Weihnachtsessen Kanarisch<br />
Süßkartoffelpüree für die Engel. Haben sie schon einmal richtig<br />
gutes Kartoffelpüree gegessen? Vollmundig, geschmeidig, buttrig<br />
und mit viel Volumen? Sie lieben Kartoffelpüree, so wie wir? Dann<br />
erklimmen sie den Gipfel des Genusses - den Gipfel so hoch, dass<br />
Ihnen die Engel von der Wolke zuwinken. Probieren sie einmal<br />
keine heimischen Erdäpfel sondern Süßkartoffeln. Sie werden sehen:<br />
das klappt garantiert und ist kinderleicht.<br />
Wenn es auf Gran Canaria festlich zugeht, kommt nicht selten<br />
Carne de Cabra auf den Tisch. Schon die Altkanarier brachten 500<br />
vor Christus Ziegenfleisch auf den Tisch, und die heutigen Ziegen<br />
der Kanaren stammen zum Großteil direkt von der urkanarischen<br />
Rasse Majorera aus Fuerteventura ab. Zicklein und Ziege liefern<br />
viel Eiweiß und ungesättigte Fettsäuren. Der Fettgehalt ist geringer<br />
als bei Schaf und Lamm, und der Geschmack ist wesentlich<br />
feiner und unaufdringlich. Ziegenfleischragout findet man auf<br />
Gran Canaria in so manchem Landgasthof, und zu Weihnachten<br />
ist es eines der typischen Gerichte auf dem Tisch der Canarios.<br />
Probieren sie es zusammen mit unserem herrlichen Süßkartoffelpüree<br />
- das Ragout liefert genügend Sauce zum “pampen” - herrlich.<br />
Zu Weihnachten in jedem kanarischen Haus zu finden sind diese<br />
wunderbaren Teigtaschen, die einen optisch an Maultaschen erinnern.<br />
Allerdings handelt es sich bei den Truchas de Batata um eine<br />
Mehlspeise, welche mit 2 typischen, kanarischen Zutaten gefüllt<br />
sind: Süßkartoffeln und Mandeln. In dem Rezept werden gelbe<br />
Süßkartoffeln angegeben, wer es nicht ganz so süß möchte, kann<br />
auch weiße Batatas nehmen. Also nicht zu viel von der Hauptspeise<br />
essen. Die Truchas sind nämlich ziemlich sättigend.<br />

let’s introduce you to the pinnacle of enjoyment – it is so high that<br />
you will see the angels wink at you. Instead of trying the usual<br />
bulbs try some sweet potatoes. It sure works and it is easy peasy,<br />
you’ll see!<br />
During the holiday season it is not unheard to serve goat meat in<br />
Gran Canaria. In fact, the guanches ate goat meat in 500 B.C. and<br />
even today the Canarian goat descends largely from the original<br />
goat breed Majorero from Fuerteventura. Goats and their babies<br />
have a high protein and unsaturated fatty acids content. The overall<br />
fat level is lower than that of a sheep or lamb and has finer,<br />
more restraint flavour. You can find goat ragout in many Canarian<br />
taverns or at Christmas it is typical dish to be served here.<br />
Try it out with our sweet potato pure – don’t worry the ragout provides<br />
enough sauce – delightful!<br />
On Christmas Eve you can find these lovely pastries in every Canarian<br />
household, they remind you of German maultaschen. Actually,<br />
the truchas are actually flour pastries filled with two typical<br />
Canarian ingredients: sweet potato and almonds. In this recipe<br />
yellow sweet potatoes are used, however if you prefer it less sweet<br />
you can also use white sweet potatoes. So don’t eat too much of<br />
the main course. The truchas are pretty filling.<br />
