Il <strong>la</strong>tte scorre sul raffreddatore e si<br />
raffredda a una tem<strong>per</strong>atura di ca. 3 °C<br />
su<strong>per</strong>iore a quel<strong>la</strong> <strong>del</strong>l’acqua.<br />

Il <strong>la</strong>tte viene versato in un contenitore dove è instal<strong>la</strong>to un<br />
raffreddatore a immersione (circo<strong>la</strong>zione d’acqua fredda o<br />

4.3 Stoccaggio <strong>del</strong> <strong>la</strong>tte<br />
Il <strong>la</strong>tte deve essere mantenuto a tem<strong>per</strong>atura bassa durante <strong>la</strong> notte, idealmente sotto i 10 °C.<br />
