A good espresso with a thick, even froth depends<br />

not only on the quality, pressure and temperature of<br />

the water and the quality of the <strong>coffee</strong> beans, but<br />

also on the quantity of beans and how f<strong>in</strong>ely they are<br />

ground.<br />

The froth should have an even colour with dark<br />

stripes runn<strong>in</strong>g through it.<br />

Gr<strong>in</strong>d<strong>in</strong>g the <strong>coffee</strong><br />

To avoid damage to the mach<strong>in</strong>e, the slide<br />

control for the <strong>coffee</strong> gr<strong>in</strong>der sett<strong>in</strong>g should be<br />

moved carefully and <strong>in</strong> small stages.<br />

There are various ways to tell whether the <strong>coffee</strong><br />

gr<strong>in</strong>der is set correctly:<br />

– If espresso flows too quickly <strong>in</strong>to the cup, it<br />

means that the <strong>coffee</strong> has been ground too<br />

coarsely and the pressure is not sufficient. The<br />

gr<strong>in</strong>der should be set on a f<strong>in</strong>er sett<strong>in</strong>g.<br />

– If espresso only trickles <strong>in</strong>to the cup, the <strong>coffee</strong><br />

beans have been ground too f<strong>in</strong>ely and the <strong>coffee</strong><br />

will be bitter. The gr<strong>in</strong>der should be set on a<br />

coarser sett<strong>in</strong>g.<br />

– If the froth is evenly coloured but pale, this is also<br />

a sign that the <strong>coffee</strong> beans have been ground<br />

too coarsely.<br />

– If the froth is very dark brown on one side,<br />

graduat<strong>in</strong>g almost to white on the other, it<br />

suggests that <strong>coffee</strong> beans have been ground too<br />

f<strong>in</strong>ely.<br />
