Gans in etwas eigenem Fett in der Pfanne<br />
oder Ofen kurz aufknuspern: schnell, saftig,<br />
knusprig.<br />
For the next six months you can eat<br />
your goose daily. Simply, prepare your<br />
goose with some of its fat in a pan or<br />
in the oven until it crisps up. Quick,<br />
juicy, crispy.<br />
Day 2 / Step 3<br />
Die Gans abwaschen, trocken tupfen und<br />
Zimmertemperatur annehmen lassen.<br />
Den Ofen auf 90 Grad aufheizen, nach<br />
Möglichkeit mit einem Ofenthermometer<br />
kontrollieren.Das Fett auf dem Herd im Topf<br />
oder Bräter auf 85 Grad erhitzen. Auch hier<br />
hilft ein Thermometer. Nutzen Sie unbedingt<br />
einen Topf oder Bräter mit hohem Rand und<br />
großem Boden. Die Gänseteile sind groß,<br />
brauchen Platz, und Sie werden nichts zu<br />
lachen haben, wenn sich ein Liter Gänsefett<br />
über den Topfrand ergießt.<br />
Wash the goose, dab until dry and let<br />
it reach room temperature.Preheat<br />
your oven to 90ºC. If you have one,<br />
control the temperature with an oven<br />
thermometer. Heat your fat in the oven<br />
or in a slow cooker and heat to 85ºC, if<br />
available also use your thermometer<br />
here. It’s of utmost importance to use<br />
a pot or oven tray with a high edge and<br />
large surface. The goose pieces are large<br />
and need space. And trust us it’s no fun<br />
if your goose fat spill over the edge.<br />
Step 4<br />
Ein paar Zweige Rosmarin, Lorbeerblätter<br />
und Knoblauchzehen zusammen<br />
mit dem Fleisch im Fett versenken.<br />
Entweder auf dem Herd oder im Backofen<br />
bei ca. 85 Grad 8 Stunden garen.<br />
Add your rosemary twigs,bay leaves,<br />
your garlic cloves to the meat and let<br />
it sink into the fat. Slow cook in your<br />
roaster on the hob or in your oven for<br />
approx 8 hours at 85ºC.<br />
Step 5<br />
FERTIG<br />
Wer jetzt Hunger hat, kann gleich<br />
zuschlagen.<br />
READY<br />
Once it’s done and you’re hungry<br />
right away, you can start to dish out.<br />
Step 6<br />
Besser - viel besser ist aber, die Gänseteile in<br />
Steingut- oder Kunststoffdosen zu schichten<br />
und komplett mit dem Fett zu begießen.<br />
Die Fleischsäfte am Boden sollen nicht<br />
mit - also eine Kelle benutzen.<br />
Nach 2 Wochen ist es dann endlich soweit.<br />

servieren. Hierfür rupfen wir die Gans<br />
nach dem Erhitzen auseinander und<br />
belegen ein krosses Bauernbrot oder<br />
Toast. Ein Klecks Preiselbeermarmelade<br />
oben drauf, und was darf nicht fehlen?<br />
Richtig - die krosse Haut. Die hatten<br />
wir vorher ja entfernt und eingefroren.<br />
Nachdem die Haut bei 170-180 Grad im<br />
Ofen knusprig gebacken ist, schneiden<br />
wir sie in Vierecke und garnieren das Brot.<br />
Voilà<br />
Be as it may, we want to serve puller<br />
goose. Use the same procedure but<br />
after crisping your meat tear it apart<br />
with a fork and add to your toast or<br />
French bread. Add some cranberry jam<br />
and guess what’s missing? Don’t forget<br />
your skin. Remember, we removed<br />
and froze it earlier. Just place it on<br />
a baking sheet in the oven one hour<br />
before serving to make sure it is<br />
crunchy. Once ready cut your skins<br />
into squares and garnish your toast.<br />
