Areas <strong>of</strong> Concentration: Apparel studies; food, human nutrition<br />
and hospitality; human development and family sciences; and general<br />
human environmental sciences. (The Rural Sociology M.A. is<br />
awarded in the Sociology Department.)<br />
Prerequisites to Degree Program: Applicants are expected to<br />
have sufficient undergraduate preparation to be admitted to the program.<br />
An admissions committee that is appointed by the Director at<br />
the time an application for admission is received determines eligibility<br />
for admission to any <strong>of</strong> the program areas. The admissions committee<br />
specifies any deficiencies in admission requirements that must<br />
be met by students who are admitted.<br />
Prerequisites for the Concentration in Rural Sociology are found<br />
in the description <strong>of</strong> the Sociology program.<br />
Requirements for the Master <strong>of</strong> Science Degree: The <strong>School</strong><br />
requires that at least 50 percent <strong>of</strong> the course requirements be earned<br />
from courses at the 5000 or 6000 level. This degree allows for a thesis<br />
and non-thesis option. Students who have research assistantships<br />
funded by the <strong>Arkansas</strong> Agricultural Experiment Station are required<br />
to participate in the thesis option. The thesis option is also recommended<br />
for students who plan to continue their education beyond the<br />
Master <strong>of</strong> Science degree.<br />
Thesis Option: The thesis option requires a minimum <strong>of</strong> 30<br />
semester hours. Of those 30 hours, six semester hours <strong>of</strong> thesis<br />
research are required and at least 12 hours <strong>of</strong> course work must<br />
originate within the area <strong>of</strong> concentration. Students must also take at<br />
least one course each in graduate statistics and research methods.<br />
Non-thesis Option: The non-thesis option requires a minimum <strong>of</strong><br />
33 semester hours <strong>of</strong> graduate level course work. A minimum <strong>of</strong> 15<br />
<strong>of</strong> the semester hours must originate in the student’s area <strong>of</strong> concentration.<br />
Students must also take at least one course each in graduate<br />
statistics and research methods. Non-thesis track students are<br />
required to pass both written and oral comprehensive exams.<br />
HESC Distance Education Master’s Degree: The General<br />
Human Environmental Sciences concentration is the only HESC<br />
M.S. degree available through distance education. The sequence <strong>of</strong><br />
courses for distance education students is dependent upon the time<br />
<strong>of</strong> the student’s enrollment and the availability <strong>of</strong> distance education<br />
courses <strong>of</strong>fered by the school.<br />

HESC4023 Advanced Apparel Merchandising (Sp, Fa) Advanced Apparel<br />
Merchandising aspects <strong>of</strong> fashion through interpretation <strong>of</strong> apparel classification, seasonal<br />
cycles, stock emphasis, assortment strategies, target customers, and apparel trends and an<br />
overview <strong>of</strong> marketing communication including advertising, personal selling and sales promotion.<br />
Prerequisite: HESC 3013 and HESC 3033 .<br />
HESC4033 Advanced Textile Study (Fa, Sp) Use <strong>of</strong> advanced computer-aideddesign<br />
(CAD) s<strong>of</strong>tware to enhance skills in textile studies. Prerequisite: HESC 1053 and HESC<br />
2053.<br />
HESC4043 History <strong>of</strong> Apparel (Fa) The evolution <strong>of</strong> clothing from ancient times to<br />
the twentieth century with emphasis upon Western civilization. Cultural and economic factors<br />
affecting dress and customs associated with dress will be stressed. Lecture three hours per<br />
week. Prerequisite: ANTH 1023 or SOCI 2013 and HESC 1013.<br />
HESC4053 Contemporary Apparel (Sp) Fashion as a social force, the origin, scope,<br />
theory, and history <strong>of</strong> the fashion business, the materials <strong>of</strong> fashion, the fashion producers,<br />
auxiliary fashion enterprises, designers, fashion leaders, and leading market. Lecture three<br />
hours per week. Prerequisite: HESC 4043 or consent.<br />
HESC4063 Advanced Apparel Production (Sp, Fa) An advanced study <strong>of</strong> product<br />
development incorporating technology used in the industry for a career in fashion merchandising<br />
and/or product development. Prerequisite: HESC 3003 and HESC 2013.<br />
HESC4103 Experimental Foods (Sp) Application <strong>of</strong> experimental methods for investigations<br />
in cookery. Group and individual problems. Lecture 2 hours, laboratory 3 hours per<br />
week. Corequisite: Lab component. Prerequisite: HESC 2112 and HESC 2111L and CHEM<br />
1123 and CHEM 1121L (or HESC 2112 and HESC 2111L and CHEM 1074 and CHEM<br />
1071L).<br />
HESC4213 Advanced Nutrition (Fa) Normal nutrition with emphasis on utilization<br />
<strong>of</strong> nutrients. Lecture and reports on current literature 3 hours per week. Pre- or Corequisite:<br />
CHEM 3813. Prerequisite: HESC 3203.<br />
HESC4243 Community Nutrition (Sp) Identifying, assessing, and developing solutions<br />
for nutritional problems encountered at the local, state, federal, and international levels.<br />
Lecture 3 hours per week. Prerequisite: HESC 1213.<br />
HESC425V Food and Nutrition Seminar (Sp) (1-2) Upperclassmen, graduate<br />
students and members <strong>of</strong> faculty meet weekly for presentation and discussion <strong>of</strong> selected<br />
topics. Two credits (2 semesters) required <strong>of</strong> all foods and nutrition graduate students. May be<br />
repeated for 2 hours. Prerequisite: HESC 3203.<br />
HESC4423 Adult Development (Fa) Examine individual development beginning with<br />
the transition adulthood through middle age; aproximate age ranges are 18-60 years. Content<br />
focuses on physical, cognitive, psychological, and social changes that occur throughout this<br />
period <strong>of</strong> the life span. The impact <strong>of</strong> love, work, and family on men’s and women’s movement<br />
through the transitions that comprise adulthood are emphasized. Prerequisite: HESC 1403 or<br />
PSYC 2003 and junior standing.<br />
HESC4433 Dynamic Family Interaction (Sp) Examination <strong>of</strong> family interaction<br />
across the lifespan. Methods for enhancing marriage and family relations will be examined.<br />
Sources <strong>of</strong> marital conflict, intergenerational support and negotiations process will be analyzed.<br />
Lecture three hours per week. Prerequisite: HESC 2413 and junior standing.<br />
HESC4443 Gerontology (Sp) Physiological and psychological development <strong>of</strong> the aging<br />
individual, extended family relations, service networks for the elderly, and retirement activities.<br />
Some attention to housing and care needs <strong>of</strong> persons in advanced years. Lecture 3 hours per<br />
week. Seminar. Prerequisite: HESC 1403 (or HESC 2413 or PSYC 2003 or SCWK 2133) and<br />
junior standing.<br />
HESC4453 Parenting and Family Dynamics (Sp, Fa) Focus is on influence <strong>of</strong><br />
parenting and family dynamics on individual development, especially factors in family life which<br />
contribute to normal psychological development. Topics include family values, the psychology<br />
<strong>of</strong> sex and pregnancy, the transition to parenthood, childbearing techniques, family influences<br />
on cognitive and social development, and changes in family relationships during the life cycle.<br />
Prerequisite: HESC 1403 or PSYC 2003.<br />
HESC4463 Administration and Evaluation <strong>of</strong> Child Development (Fa)<br />
Programs Information on planning, developing, operating, and evaluating child development<br />
programs. Topics include physical facilities, staff, curriculum, budgets, parent involvement, and<br />
education. Lecture and discussion 3 hours per week. Prerequisite: HESC 3402 and HESC<br />
3401L and junior standing.<br />
HESC4493 Public Policy Advocacy for Children and Families (Fa) Public<br />
policy advocacy as related to children and family issues. Strategies for advocacy will be<br />
emphasized. Lecture three hours per week.<br />
HESC455V Special Topics (Irregular) (1-6) Topics not covered in other courses, a<br />
focused study <strong>of</strong> specific topics in the students’ areas <strong>of</strong> concentration. May be repeated for<br />
6 hours.<br />
HESC4623 Selection and Layout <strong>of</strong> Food Service Equipment (Sp) Types <strong>of</strong><br />
food service. Planning food flow from receiving to service <strong>of</strong> meals. Choosing proper equipment<br />
for the flow plan and service items. Sanitation, maintenance, comparison <strong>of</strong> personnel<br />
requirements. Lecture 3 hours per week. Prerequisite or Corequisite: HESC 3604. Prerequisite:<br />
HESC 3653.<br />
HESC4633 Advanced Hotel Operations (Sp) In-depth comprehensive study, strategic<br />
planning and analysis <strong>of</strong> the manager’s role in successful hotel operations including<br />
application <strong>of</strong> specialized computer s<strong>of</strong>tware and human resource management skills. Lecture<br />
2 hours per week. Laboratory 3 hours per week. Prerequisite: HESC 3633<br />
HESC4753 Family Financial Management (Fa) Economic considerations <strong>of</strong> the<br />
family in a rapidly changing society. Family finance and consumer problems are emphasized.<br />
HESC4813 Human Factors in Interior Design (Sp) (Formerly HESC 3823).<br />
Emphasis is given to human behavior as applied to interior design. Types <strong>of</strong> interior spaces,<br />
environmental effects on behavior, ergonomics, interior design needs <strong>of</strong> special groups, and<br />
human factors programs are studied. Lecture 3 hours per week. Prerequisite: SOCI 2013 and<br />
PSYC 2003. Prerequisite or Corequisite: HESC 2815.<br />
HESC4903 Recent Advances in Manufacturing and Merchandising (Su, Fa)<br />
Study <strong>of</strong> the interaction between manufacturing, marketing, and merchandising in the apparel<br />
industry through classroom instruction and study tours. Includes study trip. Additional fees<br />
required. Lecture 3 hours per week and 1 week study tour. May be repeated for 12 hours.<br />
HESC5003 Advanced Apparel <strong>Studies</strong> in the Global Economy (Fa) Advanced<br />
analysis <strong>of</strong> economic, social and political aspects <strong>of</strong> the domestic and international textile and<br />
apparel industries.<br />
HESC5013 Advanced Apparel Pattern Design (Sp) Use <strong>of</strong> computer aided design<br />
technology to perform pattern making techniques for apparel production. Laboratory 5 hours<br />
per week. Prerequisite: HESC 3003.<br />
HESC502V Special Problems Research (Sp, Su, Fa) (1-6)<br />
HESC5033 Principles <strong>of</strong> Textile Testing (Sp) Study <strong>of</strong> textile testing machines and<br />
methods utilized to determine construction and performance characteristics <strong>of</strong> woven and knit<br />
fabrics. Lecture 1 hour. Laboratory 4 hours per week. Corequisite: lab component.<br />
HESC5203 Special Topics in Nutrition (Sp) Critical review <strong>of</strong> current literature;<br />
reports and discussion <strong>of</strong> original nutrition research pertinent to the topic(s) identified for study.<br />

HESC5223 Nutrition During the Life Cycle (Fa) Study <strong>of</strong> normal nutrition emphasizing<br />
quantitative needs for nutrients as functions <strong>of</strong> biologic processes that vary during<br />
stages <strong>of</strong> the life cycle. Nutritive needs during pregnancy and childhood are emphasized with<br />
