esult, tourism practitioners, policy makers and academics are today keenly pursu<strong>in</strong>g<br />

alternatives to conventional tourism – alternatives that yield maximum benefits while<br />

creat<strong>in</strong>g m<strong>in</strong>imum negative impacts (Trunfio et al., 2006). As Poon (1993) notes, “Mass<br />

tourism has brought social, cultural, economic and environmental havoc <strong>in</strong> its wake, and<br />

it is mass tourism practices that must be radically changed to br<strong>in</strong>g <strong>in</strong> the new” (p. 3).<br />

In response to these warn<strong>in</strong>gs, and as a solution to the detrimental impacts associated<br />

with tourism, the concept <strong>of</strong> susta<strong>in</strong>able tourism emerged <strong>in</strong> the 1980s, becom<strong>in</strong>g “the<br />

buzz word <strong>of</strong> the 1990s” (Sharpley, 1999, p. 299). Recent tourism research focuses a<br />

great deal <strong>of</strong> attention on susta<strong>in</strong>able tourism (Alt<strong>in</strong>ay, Var, H<strong>in</strong>es, & Hussa<strong>in</strong>, 2007;<br />

Tosun, 2001; Tzschentke, Kirk, & Lynch, 2008), emphasiz<strong>in</strong>g the significant<br />

contributions to the quality <strong>of</strong> the environment and economic well-be<strong>in</strong>g <strong>of</strong> the host<br />

community that tourism can provide while still giv<strong>in</strong>g a high-quality visitor experience<br />

(Lim & McAleer, 2005).<br />

This study seeks to identify the role that local food can play as a tool <strong>in</strong> tourism<br />

promotion and as a means to enhance dest<strong>in</strong>ation competitiveness, <strong>in</strong>crease tourism<br />

yield and contribute to more susta<strong>in</strong>able forms <strong>of</strong> economic development. <strong>The</strong> focus <strong>of</strong><br />

the research is the Republic <strong>of</strong> <strong>Maldives</strong>. This country has become a successful tourist<br />

dest<strong>in</strong>ation by promot<strong>in</strong>g its natural environment, but with few differentiat<strong>in</strong>g factors,<br />

the <strong>Maldives</strong>’ tourism product seems vulnerable to other compet<strong>in</strong>g countries with<br />

similar products, such as the Seychelles or Mauritius (<strong>The</strong> World Bank, 2006).<br />

<strong>Maldives</strong>’ tourism is dependent on the environment, yet the country’s fragile ecosystem<br />

is threatened by global warm<strong>in</strong>g and natural disasters (Conrady & Bakan, 2008).<br />

<strong>Tourism</strong> plays a key role <strong>in</strong> the country’s economic development, yet there is leakage <strong>of</strong><br />

a large percentage <strong>of</strong> the benefits generated from tourism. For example, the country has<br />

limited skilled labour, and as a result much <strong>of</strong> the wages paid are repatriated by the<br />

expatriate labour force; similarly, there is leakage through imports.<br />

<strong>Tourism</strong> <strong>in</strong> the <strong>Maldives</strong> has been developed under the unique concept <strong>of</strong> one-island-<br />

one-resort. While this concept was successful <strong>in</strong> provid<strong>in</strong>g privacy for tourists and was<br />

believed by policy makers to elim<strong>in</strong>ate much <strong>of</strong> the negative socio-cultural impacts <strong>of</strong><br />

tourism (MTCA, 2008a), the tourist enclaves restricted tourism multiplier effects and<br />

community participation <strong>in</strong> tourism (Shareef & McAleer, 2007). This study seeks to<br />

provide <strong>in</strong>formation that can assist <strong>Maldives</strong> <strong>in</strong> effective market<strong>in</strong>g, enhanc<strong>in</strong>g product<br />
