4:45 P.M.— Bourbon Barrel Max Stout 2011: “Maximilian Stout” is our<br />

massively flavorful Russian Imperial stout, not brewed since Spring of 2011. This<br />

version was aged in Heaven Hill bourbon barrels for more than 12 months! Approx.<br />

pleasantly hoppy like a Bohemian Pils, but made with the best English hops <strong>and</strong><br />

Honey Lager: American style light lager adjuncted with honey rather than corn or<br />

Raspberry Weiss: American style weiss beer with 200 lbs of fresh raspberries added<br />

Mead: Every 5 years we brew a mead for our anniversary, this is the 25th anniversary<br />

mead, light <strong>and</strong> effervescent, technically a metheglyn with very light spicing of<br />

cinnamon <strong>and</strong> orange peel.<br />

Irish Whiskey Stout: Dark Irish ale aged on wood <strong>and</strong> whiskey<br />

Mischief: Get into a little mischief! 11.5% ABV. A frizzante, (lightly sparkled) cranberry<br />

mead, blush style, semi-sweet.<br />

My Faire Lady: 6.5% ABV. A lighter, traditional mead done A’Frizzante (lightly<br />

sparkled), with a lower alcohol content so you can enjoy it all day.<br />

Kwench Blue, Kwench Red <strong>and</strong> Kwench Black: 6.5% ABV. Light sparkling<br />

true wine coolers done in blueberry, raspberry <strong>and</strong> black currant. Fizzy, full of flavor,<br />

<strong>and</strong> deliciously naughty!<br />

Hard Apple Cider : 4.5%-5.0% ABV. Just fresh pressed, apple cider fermented<br />

light, crisp, <strong>and</strong> bubbly. Very refreshing!<br />

Paddy Pale Ale: ABV 5.4%. American-style pale ale celebrates the blending of<br />

intense hop character with a crisp, malty mouthfeel.<br />

Kainz Brau: ABV 4.4%. This Bohemian-style pilsner has a nice floral aroma followed<br />

by a crisp <strong>and</strong> clean flavor with a dry finish.<br />

Jack Stout: ABV 6.5%. A full-bodied Oatmeal Stout with five different roasted malts<br />

<strong>and</strong> a thick, creamy texture. Hints of chocolate <strong>and</strong> espresso fill the profile of this<br />

smooth stout.<br />

Hop Slayer Double IPA: ABV 8%. Hops are the story here, <strong>and</strong> the story is big!<br />

Five different hop varieties accent this smooth IP Bitterness hits you up front, <strong>and</strong><br />

then the citrus character follows along with slight earthiness. Malt was not forgotten<br />

to balance this beast with just the right amount of sweetness.<br />

Pumpkin Ale: ABV 5.4%. Celebrate the harvest season with our classic autumnal brew.<br />

This crisp ale brewed with spices has hints of pumpkin pie <strong>and</strong> a rich, malty aroma<br />

Established in 2002. <strong>2012</strong> is an important year for us, we celebrated our 10th<br />

anniversary of opening & started to bottle the 1st of our beers…Rustic Red!<br />

Rustic Red is the 1st bottled microbrew in the Dells & is available for purchase<br />

at either Moosejaw Pizza or our sister restaurant Buffalo Phil’s.<br />

Dells Brewing Co.’s Brewmaster Jamie Baertsch & her assistant Mike Balda<br />

use our 15 barrel Bohemian brewing system to brew & serve 10 different styles<br />

of h<strong>and</strong>-crafted beers & 3 gourmet sodas. 6 of those beers (Honey Ale, Golden<br />

Ale, Rustic Red, Raspberry Cream Ale, Dells Pilsner & Kilbourn Hop Ale) are<br />

available year-round. We then have 4 more taps that rotate between selected<br />

seasonal & specialty beers such as the Apple Ale, Weissbier, English Brown Ale,<br />

Sweet Cherry Ale, Oktoberfest, Oak Barrel Aged Porter, St<strong>and</strong> Rock Bock, IPA,<br />

Milk Stout & Winter Warmer. Within the first year of brewing, the Dunkel Lager<br />

attained a silver medal in the European-Style Dark/Munchner Dunkel category<br />

at the 2002 Great American Beer Festival. This was followed up in 2003 with<br />

another silver medal this time in the Bock beer-style category for Blonde<br />

Bock. We returned to the GABF in 2008 & brought home another silver medal<br />

in the Scottish-Style Ale category for our Rustic Red!.<br />

Dells Brewing Co. is housed on the third level of Moosejaw Pizza which is<br />

centrally located between Chicago & Minneapolis in the heart of Wisconsin<br />

Dells, Wisconsin. Moosejaw seats 500+ patrons within the three levels of the<br />

full-service restaurant which specializes in fresh, piping hot pizza! Each level<br />

has its own unique appeal. The Brewery Bar overlooks just that, the brewery!<br />

The main floor has numerous game mounts, a massive fireplace & oldfashioned<br />

photos of its namesake, Moose Jaw, Saskatchewan. The Rathskellar,<br />

Moosejaw’s lower level, bar is complete with premium sports viewing, pool<br />

table, dart board, arcade games & a large party room available for private<br />

celebrations!<br />

Wyatt’s Barleywine: ABV 11%, OG 1.101 <strong>and</strong> IBU 50. This is an English Style<br />

Barleywine. My version of this style has multi-layered malt flavors ranging from<br />

bready <strong>and</strong> biscuit, to deep toast, dark fruit, toffee, molasses, <strong>and</strong> a dried-fruit<br />

character. It has a richly high malty sweetness on the palate. This is a very special<br />

beer for me; this is the beer I brewed for my son Wyatt to celebrate his birth. It was<br />

brewed with 8 different types of barley <strong>and</strong> 3 specialty malts <strong>and</strong> it’s 11% ABV (his<br />

birthday was 8/3/2011). This also happens to be the beer we are celebrating our 10th<br />

anniversary at Moosejaw with. I hope you will stop in <strong>and</strong> celebrate with us.<br />

Apricot Ale: ABV 5.1%, OG 1.045, <strong>and</strong> IBU 10. This is an unfiltered fruit ale. This<br />

is a straight forward fruit ale brewed with a golden blonde base beer recipe <strong>and</strong><br />

fermented on 5 serrate additions with apricot puree. It is light in body with a bright<br />

tangy flavor of the apricots. It is not hoppy or bitter.<br />

Kilbourn Hop Ale: ABV 5.5%, OG 1.052, <strong>and</strong> IBU 35. This is an American Amber/Red<br />

Ale. This beer has a malty backbone balanced by a moderate hoppy flavor <strong>and</strong> aroma.<br />

Raspberry Ale: ABV 4.5%, OG 1.044, <strong>and</strong> IBU 10. This is an unfiltered fruit ale. This<br />

is a straight forward fruit ale brewed with a golden blonde base beer recipe <strong>and</strong><br />

fermented on 5 serrate additions with raspberry puree. It is light in body with a<br />

bright tangy flavor of the raspberries. It is not hoppy or bitter.<br />
