Coconut Mint Green Monster<br />
1 cup coconut water<br />
1 handful green leaf lettuce (romaine is wonderful)<br />
5 - 6 sprigs mint<br />
juice of 1 lime<br />
1/2 cup coconut meat<br />
3 dates, pitted or 1 tbsp of honey<br />
Blend ingredients together and enjoy! Coconut contains beneficial essential fats and has antiinflammatory<br />
properties.<br />
Costa Rican Smoothie<br />
1 cup papaya<br />
1 handful cilantro<br />
1/2 - 1 cup water<br />
While I was in Costa Rica I discovered this smoothie at a restaurant we were eating at. It was<br />
one of the best smoothies I have ever had. You could also trade out the papaya <strong>for</strong> pineapple. If<br />
you can't find the fruit fresh replace it with frozen fruit.<br />
