oxygen of a hydroxyl group on the electrophilic carbon of the carbonyl group. The α <strong>and</strong> β forms,<br />

called anomers, differ in the configuration at C1.<br />

Carbohydrates are classified according to the number of single saccharide, or sugar, units they contain<br />

(from the Latin saccharum, meaning “sugar”). The simplest aremonosaccharides; a disaccharide consists<br />

of two linked monosaccharide units; atrisaccharide has three linked monosaccharide units; <strong>and</strong> so forth.<br />

Glucose is a monosaccharide, <strong>and</strong> sucrose (common table sugar) is a disaccharide. The hydrolysis of<br />

sucrose produces glucose <strong>and</strong> another monosaccharide, fructose, in a reaction catalyzed by an enzyme or<br />
