day there will be signs along our highways stating “Craft Brewery Trail”,<br />
similar to the “Bourbon Trail” in Kentucky or the “Whisky Trail” in Scotl<strong>and</strong>.<br />
Figure eight is a knot used in sailing <strong>and</strong> rock climbing. Aside from good<br />
beer, rock climbing is one of our passions <strong>and</strong> this knot is used to tie the<br />
safety rope to the climber’s harness. An aesthetically pleasing knot, when<br />
turned on its side it also looks a bit like the symbol for infinity. So sticking<br />
with our passions, we hope to take Figure Eight Brewing to infinity <strong>and</strong><br />
beyond! (Or at least to the point where we are producing some very tasty<br />
<strong>and</strong> satisfying brews :-)<br />
Our philosophy is simple. Life is short <strong>and</strong> one never knows how long<br />
each of us has. If we wait too long to pursue our dreams, then we may never<br />
have the opportunity to do so. As John Barrymore once said - “A man is<br />
not old until regrets take the place of dreams.”. Taking on the challenges of<br />
pursuing our dreams often begs the question of why? When asked why he<br />
climbed mountains, Mallory once said - “So, if you cannot underst<strong>and</strong> that<br />
there is something in man which responds to the challenge of this mountain<br />
<strong>and</strong> goes out to meet it, that the struggle is the struggle of life itself, upward<br />
<strong>and</strong> forever upward, then you won’t see why we go. What we get from<br />
this adventure is just sheer joy. And joy is, after all, the end of life. We do<br />
not live to eat <strong>and</strong> make money. We eat <strong>and</strong> make money to be able to enjoy<br />
life. That is what life means <strong>and</strong> what life is for.”<br />
So we here at Figure Eight Brewing hope that everyone is enjoying life<br />
<strong>and</strong> that our brews might further that goal - cheers!<br />
Ro Shampo: ABV: 7.5 % IBU: 89. Ro Shampo (Imperial Red Ale) - brewed with four<br />
varieties of hops <strong>and</strong> a blend of 6 malts, this is well balanced with a nose that evokes<br />
thoughts of toffee, fine whisky, <strong>and</strong> cotton c<strong>and</strong>y while finishing with the satisfaction<br />
of a taffy apple on a warm autumnal day (available year round)<br />
Where Lizards Dare: ABV: 6 % IBU: 84. Where Lizards Dare - a single India Pale Ale<br />
created from a simple blend of malts <strong>and</strong> an overabundance of centennial bitters,<br />
finished with cascade <strong>and</strong> more centennial for a crisp, citrus hoppy taste (available<br />
year round)<br />
Offwidth: ABV: 8 % IBU: 83. Offwidth - a Double Pale Ale made with a blend of six<br />
grains, amarillo, centennial, <strong>and</strong> williamette hops yielding an upfront bitterness that<br />
rides through to the end with a light citrus nose (available year round)<br />
Lost Saint: ABV: 6.5 % IBU: 29. Lost Saint - this Saison Ale (also known as a<br />
farmhouse style) features crisp spices both in taste <strong>and</strong> nose, a traditional after work<br />
brew for the field workers on the farms of Belgium. Pair well with a salad <strong>and</strong> red<br />
vinaigrette dressing (seasonal)<br />
Pirate Pils: ABV: 6 % IBU: 36. Pirate’s Pils - a classic Bohemian pils featuring German<br />
<strong>and</strong> Czechhops (seasonal)<br />

Chicago’s Finch’s Beer Company rolled out it’s first brews in 2011. Our three<br />
production beers include Golden Wing Blonde Ale, Cut Throat Pale Ale, <strong>and</strong><br />
Threadless IPA. We are constantly experimenting with numerous styles while<br />
providing our unique twist on traditional favorites. For more information about<br />

Golden Wing Blonde Ale: ABV: 5.0%, OG: 12.0, IBU: 30. Deep gold in color, we<br />
use both carapils <strong>and</strong> aromatic malts to create a moderately malty backbone to this<br />
beer. Generous amounts of Northern Brewer hops create an initial bitter bite than<br />
typical blonde ales. Cascade finishes this beer with notes of fruitiness/citrus, while<br />
finishing dry.<br />
Cut Throat Pale Ale: ABV: 5.6%, OG: 14.0, IBU: 40. Caramel, kiln amber, <strong>and</strong> wheat<br />
malts make up the malt bill for this unique pale ale. How is it unique you may ask?<br />
We toss in some sweet orange peel in the final days of fermentation along with more<br />
Cascade hops to create a subtle citrus finish.<br />
Threadless IPA: ABV: 6.0%, OG: 15.0, IBU: 80. Our Threadless/Finch’s collaboration<br />
is our take on an American classic. We use a variety of hops, but the primary one is<br />
Columbus lending a piney flavor to this beer. We dry hop with Galena, Summit, <strong>and</strong><br />
more Columbus. This is a sessionable IPA.<br />

Altus Gravitas Barleywine: ABV: 9.0%, OG: 22.4, IBU: 95. Altus Gravitas<br />
translates to “High Seriousness”. Copper in color. Aromas of citrus, plum, <strong>and</strong> passion<br />
fruit dominate. Syrupy thickness coats the tongue along with fruity esters <strong>and</strong><br />
alcohol bite. This beer is hopped from the mash all the way through to dry hopping<br />
with only one variety of hop in large quantities: Cascade.<br />
Toasted Summer Kolsch Style Ale: ABV: 5.5%, OG: 12.6, IBU: 16.5. A<br />
collaboration between Finch’s Beer Co. <strong>and</strong> City Provisions Deli in Chicago. Using<br />
the traditional German Kolsch style as a base, we have turned this beer on it’s head<br />
by using Cascade hops that have been toasted <strong>and</strong> then added to the beer prior to<br />
packaging. We didn’t stop there! We then added applewood to the conditioning tank<br />
to bring in a subtle, apple, pear-like flavor while still keeping the dry finish of a true<br />
kolsch.<br />
Fascist Pig Imperial Red: ABV: 8.0%, OG: 18.2, IBU: 72. Fascist Pig is a malt heavy<br />
American ale that was brewed with a generous amount of caramel malt <strong>and</strong> a touch<br />
of rye. This imparts a sweet dried fruit quality with a slight tanginess. The hop profile of<br />
Zythos <strong>and</strong> Palisade is a marriage of citrus, strong in this beer’s aroma, <strong>and</strong> rich earth<br />
<strong>and</strong> herb notes that are most pronounced mid-sip as an element of flavor. Although this<br />
ale weighs in at a hefty 8% ABV it was crafted to maintain a body <strong>and</strong> mouthfeel full<br />
enough to compliment its potency.<br />
Secret Stache Stout: ABV: 5.7%, OG: 19.0, IBU: 25. Secret Stache Stout is a robust<br />
stout. The specialty ingredients, vanilla bean <strong>and</strong> lactose, lend to it’s complexity <strong>and</strong><br />
full flavor. Heaps of chocolate malt give the beer its color as well as its chocolate <strong>and</strong><br />
coffee notes. Torrified wheat is used for additional body <strong>and</strong> head retention. The beer<br />
was hopped three times with Fuggles <strong>and</strong> the vanilla beans were thrown directly into<br />
the fermenter.<br />
Barrel Aged Secret Stache – “Dirty Sanchez” <strong>and</strong> “Sanchez<br />
Stache”: ABV: 5.3% for both. These two different versions of our Secret Stache<br />
Stout will only be available here in limited quantities at the Great Taste! Aged in Koval<br />
barrels for 6 months. “Dirty Sanchez” is aged with ancho chilies in the barrel adding<br />
a spicy kick <strong>and</strong> smokiness, while “Sanchez Stache” is aged with local coffee beans<br />
for an intense coffee flavor. We hope you enjoy them!<br />

Established 1995. The Brewhouse is located on the shores of Lake Superior<br />
in the historic Fitger’s Brewery which stopped production in 1972. Our 10<br />
BBL brewery produces 3000 bbls per year with more than 80 different beers<br />
annually on 40 tap h<strong>and</strong>les at our 5 Duluth locations: The Brewhouse, Red Star<br />
Lounge, The Burrito Union, Tycoons Alehouse <strong>and</strong> The Rathskeller. We feature<br />
a full bar, outdoor seating, generous happy hours, <strong>and</strong> late night dining. Also<br />
available: cask ale <strong>and</strong> growlers in glass or nalgene version. Guided tours are<br />

Superior Trail IPA: ABV: 6.5%, OG: 15.8, IBU: 88. Superior Trail IPA is a hop-forward<br />
American IPA. It has big broad hop aromas in the nose from American hops with a<br />
rich bready malt middle. Tropical fruit flavors <strong>and</strong> aromas are derived from the use of<br />
Citra <strong>and</strong> El Dorado hops.<br />
Timmy’s Edelstoff: ABV: 5.1%, OG: 13.3, IBU: 23. Timmy’s Edelstoff is an Export<br />
Helles that is named after Augustiner’s fine Bavarian Helles. Our Master Brewer Dave<br />
<strong>and</strong> owner Tim couldn’t get enough of this beer on a recent trip to Munich. Timmy’s is<br />
a thirst quenching light lager with a malt forward profile <strong>and</strong> a balanced smoothness.<br />
India Brown Ale: ABV: 7.2%, OG: 17.0, IBU: 90. India Brown Ale is a high alcohol<br />
brown ale hopped up to IPA levels. A variety of American hops are used in IBA: Zythos,<br />
Vanguard, Warrior <strong>and</strong> Columbus. Malty notes of caramel are offset nicely by the hop<br />
bitterness, enjoy!<br />
Big Boat Oatmeal Stout: ABV: 6.6%, OG: 16.6, IBU: 45. Big Boat Oatmeal Stout is<br />
one of our year-round st<strong>and</strong>ards. Big Boat is large in body <strong>and</strong> a beautiful pitch black<br />
in the glass. Notes of dark chocolate <strong>and</strong> coffee are balanced by English hops. This<br />
beer is nitrogenized for a smooth, velvety pour.<br />
Apricot Wheat: ABV: 4.9%, OG: 11.3, IBU: 13. Apricot Wheat is another of our yearround<br />
st<strong>and</strong>ards. It is a marriage of an American Wheat ale with apricot juice. The<br />
spicy wheat balances the fruit perfectly. Apricot Wheat is a light-bodied beer with a<br />
crisp finish.<br />
Breakwater Wit: ABV: 5.4%, OG: 12.9, IBU: 15. Breakwater White is a Belgian-style Wit<br />
beer brewed with cori<strong>and</strong>er <strong>and</strong> orange peel. The white name comes from the fact<br />
that unmalted wheat is used <strong>and</strong> creates a very hazy appearance to the beer. It is<br />
very light <strong>and</strong> refreshing, we call it summer in a glass!<br />
Dread Pirate Dunkelweizen: ABV: 5.3%, OG: 13.0, IBU: 22. Dunkelweizens are<br />
slightly darker versions of the more popular Hefeweizen style. Dread Pirate has fruity<br />
banana esters <strong>and</strong> clove flavors that are produced by the German wheat yeast we<br />
