Founded in 2000, the O’Fallon Brewery produced <strong>and</strong> sold 6,000 barrels in<br />

2011 <strong>and</strong> expects continued growth in <strong>2012</strong>. O’Fallon brews five everyday<br />

beers: O’Fallon 5-Day IPA, O’Fallon Wheach, O’Fallon Hemp Hop Rye, O’Fallon<br />

Smoked Porter (2004 GABF® Gold Medal in the smoked beer category) <strong>and</strong><br />

O’Fallon Gold. O’Fallon is also known for its seasonal beers, including O’Fallon<br />

Pumpkin, O’Fallon Cherry Chocolate <strong>and</strong> O’Fallon Black Hemp.<br />

Belgian Dark Strong - We brewed this Belgian dark ale (ABV: 10%,<br />

SRM: 20, IBU: 42) in July, 2010 <strong>and</strong> transferred it several weeks later into freshly<br />

drained Port barrels from Mount Pleasant Winery (Augusta, MO). For the next 11<br />

months the beer worked in <strong>and</strong> out of the French oak barrels as the temperature in<br />

the brewery fluctuated with the seasons. In June, 2011 we bottled the beer <strong>and</strong> put it<br />

aside to allow the flavors of the wood <strong>and</strong> the beer to marry <strong>and</strong> mellow. The result is<br />

spicy-sweet with hints of raisin <strong>and</strong> caramel that mingle with the dark fruit notes <strong>and</strong><br />

oak from the barrels.<br />

5 Day IPA: (6.1% ABV, 66 IBUs) We “dry-hop” this American Style India Pale Ale by<br />

adding hops so the beer rests on top of the hops for five extra days! Brewed with<br />

seven grains <strong>and</strong> three domestic hop variet- ies. Malty sweetness up front with big<br />

cascade hop in the finish -- a wonderfully drinkable IPA! Winner of Riverfront Times<br />

2008 Best Beer in St. Louis.<br />

Wheac: (5.1% ABV, 7 IBUs) Try this smooth, clean wheat beer with a touch of peach.<br />

O’Fallon Wheach is refreshing, crisp <strong>and</strong> wonderully drinkable. Winner of Riverfront<br />

Times 2007 Best Beer in St. Louis.<br />

Hemp Hop Ry: (5.5% ABV, 25 IBUs) This smooth amber ale uses toasted hemp seed<br />

to create a nutty flavor in the finish that compliments the rye <strong>and</strong> hops (a botanical<br />

cousin to hemp). The wide assortment of fla- vors harmonize, creating a<br />

uniquely smooth <strong>and</strong> flavorful beer!<br />

Kite Tail - O’Fallon Kite Tail: (4.5% ABV, IBU’s: 10.4) Light-bodied <strong>and</strong> refresh- ing<br />

this beer is based on the Cream Ale style...an origi- nal American beer modeled after<br />

the light lagers of its time. A subtle tartness adds to the crisp finish of the beer <strong>and</strong><br />

makes for a great summer quencher. Available in April.<br />

Established 2007. O’so Brewing has completed our expansion into a new<br />

facility in Plover, Exit 153, just off I-39 <strong>and</strong> Hwy. B. We hope to finish <strong>2012</strong> at<br />

5000 bbls, so we are still relatively small, but we are producing more of our<br />

fun beers in larger quantities, playing with wood aging <strong>and</strong> sours. We also<br />

added the O’so Tap house with 40 rotating Wisconsin beers on tap, connected<br />

to the brewery, <strong>and</strong> still connected to our home brew shop, Point Brew Supply.<br />

We are hoping to build not only our br<strong>and</strong>, but “Wisconsin Craft Beer” as a<br />

br<strong>and</strong>. Stop by our booth <strong>and</strong> enjoy a plethora of fun things we have been<br />

Hop Whoopin: 6.9% ABV, 1.066 OG / 16.5 P, 95 IBU’s. Hop Whoopin delivers up<br />

freakish goodness in a lopsided hop bomb. Don’t ask the IBU’s, try the IBU’s (95<br />

professionally analyzed @ White Labs). Smell the mixed bouquet of citrus <strong>and</strong> pine<br />

before unleashing the bitter terror. Your tongue will never forgive you!<br />

O-toberfest: 6.4% ABV, 1.066 OG / 16.5 P, 20 IBU’s. This O-toberfest is a malty late<br />

summer / early fall classic beer. This beer has been brewed as a true lager <strong>and</strong> will have<br />

a BIG presence in Door County for the year end festivals, again, this season!<br />

Dank: 7.8% ABV, 1.086 OG / 21.5 P, 52 IBU’s. Massive Imperial Red ale fermented on<br />

br<strong>and</strong>ied oak with Scottish ale yeast. The huge additions of West Coast hops give this<br />

beast balance; served best in a snifter on a cold winter’s night.<br />

Dominator Dopplebock: 8.2% ABV, 1.090 OG / 22.5 P, 47 IBU’s. Huge malty<br />

Doppelbock dubbed the ‘Hoppelbock’ because of its strong noble hop finish.<br />

BamRique: 5.4 % ABV, 1.062 OG / 15.5 P, 26 IBU’s. Part of our “one off” series of<br />

beers, this Bamburg style lager was made with beech wood smoked German malts.<br />

Enjoy the subtle smoky sweetness with a clean finish.<br />

Lupulin Maximus: 8.9 % ABV, 1.086 OG / 21.5 P, 74 IBU’s. The second you open this<br />

bottle there is no mistaking that this is not your average IIPA. Massive hop additions<br />

of the most obnoxious breeds put this taste bud burner in a league all its own. Our<br />

bet is that you will think it is O’so Freakishly good!<br />

3rd Wheel: 5.4 % ABV, 1.052 OG / 13.3 P, 17 IBU’s. Crisp clean Belgian Blonde brewed with<br />

Rose Hips <strong>and</strong> aged with French <strong>and</strong> American Oak. Very easy drinking beer.<br />

Spikes: 9.4 % ABV, 1.082 / 20.5 P, 32 IBU’s. No water is harmed during the making of<br />

this beer. Maple sap from Northern Wisconsin is used in place of water. This clean<br />

crisp sipper is made with vienne, wheat, <strong>and</strong> loads of 2-row malt <strong>and</strong> is aged on our<br />

own toasted Maple chips. Serve with your pancakes!<br />

Bretten Rusty Red: 5.4 % ABV, 1.055 OG / 13.8 P, 28 IBU’s. We solera’d aged<br />

our Rusty Red in a used br<strong>and</strong>y barrel that once housed our Brett Dank, which was<br />

inoculated with a Brettanomyces blended culture. Expect a pleasant sourness <strong>and</strong><br />

complex aromas as you expolore our wild side.<br />

Lemongrass Wit: 5.1 % ABV, 1.050 OG / 12.5 P, 16 IBU’s. A summer Witbier, 50 %<br />

wheat, brewed with fresh Lemongrass <strong>and</strong> fermented with a unique strain of Belgian<br />

yeast. Steve Paulik, our longtime employee brought us a bottle of this that he brewed<br />

at home, <strong>and</strong> we liked it so much that we thought we would share it with everyone as<br />

one of our “one off” series of beers <strong>and</strong> he agreed.<br />

Cru De Gras: 8.7 % ABV, 1.086 OG / 21.5 P, 35 IBU’s. The O’so version of a Belgian<br />

Gr<strong>and</strong> Cru fermented with Acouffe yeast <strong>and</strong> grains of paradise, deep gold with a long<br />

spicy finish from the vienne, munich, <strong>and</strong> biscuit its brewed with.<br />

VERICH GOLD: Original Gravity: 12 Plato, IBU’s 21, ABV: 5%. People’s Choice Awardwinner<br />

at 2010 Clevel<strong>and</strong> Oktoberfest. Our lightest regular brew. Modeled after the<br />

German Kolsch-style ale, our Gold is bone dry with a soft malt flavor <strong>and</strong> delicate hop<br />

bitterness. Our American made cousin is clean tasting, refreshing <strong>and</strong> smooth.<br />

DOUBLE IRISH RED: Original Gravity: 16.5 Plato, IBU’s: 25, ABV: 6.9% Our double Irish<br />

Red Ale is bursting with rich, malty flavors that lead to a nice smooth finish. A potent<br />

ale for celebrating St. Patrick’s Day or any other day you see fit!<br />

STEEL VALLEY STOUT: Original Gravity: 14.5 Plato, IBU’s: 35, ABV: 6.2% Silver Medal<br />

Winner at 2011 International Beer Fest at the the Clevel<strong>and</strong> IX Center. Bronze Medal<br />

winner at the World Beer Championships <strong>and</strong> Best Stout at 2009 Ohio Brew Week. This<br />

classic stout is dry, brisk, richly bodied with a deep black color filled with roasted<br />

coffee-like flavors.<br />

SPECIAL RELEASE<br />

3:00 P.M.- BARREL AGED TWICE BITTEN ALE: Original Gravity: 18.5%, IBU’s: 75,<br />

ABV: 8.5% Big flavor! Start with rich, malty taste, with some alcoholic notes, followed<br />

by hops, hops <strong>and</strong> hops! A somewhat dry finish makes this one still drinkable. Then<br />

finish Our Imperial Red Ale then is finished out by aging in whiskey barrels to give it<br />

even more flavor!<br />

Rockin’ Razberry Wheat: 5.5% ABV, Style: American Flavored Wheat Beer. Made<br />

with American malted 2-row barley <strong>and</strong> malted red wheat. This beer has a nice hint<br />

of raspberry which gives it great drinkability. It is not sweet, syrupy, nor wine-like. It<br />
