Tout commence place de la Mairie, dans une<br />
pâtisserie que vient d’ouvrir Alexandre Micka.<br />
Saint-Tropez est alors en effervescence et sous<br />
les feux de l’actualité cinématographique. Roger<br />
Vadim y a tourné Et Dieu créa la femme, Brigitte<br />
Bardot accède au rang de star. La réalisation d’une brioche<br />
à la crème saupoudrée de sucre va, elle aussi, faire le buzz<br />
(un mot inconnu à l’époque). Brigitte Bardot – qui en<br />
raffole – suggère à Alexandre Micka de la baptiser « La<br />
Tarte de Saint-Tropez ». L’histoire est en route…<br />
Souvent imitée, jamais égalée<br />
Alexandre Micka n’en a jamais fait mystère, il s’est<br />
inspiré de la recette de sa grand-mère, associant deux<br />
crèmes différentes qui, au final, n’en composent qu’une<br />
seule. Le sucre, lui, est toujours cuit dans des chaudrons<br />
de cuivre. En 1973, La Tarte Tropézienne devient une<br />
marque déposée. Dix ans plus tard, Alexandre Micka<br />
fait la connaissance d’Albert Dufrêne ; ils vont travailler<br />
ensemble avant que le premier cité ne cède au second<br />
son savoir-faire et le nom de sa réussite. Si rien dans sa<br />
fabrication n’a changé, La Tarte Tropézienne va partir à<br />
la conquête de l’Hexagone. Prophétesse en son pays – ou<br />

creation of a cream-filled<br />
brioche sprinkled with<br />
sugar was also causing a<br />
buzz (a word unknown at<br />
the time). Brigitte Bardot<br />
– who adored the pastry<br />
– suggested to Alexander<br />
Micka that he name it “La<br />

What is the source of the<br />
La Tarte Tropézienne<br />
recipe? Alexandre Micka<br />
has never made any secret<br />
of the fact that it was<br />
inspired by that of his<br />
grandmother. But that’s<br />
as much as he will share.<br />
