etter positioned to access produce grown <strong>in</strong> those islands than the bus<strong>in</strong>esses that are<br />

further away. For example, islands with<strong>in</strong> close proximity take a few hours by<br />

mechanised boats to travel between each other. Mechanised boats are the usual mode<br />

for <strong>in</strong>ter island transport. However, travel time between atolls and far flung islands<br />

could take between one to two or more days depend<strong>in</strong>g on weather conditions.<br />

Consider<strong>in</strong>g the fact that every island <strong>in</strong> the <strong>Maldives</strong> has coconut groves and coconut is<br />

a ma<strong>in</strong> <strong>in</strong>gredient used <strong>in</strong> almost all Maldivian food, the number <strong>of</strong> operators that work<br />

with coconut growers is less than expected (n=3 or 25%). In addition, it has been<br />

established earlier from the analysis <strong>of</strong> market<strong>in</strong>g materials that coconuts are among the<br />

most frequently featured local products. <strong>The</strong> limited number <strong>of</strong> operators that are<br />

work<strong>in</strong>g with coconut growers is an <strong>in</strong>dication that not much local food is used <strong>in</strong> the<br />

resorts and hotels.<br />

<strong>The</strong> large majority <strong>of</strong> operators (n=11 or 91.7%) also feel that tourists are <strong>in</strong>terested <strong>in</strong><br />

consum<strong>in</strong>g Maldivian food and that “tuna fish is very popular” among tourists. <strong>The</strong><br />

perceived popularity <strong>of</strong> seafood and tuna among tourists certa<strong>in</strong>ly supports the argument<br />

that they are <strong>in</strong>terested <strong>in</strong> local cuis<strong>in</strong>e. Seafood was rated by operators as the second<br />

most important food <strong>in</strong> market<strong>in</strong>g. Seafood, fish and fish products are also given as the<br />

first choice <strong>in</strong> the type <strong>of</strong> food that has the highest potential to be developed for tourists.<br />

<strong>The</strong> expert survey also po<strong>in</strong>t to fresh fish and seafood as hav<strong>in</strong>g great potential to l<strong>in</strong>k<br />

tourism and local food. A policy maker <strong>in</strong> the tourism <strong>in</strong>dustry stated:<br />

I am a firm believer that local food could be used as a market<strong>in</strong>g tool.<br />

<strong>The</strong>re is abundant seafood here and why not promote this dest<strong>in</strong>ation as<br />

is famous for with the crystal clear water, milky white sand, the sun and<br />

add it with the best seafood dest<strong>in</strong>ation? Instead <strong>of</strong> sun, sand and sea<br />

(SSS) we should add that additional S (SSS+S) for seafood.<br />

<strong>The</strong> operator survey revealed that an opportunity exists to l<strong>in</strong>k local food and tourism.<br />

All respondents except one agreed that more local food could be used <strong>in</strong> their<br />

bus<strong>in</strong>esses. An operator noted that there is a need to <strong>in</strong>troduce more varieties <strong>of</strong> local<br />

food, as at present “it is only grilled fish” that is available. Tuna and other fish form a<br />

fundamental part <strong>of</strong> Maldivian diet and there are a large variety <strong>of</strong> local dishes made<br />

with fish; local food at tourist bus<strong>in</strong>esses need not be limited to only grilled fish.<br />

All the operator respondents believed that closer l<strong>in</strong>ks between tourism and other<br />

sectors could be successfully created through local food. As stated by one <strong>of</strong> the<br />
