What will I learn?<br />

This course will give you the<br />

practical skills and knowledge for<br />

a career as a pastry chef in the<br />

catering and hospitality industry.<br />

You’ll develop skills in the complex<br />

methods in producing pastries,<br />

hot and cold desserts and<br />

developing your unique adaptation<br />

methods to dishes which include<br />

chocolate centre pieces, boiled<br />

sugar work and pastillage.<br />

Running the dessert section of<br />

Enfields Kitchen, you’ll put your skills<br />

and knowledge to the test and gain<br />

confidence in a professional setting.<br />

You will extend your abilities in key<br />

topics required in catering and<br />

hospitality such as professional<br />

cookery, food hygiene, menu<br />

development and costings. As well<br />

as studying essential topics to give<br />

you the edge such as nutrition,<br />

allergies and culinary terms.<br />

Four GCSE grades at 4 or above<br />

including English and maths.<br />

What will I learn?<br />

You will develop a range of<br />

skills to work in a supervisory<br />

role in the hospitality sector.<br />

Customer service is at the heart<br />

of front-of-house operations and<br />

we’ll teach you how to confidently<br />

lead a team and ensure they<br />

give your customers the 5 star<br />

treatment. From the moment<br />

they make the booking to the<br />

way they are greeted on arrival,<br />

we’ll build your leadership skills<br />

and confidence to ensure you<br />

get the best out of your team.<br />

You’ll also get the opportunity<br />

to manage and organise<br />

events and supervise, mentor<br />

and support students on our<br />

Level 1 and 2 courses.<br />

Teamwork, customer service<br />

and good communication are<br />

essential skills in the hospitality<br />

sector and you’ll perfect these<br />

with lots of opportunities to put<br />

them into practice on this course.<br />

What will I learn?<br />

This course will give you the skills<br />

to work at a supervisory level,<br />

as a senior chef or specialise in<br />

a particular field of catering.<br />

You will develop a complex skills<br />

base in the correct methods of<br />

preparing and cooking meat, fish<br />

and poultry dishes using different<br />

styles and your own adaptation<br />

of presentation. This will also<br />

include an extensive variety<br />

of accompaniments such as<br />

vegetables, sauces and garnishes.<br />

In order to give you a broader<br />

transferable skills set you will also<br />

develop your work in a range<br />

of different pastry products<br />

from sweet to savoury. This is<br />

regarded as a must in some<br />

industry establishments.<br />

You’ll have the opportunity to<br />

develop leadership and supervisory<br />

skills as well as building your<br />

knowledge in food hygiene, menu<br />

development and costings.<br />
