La variante di tonno<br />
A Cetara il ristorante Al Convento ha lanciato da qualche anno la<br />
variante con il tonno. È una genovese più leggera, ripresa anche<br />
da Franco Tammaro del San Pietro, e che sta diffondendosi fra i<br />
ristoranti della Costa. Come dire, si mangia con meno senso di<br />
colpa!<br />
Ingredienti per quattro persone: 320 gr di ziti lunghi spezzati, una<br />
carota, una costa di sedano, 1,5 kg di cipolle bianche, 300 gr di<br />
filetto di tonno fresco, abbondante olio extravergine di oliva.<br />
Tritare la carota e il sedano e farli rosolare nell’olio pochi minuti,<br />
aggiungere le cipolle tagliate a fettine sottili. Lasciare stufare a<br />
fuoco molto lento per circa due ore, se dovesse asciugarsi troppo<br />
aggiungere del brodo vegetale bollente (sedano, carota e cipolla).<br />
Il composto sarà cotto quando si otterrà una crema di cipolle.<br />
Allora versarvi il filetto di tonno tagliato a dadini piuttosto grossi<br />
e lasciarlo cuocere a fuoco leggermente vivace per cinque minuti,<br />
salare leggermente. Spezzare gli ziti lunghi in quattro, lessarli in<br />
abbondante acqua salata e scolarli bene al dente. Saltarli pochissimi<br />
minuti in un padellone con il sugo di cipolle e tonno. Si i può<br />
aggiungere una spolveratina di formaggio.<br />
The tuna variation<br />
The Al Convento restaurant in Cetara launched a tuna<br />
variation some years ago. It is a lighter Genovese, an idea<br />
that has also been taken up by Franco Tammaro of the<br />
San Pietro restaurant, and is now spreading through the<br />
restaurants on the coast. It’s as if to say you can eat it<br />
without so much guilt!<br />
Ingredients for four people: 320 g. long zita pasta broken<br />
into pieces, a carrot, a stick of celery, 1.5 kg of white<br />
onions, 300 g. fresh tuna fillet, plenty of extra virgin olive<br />
oil.<br />
Chop the carrot and celery and fry in the oil for a few minutes,<br />
then add the thinly-sliced onion. Allow to stew over a very<br />
gentle heat for about two hours; if the mixture dries out, add<br />
some boiling vegetable stock (based on celery, carrot and<br />
onion). The mixture is cooked when it has become an onion<br />
cream. Then add the tuna fillet cut into fairly large cubes, leave<br />
to cook over a moderate heat for five minutes and then add a<br />
little salt. Break the long zita pasta into four pieces, cook in<br />
plenty of boiling salted water and drain<br />

simply pasta with Genovese sauce, made<br />
from onions and meat cooked very slowly,<br />
until the sauce is reduced to a dense,<br />
