Lesson 6 Materials IT’S A STRETCH INGREDIENTS • 250 g packet plain digestive biscuits • 150 g butter, melted • 3 teaspoons powdered gelatine (or gelatine substitute) • 1 1 2 tablespoons boiling water • 500 g cream cheese, softened • 130 g caster sugar • 2 teaspoons vanilla essence • 300 ml double cream, whipped • Hulled and halved strawberries, to decorate METHOD 1. The teacher or adult should pre-prepare the gelatine mix by sprinkling gelatine over boiling water in a heatproof jug. Whisk with a fork until gelatine has dissolved. Set aside to cool and use later. 2. Ask some pupils to grease the cake tin using butter and a paper towel. Emphasise the action of squashing the butter onto the cake tin. 3. Place biscuits into several sandwich bags for pupils to crush into fine crumbs. Emphasise the crushing and ask pupils what action they are using. 4. Add butter to a small bowl and melt it in the microwave. Ask pupils how the butter has been changed. 5. Place biscuits into a large bowl and add the melted butter. Stir until combined. Reinforce how the biscuit crumbs changed when the butter was added. Ask some pupils to press the biscuit mixture over base and sides of prepared cake tin. Refrigerate for ten minutes until it goes hard. Ask pupils how the biscuit/butter mixture changed in the refrigerator. 120 Science: A STEM APPROACH No-bake Cheesecake Recipe EQUIPMENT • 20 cm-round (base) springform cake tin per group • plastic knives • electric mixer • jugs • forks • spatula • paper towel • rolling pin or similar for crushing • various bowls • sandwich bags • microwave • refrigerator 6. Remind pupils of safety and ask some to use an electric mixer to beat the cream cheese, sugar and vanilla until light and fluffy. Gradually beat in gelatine mixture until combined. Ask pupils to describe what action the mixer is doing (beating) and how it is changing the ingredients. 7. Ask different pupils to whip the cream in a bowl and observe how the cream changes from runny to able to form soft peaks. Reinforce this action as ‘whipping’. 8. Ask other pupils to fold the whipped cream into the cream cheese mix, using a spatula. Demonstrate how it is to be done if necessary. Describe the action as folding and ensure pupils observe any changes to the mixture. 9. Ask pupils to pour the mixture into the prepared cake tin and level the top with a spatula. Cover. Refrigerate overnight or until set. Ask pupils how they think the mixture will change after being cooled. 10. Meanwhile, some other pupils can use the plastic knives to halve/slice the strawberries, ready to decorate the cheesecake after it has set. Ask pupils to describe how they are changing the strawberries. Store the sliced strawberries in the fridge until ready to serve.
