P 23 Abdominal Fat Deposition in Broilers<br />

Abstract<br />

As a result of 60 years of genetic selection of broilers, fast growing is paralleled with the<br />

unwanted increase of abdominal fat. Besides being an economic loss for the producer, excess<br />

fat also negatively influences diet utilisation and post-slaughter processing. One of the main<br />

aims in poultry production is to increase the amount of consumable meat while reducing the<br />

accumulation of abdominal fat. At the same time, a certain amount of carcass fat is desirable<br />

for better flavour and palatability. A lot of time, effort and a great amount of money have been<br />

spent on researching ways to reduce fat build-up. The present paper reviews the studies and<br />

results reported on the topic of abdominal fat deposition and on the genetic, gender, age, diet and<br />

environmental factors influencing the build-up of abdominal fat.<br />
