 2 Zwiebeln und 2 Zehen Knoblauch grob<br />
hacken und im bereits zuvor benutzen Topf frittieren.<br />
Nach ca. 3-4 min Tomatenmark und 100 ml Wasser hinzugeben. Mit einem<br />
Suppenwürfel und einer Prise Peperoni würzen. 2,5 l Wasser hinzugeben. Bei<br />
guter Hitze unter regelmäßigem Rühren weiter köcheln lassen. 500 g passierte<br />
Tomaten und etwas Salz hinzufügen. Eine halbe grüne Paprika würfeln, Möhren<br />
und Weißkohl halbieren, Aubergine vierteln und im Sud garen. Mit Brühe<br />
abschmecken. Gares Gemüse aus dem Sud nehmen, Fisch in den Sud geben und<br />
nach ca. 10-15 min entnehmen. Gemüse und Fisch auf verschiedenen Platten<br />
warmstellen. Restlichen Knoblauch, eine Zwiebel und je eine halbe gelbe, grüne<br />
und rote Paprika würfeln und in die Soße geben. Den ungaren Reis ebenfalls<br />
in die Soße geben und bei schwacher Hitze fertig kochen. Nun entweder alles<br />
auf verschiedenen Platten servieren oder auf je einem tiefen Teller das Gemüse<br />
und den Fisch auf einem Bett aus Reis anrichten und senegalesisch mit der<br />
Hand (nur die rechte Hand, bitte!) oder mit einem großen Löffel essen.<br />
