2.1.6.4 Molasses quality<br />

Changes in the quality of molasses are most interesting: extraneous matter decreases the<br />

Clerget purity of molasses. The effect is most marked with cane tops (Fig 2.15), most<br />

probably because of their higher content of reducing sugars. Both cane tops and green<br />

leaves exhibit quadratic curve rather than linear relationship as do dry leaves. However,<br />

cane tops increase the mass of molasses produced % cane (Fig 2.16) with the result that the<br />

loss of sucrose in molasses is high in the case of cane tops (Fig 2.17).<br />
