Although Gil’s is now a first- class Dubrovnik object,
Duje has also encountered some problems during the
working process. He told us that the most difficult thing
was to work on the space that serves as a historical
monument and is under UNESCO’s protection, but also
cooperating with various companies and institutions in
Dubrovnik. The most difficult thing, however, was meeting
the project’s deadline, which was very short, as
well as dealing with the investor’s lack of knowledge
about how these procedures work in Croatia. However,
thanks to the adaptability and competence of
the crew that worked on the Gil’s project, everything
ended well. And now we have a 1300-square-metre
establishment.
Kaliterna didn’t pull any punches when it came to fine
materials and well-known brands regarding the interior
decoration.
– Most of them are foreign firms that have their branch
offices in Croatia. I’d like to mention Minotti, ITF, Calligaris
furniture, Murano Due, Modular, Mooi, Floss lighting,
Bosa sound systems, FAP ceramics…
Because no punches were pulled when it came to
quality materials, you can’t expect this restaurant to be
cheap. This whole episode cost the investor “several”
million kunas. However, the invested money paid off,
according to the investor, our architect and all visitors,
the majority of which is made of younger people with
“deeper pockets”.
In Gil’s, you will find the large kitchen right around the
corner from the guests, separated only by a big glass
surface, so the visitors can observe how their French
specialties are being made. The restaurant also offers a
large wine cellar, and a big aquarium with lobsters also
draws attention. The establishment is divided into two
larger units: modern French kitchen where meals and
excellent wines are served, and the open atrium with a
terrace that provides a wonderful view over the sea in
front of Dubrovnik. The lounge bar offers a large list of
various cocktails and other beverages, along with the
unavoidable sushi and desserts.
– There are many interesting units in the establishment.
I personally prefer the interaction, functioning of the
entire object, which came as the result in the end and
that wasn’t easy to achieve – young Kaliterna tells us
in the end, and he announces that he’s preparing two
large objects in the near future:
– One in Zagreb and one in Split, which is something I’d
like to point out because I’m finally working on something
in “my” town, and I hope that it will lead to some
positive changes for the town underneath Marjan.
