What will I learn?<br />
You will develop a core introductory<br />
skill base in the correct use of<br />
equipment and knives in order<br />
for you to cook and present a<br />
wide range of meat, poultry and<br />
vegetables, sauces and garnishes.<br />
The course also covers some<br />
patisserie elements including cakes,<br />
sponges and hot and cold desserts.<br />
You’ll build your confidence and<br />
customer service skills working<br />
front of house in Enfields Kitchen,<br />
our student-run restaurant. You’ll<br />
deal with customers, undertake<br />
initial barista training, work<br />
on table design and handle<br />
cash and card payments.<br />
You’ll be taught hygiene<br />
requirements, how to be safe at<br />
work and the key fundamentals<br />
of kitchen cleanliness. In addition,<br />
you’ll also gain an understanding<br />
of international culinary terms<br />
in French and Italian.<br />
Professional Cookery<br />

Entry requirements<br />
Vocational qualifications at Level<br />
1 or three GCSE grades at 4 or<br />
above including English and maths.<br />
What will I learn?<br />
You’ll cook and present a wide<br />
range of meat, fish and poultry<br />
dishes with an extensive variety<br />
of accompaniments such as<br />
vegetables, sauces and garnishes.<br />
This will develop your core skill in<br />
the use of equipment and knives.<br />
You will also learn how to prepare,<br />
cook and finish a range of hot and<br />
cold desserts, experimenting with<br />
pastry products including cakes,<br />
sponges, biscuits and scones as well<br />
as bread and other dough products.<br />
You’ll learn how to develop menus<br />
for a variety of customers and<br />
events including preparation<br />
for customers with allergies<br />
and understanding the<br />
fundamentals of nutrition.<br />
While this course is aimed at<br />
those who want to be in the<br />
kitchen, to ensure you can best<br />
support your customer-facing<br />
team in the future, you’ll learn<br />
about front-of-house operations<br />
and dealing with customers.<br />
Food and Beverage Service<br />
Level 2<br />

1 year<br />
Entry requirements<br />
Three GCSE’s grade 4 or above<br />
including either English and maths.<br />
Level 1 cookery is desirable or<br />
experience, but not essential.<br />
What will I learn?<br />
You will develop a skill set to be<br />
able to work confidently front of<br />
house and deal with customers.<br />
This will include the full customer<br />
journey from managing their<br />
booking, meeting and greeting,<br />
confidently describing menu<br />
options, dealing with allergy<br />
related queries, serving food and<br />
drink and processing payments.<br />
We’ll also train you in the art<br />
of mastering the perfect<br />
cup of coffee using industry<br />
recognised equipment.<br />
Customer service is at the heart<br />
of front-of-house operations<br />
and we’ll teach you how to give<br />
your customers 5 star treatment.<br />
From the moment they make the<br />
booking to the way you greet them<br />
on arrival and how you explain<br />
the menu choices to them, we’ll<br />
build your skills and confidence.<br />
To ensure you can talk<br />
knowledgeably about food you’ll<br />
also learn introductory culinary<br />
skills. We’ll teach you how to cook<br />
and present a selection of meat,<br />
fish and poultry dishes with a<br />
range of accompaniments such as<br />
vegetables, sauces and garnishes.<br />
