Therapeutic diets must be prescribed by the attending physician.<br />

Observe trays to assure that food is appropriate to resident according to assessment <strong>and</strong> care<br />

plan. Ask the resident how well the food meets their taste needs. Ask if the resident is <strong>of</strong>fered or<br />

is given the opportunity to receive substitutes when refusing food on the original menu.<br />

Is food cut, chopped, or ground for individual resident‘s needs?<br />

Are residents who refuse food <strong>of</strong>fered substitutes <strong>of</strong> similar nutritive value?<br />

Interpretive Guidelines §483.35(d)(4)<br />

A food substitute should be consistent with the usual <strong>and</strong> ordinary food items provided by the<br />

facility. For example, if a facility never serves smoked salmon, they would not be required to<br />

serve this as a food substitute; or the facility may, instead <strong>of</strong> grapefruit juice, substitute another<br />

citrus juice or vitamin C rich juice that the resident likes.<br />

§483.35(e) Therapeutic Diets<br />

Therapeutic diets must be prescribed by the attending physician.<br />

Intent §483.35(e)<br />

The intent <strong>of</strong> this regulation is to assure that the resident receives <strong>and</strong> consumes foods in the<br />

appropriate form <strong>and</strong>/or the appropriate nutritive content as prescribed by a physician <strong>and</strong>/or<br />

assessed by the interdisciplinary team to support the treatment <strong>and</strong> plan <strong>of</strong> care.
