8.5.2 Structure of ProteinProtein is synthesisedon the ribosome asa linear sequence ofamino acids which areheld together by peptidebonds. After synthesis,the protein attains conformationalchange into a specific 3D form forproper functioning. Theindividual polypeptide chains ofthe protein are called subunits andthe active protein itself is called amultimer.For example: Enzymes serve as catalystfor chemical reactions in cell and arenon-specific. Antibodies are complexglycoproteins with specific regions ofattachment for various organisms.8.5.3 Protein DenaturationDenaturation is the loss of 3D structureof protein. Exposure to heat causes atomsto vibrate violently, and this disrupts thehydrogen and ionic bonds. Under theseconditions, protein molecules becomeelongated, disorganised strands. Agentssuch as soap, detergents, acid, alcohol andsome disinfectants disrupt the interchainbond and cause the molecule to be nonfunctional(Figure 8.25).289
