Curries made with local vegetables and fish are another type <strong>of</strong> food identified as<br />

hav<strong>in</strong>g potential to l<strong>in</strong>k to tourism. Curries are a major part <strong>of</strong> local cuis<strong>in</strong>e (Figure<br />

6.17). Curries are served with rice at lunch and d<strong>in</strong>ner and with roshi as breakfast. <strong>The</strong>re<br />

is a large variety <strong>of</strong> curries <strong>in</strong> Maldivian cuis<strong>in</strong>e that are made from tubers, pumpk<strong>in</strong>,<br />

bread fruit (Figure 6.18) fish, meat and other vegetables and seafood. Chicken curry is<br />

one <strong>of</strong> the ma<strong>in</strong> dishes that adorn local d<strong>in</strong>ner tables on special occasions.<br />
